Vegan Cooking – Lemon Slices! 14 June

Last week we made Lemon Slices for our Vegan Cooking activity!

We substituted butter with coconut oil and milk with almond milk to make them vegan friendly!

Everyone worked great together as a team, with everyone having a job to do.

The end results didn’t look quite like the recipe picture, but it they tasted delicious, which is the most important thing!

 

Follow the instructions below to make them at home:

Ingredients

For the base:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup coconut oil, softened a bit but not melted
  • 1/2 cup unflavored soy or almond milk

For the lemon curd:

  • 2/3 cup lemon juice (about 4 to 6 lemons)
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 2 tablespoons lemon zest
  • 1/2 teaspoon lemon extract
  • 1/4 teaspoon salt
  • Pinch turmeric (optional, for color)
  • 3/4 cup coconut cream

For topping:

  • Powdered sugar

Instructions

  1. Preheat the oven to 350°F and lightly oil a 9 x 9 inch square baking pan.
  2. Make the base by stirring together the flour, sugar and salt together in a medium mixing bowl. Add the coconut oil and cut it in using a pastry cutter or a fork, until the mixture resembles fine crumbs. Stir in the milk to form a dough, continuing to stir or mix with your hands until it’s nice and uniform.
  3. Press the dough evenly into the bottom of the prepared baking pan. Place it into the oven and bake just until the edges begin to brown, about 20 minutes.
  4. While the base bakes, make the curd. Place the the lemon juice, sugar, cornstarch, lemon zest, lemon extract, salt, and turmeric (if using) into a small saucepan. Whisk until uniformly combined. Place the saucepan over medium heat and whisk in the coconut cream. Continue to whisk the mixture constantly as it heats up. The mixture should thicken up quickly once it gets to a simmer. Cook about 1 minute more, continuing to whisk vigorously, then remove the saucepan from the heat.
  5. Once the base comes out of the oven, pour the lemon mixture over it, and smooth it out into an even layer. Return the pan to the oven and bake about 15 minutes longer. You should see a few bubbles forming in the curd by this time.
  6. Remove the pan from the oven and transfer it to a cooling rack to cool. The curd will continue to set as it cools. Once it has cooled completely and the curd has set, slice into 16 bars.
  7. Sprinkle with powdered sugar and serve.

June Activity Calendar!

We have another month of fun FREE activities exclusively for our Lexis students!

Calendar

*All activities are at 2pm unless stated otherwise

 Yoga continues every Monday in Room 8. Mats provided!

We’ll also continue to have popular activity Coffee Club every Tuesday. Join me in the garden or student lounge for coffee, Tim Tams and conversations!

To start the month we have a Volleyball match! In the garden or at the beach; meet at reception at 2pm.

Flavio will be coming in on the 6th to teach you some Skateboarding skills.

Thursday the 7th we’ll be having an End of Cambridge Sausage Sizzle to say good luck and farewell to our Cambridge students after their 12 weeks of hard work!

On the 8th we have a very exciting Casino afternoon! There will be a poker tournament and roulette! Snacks provided!

Our June Table Tennis Tournament will be on the 13th! Beer to be won so get practicing!

For our cooking activities we have Vegan Cooking on the 14th and Pizza Making on the 27th!

Happy Travels will be hosting a Travel Trivia on the 15th with prizes to be won! Refreshments will be provided.

On the 20th we have a Soccer Match against BBELS! This will be at the sports fields, but meet at reception first at 3.30pm 🙂

We’ll be getting creative with Jewellery Making on the 21st.

Friday the 22nd we have Wine and Cheese Tasting, which is sure to be a popular activity!

We have our 1 hour Surf Special for $25 on the 28th. This is a great option to give surfing a try and see if you’d like to book on to one of the 2 hour lessons for $55! Sign up and pay in reception. Limited spots available so be quick!

On the 29th we’ll head to beach for a game of Cricket!

*Monday the 11th the school will be closed for the Queens Birthday; a public holiday here in Australia!

GIL (Guided Individual Learning) runs every day from 2-3pm in Room 8 (Room 7 on Mondays). Come along to get help with anything from homework to vocabulary to writing your resume.

Job Club is every Wednesday in Room 8 (with GIL). A teacher will be able to help you write resumes/cover letters, look for jobs, apply for TFN’s and give you advice on gaining your RSA or Barista license!

Vegan Cooking – Chinese Dumplings

Yesterday for our Vegan Cooking activity we made delicious Chinese Dumplings!

One of our teachers, Serena, has made them a few times and kindly shared the recipe with us and led the afternoon session!

Luckily I didn’t miss out though as I got to make them (and eat them!) with our morning group 🙂

 

They are really quick and simple to make; if you’d like to try them at home here’s how…

Ingredients

  • 1 packet vegan wonton wrappers
  • 1 tablespoon vegetable oil
  • 2 thinly slice leeks
  • 1 clove garlic, minced or crushed
  • 1 cup diced mushrooms
  • 1 cup grated carrots
  • 1 cup hard tofu, cut into small dice
  • 4 cups chopped baby bok choy, Chinese cabbage or spinach
  • 1 tablespoon soy sauce, plus extra for tasting
  • 1/4 cup water
  • 1/2 teaspoon sesame oil
  • 1 teaspoon minced ginger
  • salt and pepper to taste

 

  1. Heat the oil in the wok over high heat. (Alternatively, you can make this in a large saute pan.)
  2. Add the leeks ,garlic and ginge. Stir fry (use a spatula to stir, scoop and flip the ingredients) for about 20 seconds. Do so quickly to keep the garlic from burning.
  3. Add the mushrooms and stir fry again continuously to keep the ingredients from burning, but also to help everything release their moisture. Do this for 10-15 seconds.
  4. Add the greens, carrots and tofu .
  5. Add the water and soy sauce. Stir fry for about 2 minutes, or until the greens have cooked down and the tofu has heated through.
  6. Drizzle with sesame oil. Stir to combine. Turn off the heat.
  7. Taste the vegetables. If it feels like you need to adjust for seasoning, you can add a splash of soy sauce or you can add a pinch of salt to taste. Because soy sauces differ in saltiness, you may have to adjust as needed.
  8. Set aside to cool to room temperature before using in potstickers. As a filling, it will be too “saucy” so you will have to strain it.
  9. Once cool, assemble your potstickers. Place a small teaspoon of the filling in the centre of a wonton wrapper. Wet the edges of the wrapper with water. Fold the wrapper over the filling and pinch the edges together to seal. Place them upright on a plate, being careful not to let them touch or else they will stick together.
  10. Heat 1 tablespoon of oil over medium-high heat in a large pan. Add the potstickers and fry until browned on the bottom – 1 to 2 minutes. You may need to work in two batches if not all your potstickers fit in the pan. Add 1/4 cup of water, cover the pan and reduce heat to medium. Allow to steam until the tops are tender and the water has evaporated – about 2 to 3 minutes. Uncover the pan and flip the potstickers onto their sides to brown on each side (optional). Remove to a serving dish.
  11. Serve with soy sauce.

January’s Activity Calendar!!

January’s FREE (excluding surfing and BWT trips!) activities exclusively for our Lexis                                                                       Byron Bay students 🙂

January Activities

We have Yoga every Monday at 11am and 2pm in Room 8.

To start the month (and year!) we have a Sausage Sizzle to welcome our new students and welcome back our existing Lexis students!

On the 4th we have a Poker Tournament with beer to be won! 11am and 2pm in the student lounge.

Friday the 5th we have free Bodyboard and wetsuit hire, courtesy of Let’s Go Surfing! Meet at reception first and we’ll head down to the beach together!

Our 1 hour Surf Special for just $20 will be on the 10th; sign up and pay in reception. Pick up times from school are 10am and 3pm 🙂

On the 11th we will be cooking a delicious Vegan recipe! 11am and 2pm in the kitchen.

Volleyball will be on the 12th at 11am and 2pm; either in the garden or at the beach, meet at reception first.

The January Table Tennis Tournament will be held on the 17th! Can Brice be beaten?! Beer to be won!

We’ll be getting artistic with Boomerang Painting on the 18th and and crafty with Jewellery Making on the 24th!

Friday the 19th we will be sampling some Beers! This will be at 5.30pm so morning and afternoon classes can enjoy a few drinks together!

Olmo will be coming in on the 25th to teach you how to Slackline! This will be at the park so please sign up and meet in reception first.

The school is closed on Friday the 26th for Australia Day!!

On the 31st we’ll have some tasty treats to enjoy at our Beach Picnic!

We continue to have Coffee Club weekly at 2pm, and for our morning students we have a mix of Breakfast Club, Smoothie Club and Coffee Club!

Job Club is every Wednesday in Room 8 (with GIL). Myself or a teacher will be able to help you write resumes/cover letters, look for jobs, apply for TFN’s and give you advice on gaining your RSA or Barista license!
