Graduation! 13 April

Congratulations to our four students graduating from Lexis Byron Bay today!

Maya, from Japan, graduates from Claudia’s Upper intermediate class. She has been studying with us for over a year now and has made excellent progress in this time, starting in Elementary and graduating from Upper Intermediate. Maya, you should be very proud of all the hard work you have put in! We wish you the very best for the future!

Ana, from Brazil, graduates from Claudia’s Upper intermediate class. Claudia has really enjoyed having her in class, saying her dedication and positive attitude were wonderful to see every day and all of her contributions were greatly appreciated. She has a wonderful positive attitude to life and this really enriched the atmosphere of the class. Best of luck for the future Ana, we are sure you will do well!

Bruna

Bruna, from Brazil, graduates from Kristy’s Elementary class. It has been a joy having her here at Lexis. She is a friendly, warm and optimistic person who is lovely to be around. We have seen brilliant progress in her English since her first day and watched her confidence with speaking grow. Well done on your A grade Bruna, very well deserved! We are glad this isn’t goodbye as Bruna will continue to live in Byron!

Sandra

Alexandra, from Spain, graduates from Mel and Adrienne’s Intermediate class. Her teachers described her as a ray of sunshine and loved having her in class. Her positive attitude and participation in activities were always appreciated. She has been a hard working student and it no surprise she is graduating with an A! We hope you enjoyed your time at Lexis as much as we enjoyed having you here!

Easter Cooking! 29 March

Last Thursday we made some tasty Easter treats!

This included chocolate brownies with an Easter twist! Once the brownies were nearly ready we took them out the oven and pushed in caramel and malteser chocolate eggs, then put them back in for 5 minutes so they would melt into the brownie!

Whilst we were waiting for the brownies to cook we also made some chocolate nests!

These are really simple to make; melt some chocolate in a bowl over boiling water, then add cornflakes! We also added marshmallows and digestives biscuits to ours 🙂 We then popped some M&M eggs on the top to finish off the nest look!

Both were absolutely delicious and between us a lot of chocolate was eaten!

 

Brownie Recipe:

Ingredients

  • 125 g butter
  • 1 1/2 cups caster sugar
  • 1/2 cup cocoa powder
  • 2 eggs
  • 1 tsp vanilla essence
  • 1/4 tsp salt
  • 1 cup plain flour

Recipe

  • Melt the butter in a medium saucepan.
  • Stir in sugar, cocoa, vanilla and salt.
  • Remove from heat and allow to cool slightly.
  • Quickly whisk in eggs.
  • Fold through sifted flour.
  • Spoon the mixture into a greased and lined 18 x 28cm slab tin.
  • Bake at 170C for 25-30 minutes.
  • The mixture will seem soft but will harden on cooling.
  • Allow to cool in tin before removing.

For an Easter twist, take the brownie out the oven after 20/25 minutes and push chocolate eggs into it and bake for a further 5 minutes so they can melt into the brownie!

April Activity Calendar!!

Come along to our FREE activities exclusively for our Lexis students! They’re a great way to make new friends, practice your English and have some fun!!

We continue to have Yoga every Monday 2pm in Room 8, alternating each week between Stef and Fee.

We’ll also continue to have Coffee Club at 2pm on Tuesdays, with the exception of the 24th. Join me in the garden for coffee, Tim Tams and conversations!

On the 4th we have a 1 hour Surf Special for $25. This is a great option to give surfing a try and see if you’d like to book on to one of the 2 hour lessons for $50! Sign up and pay in reception. Pick up time from school is 3pm. Limited spots available so be quick!

Thursday the 5th we’ll be making Sushi in the Student Kitchen 🙂

On the 6th we’ll be heading to the beach for a game of Volleyball! Meet at reception at 2pm.

Flavio will be coming in on the 11th to teach you some Skateboarding skills in the garden!

We’ll be getting creative with Tie Dying on the 12th. Bring a white top or we have a limited number available for $3. Sign up in reception.

We have free Bodyboard and wetsuit hire on the 13th. Meet at reception at 2pm and we’ll head to the beach together!

The April Table Tennis Tournament will be held on the 18th! Get practicing and the beer could be yours!!

On the 19th we will be hosting a Sweet Exchange; everyone is encouraged to bring in something sweet they have either made or bought. You will then be able to try each other’s treats by giving a gold coin donation, this money will then be given to Positive Change for Marine Life. One of their volunteers will be coming in to give you more information on all the great things they do!

We’ll be tasting some Wines and picking our favourites on Friday the 20th. 2pm in the garden / Student Lounge.

We will be having a BBQ for Anzac Day on the 24th, and school will then be closed on Wednesday the 25th for this Public Holiday. On the 26th we will then be making Anzac Cookies and learning about Anzac Day ❤

Friday the 27th we have someone joining us from Byron Bay’s Rugby team to do some practices with you. More details to follow!

 

Job Club is every Wednesday in Room 8 (with GIL). A teacher will be able to help you write resumes/cover letters, look for jobs, apply for TFN’s and give you advice on gaining your RSA or Barista license!

GIL (Guided Individual Learning) runs every day from 2-3pm in Room 8 (Room 7 on Mondays). Come along to get help with anything from homework to vocabulary to writing your resume.

Graduation! 30 April

Ayaka, from Japan, graduates from Mel and Adrienne’s Intermediate class. She is a conscientious hard working student who participated well in all class activities and discussions. It’s been really great watching her confidence in speaking grow over her 3 weeks at Lexis. Wishing you the very best for the future Ayaka!

Shiori, from Japan, graduates from Mel and Adrienne’s Intermediate class. She has worked really hard in her 3 weeks with us and graduates with a well deserved A, well done Shiori! She interacted well with all her classmates and both her teachers loved having her in class. We hope you enjoyed your time at Lexis and wish you all the best for future!

Dunja, from Switzerland, graduates from Claudia’s Upper Intermediate class. Her attitude in class and all her contributions were greatly appreciated. We have really enjoyed having her here at Lexis and wish her all the best for the future!

Benjamin, from Switzerland, graduates from Michelle’s Pre-Intermediate class. He has made excellent progress in his 8 weeks at Lexis, starting in Elementary and graduating from Pre-Intermediate with an A. You should be very proud of all your efforts and achievements Ben! He has a great attitude and humour and will be missed by all his class!

Easter Coffee Club! 27 March

Today at Coffee Club we swapped Tim Tams for Hot cross buns to celebrate Easter!

Hot cross buns are traditionally eaten on Good Friday in Australia, Britain, Canada, Ireland, New Zealand, South Africa and some parts of the Americas. The buns mark the end of Lent and different parts of the hot cross bun have a certain meaning; including the cross representing the crucifixion of Jesus, and the spices signifying the spices used to preserve him at his burial.

They are typically a spiced sweet bun but we also had some chocolate ones which we enjoyed warmed up with butter 🙂

Super Food Cooking Class – Upper Intermediate

This month Claudia’s Upper Intermediate class took their lesson to the kitchen!

They each had to choose a super food (a food rich in nutrients), research it’s facts and history and then use it in a recipe!

Interestingly chocolate is considered a super food! Brilliant news 🙂 Research shows that dark chocolate especially can lower blood pressure!

Everyone then got to try each others dishes as the creator explained the information they had gathered about their super food!

New Starters! 26 March

Welcome to our six new students joining us at Lexis Byron Bay today!

Hans (HanSoo) is from Korea. His main passion is playing the guitar and he is a member of his school’s band. He is also interested in cycling and would like to try surfing whilst in Byron. He wants to improve his English so he can better his life and travel the world! He is currently studying Medical Engineering in Korea but is taking a year long break to explore the world!

Jeferson is from Brazil. He enjoys sports, particularly soccer, swimming and running. Whilst in Australia he would like to learn to surf; he has definitely picked the best location for this! He studied Computer Science and has worked within this industry for the past 15 years. He chose Australia for his studies because of the warm weather, beaches and laid back lifestyle!

Victor (Vitezslav) is from the Czech Republic. His hobbies include running, working out and cycling. He studied to be a blacksmith and has worked as a laborer for the past four years. He will study at Lexis Byron for the next 9 months to improve his English so he is able to move to England to work. He is looking forward to exploring this country and learning to surf!

Martin is from Spain. His main interests are sports and travel. He also enjoys reading, listening to music, watching movies and going out with friends. He will study with us for the next 12 weeks to further his English and decide what he would like to do with his future!

Shoto is from Japan. His main hobby is playing the guitar. He choose Byron Bay for his studies as he has heard great things about this beautiful town! He will study with us for 3 months and then work on a farm picking fruits. After he would like to get a car so he can travel around Australia!

Esther is from Spain. Her biggest love is to travel and meet new people. She also enjoys surfing, reading, sports and good food! She has a Bachelor Degree from the University of Barcelona and is a trained teacher. It has always been her dream to come to Australia so she is very excited to be here! In the future she would like to work on yachts with her boyfriend and English is important for this, so she will study with Lexis Byron for the next 6 months to improve this!
