Vegan Cooking – Chinese Dumplings

Yesterday for our Vegan Cooking activity we made delicious Chinese Dumplings!

One of our teachers, Serena, has made them a few times and kindly shared the recipe with us and led the afternoon session!

Luckily I didn’t miss out though as I got to make them (and eat them!) with our morning group 🙂

 

They are really quick and simple to make; if you’d like to try them at home here’s how…

Ingredients

  • 1 packet vegan wonton wrappers
  • 1 tablespoon vegetable oil
  • 2 thinly slice leeks
  • 1 clove garlic, minced or crushed
  • 1 cup diced mushrooms
  • 1 cup grated carrots
  • 1 cup hard tofu, cut into small dice
  • 4 cups chopped baby bok choy, Chinese cabbage or spinach
  • 1 tablespoon soy sauce, plus extra for tasting
  • 1/4 cup water
  • 1/2 teaspoon sesame oil
  • 1 teaspoon minced ginger
  • salt and pepper to taste

 

  1. Heat the oil in the wok over high heat. (Alternatively, you can make this in a large saute pan.)
  2. Add the leeks ,garlic and ginge. Stir fry (use a spatula to stir, scoop and flip the ingredients) for about 20 seconds. Do so quickly to keep the garlic from burning.
  3. Add the mushrooms and stir fry again continuously to keep the ingredients from burning, but also to help everything release their moisture. Do this for 10-15 seconds.
  4. Add the greens, carrots and tofu .
  5. Add the water and soy sauce. Stir fry for about 2 minutes, or until the greens have cooked down and the tofu has heated through.
  6. Drizzle with sesame oil. Stir to combine. Turn off the heat.
  7. Taste the vegetables. If it feels like you need to adjust for seasoning, you can add a splash of soy sauce or you can add a pinch of salt to taste. Because soy sauces differ in saltiness, you may have to adjust as needed.
  8. Set aside to cool to room temperature before using in potstickers. As a filling, it will be too “saucy” so you will have to strain it.
  9. Once cool, assemble your potstickers. Place a small teaspoon of the filling in the centre of a wonton wrapper. Wet the edges of the wrapper with water. Fold the wrapper over the filling and pinch the edges together to seal. Place them upright on a plate, being careful not to let them touch or else they will stick together.
  10. Heat 1 tablespoon of oil over medium-high heat in a large pan. Add the potstickers and fry until browned on the bottom – 1 to 2 minutes. You may need to work in two batches if not all your potstickers fit in the pan. Add 1/4 cup of water, cover the pan and reduce heat to medium. Allow to steam until the tops are tender and the water has evaporated – about 2 to 3 minutes. Uncover the pan and flip the potstickers onto their sides to brown on each side (optional). Remove to a serving dish.
  11. Serve with soy sauce.

January’s Activity Calendar!!

January Activities

We have Yoga every Monday at 11am and 2pm in Room 8.

To start the month (and year!) we have a Sausage Sizzle to welcome our new students and welcome back our existing Lexis students!

On the 4th we have a Poker Tournament with beer to be won! 11am and 2pm in the student lounge.

Friday the 5th we have free Bodyboard and wetsuit hire, courtesy of Let’s Go Surfing! Meet at reception first and we’ll head down to the beach together!

Our 1 hour Surf Special for just $20 will be on the 10th; sign up and pay in reception. Pick up times from school are 10am and 3pm 🙂

On the 11th we will be cooking a delicious Vegan recipe! 11am and 2pm in the kitchen.

Volleyball will be on the 12th at 11am and 2pm; either in the garden or at the beach, meet at reception first.

The January Table Tennis Tournament will be held on the 17th! Can Brice be beaten?! Beer to be won!

We’ll be getting artistic with Boomerang Painting on the 18th and and crafty with Jewellery Making on the 24th!

Friday the 19th we will be sampling some Beers! This will be at 5.30pm so morning and afternoon classes can enjoy a few drinks together!

Olmo will be coming in on the 25th to teach you how to Slackline! This will be at the park so please sign up and meet in reception first.

The school is closed on Friday the 26th for Australia Day!!

On the 31st we’ll have some tasty treats to enjoy at our Beach Picnic!

We continue to have Coffee Club weekly at 2pm, and for our morning students we have a mix of Breakfast Club, Smoothie Club and Coffee Club!

Job Club is every Wednesday in Room 8 (with GIL). Myself or a teacher will be able to help you write resumes/cover letters, look for jobs, apply for TFN’s and give you advice on gaining your RSA or Barista license!

GIL (Guided Individual Learning) runs every day from 12-1pm and 2-3pm in Room 8 (Room 7 on Mondays). Come along to get help with anything from homework to vocabulary to writing your resume.

We will also continue to enjoy our Student Nights at Cheeky Monkeys every Tuesday night – meet at BWT @ 8pm first to get your drinks, food and fun!

Lastly, don’t forget that you can book your 2-hour surf lessons with us anytime at Reception for just $50!

Vegan Brownies! 9 November

Last week we made Vegan Brownies!

Harriett and myself assisted the students as they worked together to make this vegan friendly desert!

The results were delicious! If you’d like to try yourself at home here’s how:

Ingredients

5 tablespoons sunflower oil

200g dark chocolate (dairy free if you want to make it vegan)

170g of self-raising flour

3 heaped teaspoons of cocoa powder

180g golden caster sugar

230ml coconut milk

200g walnuts

Method

  1. Preheat the oven to 180ºC/350ºF/gas 4. Grease a square baking tin (roughly 20cm) with a little oil, then line with greaseproof paper.
  2. Place a heatproof bowl over a pan of simmering water, making sure the base doesn’t touch the water. Break 150g of chocolate into the bowl and allow it to melt, then set aside to cool slightly.
  3. Meanwhile, sieve the flour and cocoa powder into a large bowl, then stir in the sugar. Stir in the oil, milk and melted chocolate until combined.
  4. Roughly chop and stir in the remaining chocolate and most of the nuts reserving a few for the top. Pour the mixture into the prepared tin, spreading it out evenly. Sprinkle over the remaining pecans, then place into the hot oven for 20 to 25 minutes, or until cooked on the outside, but still gooey in the middle.
  5. Leave to cool for around 5 minutes, turn out onto a wire cooling rack, and then serve warm with a scoop of vanilla ice cream, if you’re feeling extra indulgent.

November Activities Calendar!!

November Calender

We have Yoga every Monday at 11am and 2pm in Room 8.

This Thursday we have Beer Tasting, at 5.30pm so morning and afternoon students can enjoy a few drinks together before heading to BWT’s student night at Woodys!

Friday we’ll be heading to Byron’s beautiful main beach for a game of Volleyball at 11am and 2pm; meet at reception first.

Our monthly Table Tennis Tournament will be on the 8th; can Tobias maintain his championship title for the third month in a row?!

We’ll be cooking delicious vegan brownies on the 9th, at 11am and 2pm in the kitchen.

Free Body Board and wetsuit hire will be provided by Let’s Go Surfing on the 10th!

On the 14th we will be hosting a Sweet Exchange; everyone is encouraged to bring in something sweet they have either made or bought. You will then be able to try each other’s treats by giving a gold coin donation, this money will then be split between two charities: Golden Oldies Animal Rescue and WIRES Wildlife Rescue. More details to follow 🙂

We’ll be getting creative on the 15th with Jewellery Making; myself and Harriett will be teaching you how to make necklaces you can then keep or give as a gift!

For our afternoon students will have a 9.30am trip to the Farmers Market on the 16th, and Soccer at 2pm for our morning students.

On the 17th we’ll head to the beach for a picnic, at 11am and 2pm.

At 5.30pm on the 22nd we’ll have Salsa Dancing class. Come along, learn some moves and have some fun!

Our 1 hour Surf Special for just $20 will be on the 23rd; sign up and pay in reception.

We sadly say goodbye to our Cambridge students on the 24th so we’ll be doing a BBQ to wish them farewell. Free lunch for everyone!!

Flavio will be coming in at 11am and 2pm on the 29th to teach you some Skateboarding skills!

Pizza and games, including Wii and Twister, will be provided on the 30th!
