Happy Student – Nicol!

Nicol is 21 and comes to us from the Italian-speaking part of Switzerland. She started with us last October and will be studying with us until the start of February this year. After her time with us in Lexis, she is going to travel further along the East Coast with friends before she returns home.

1. Why did you choose to come to Australia and to Lexis Byron Bay in particular?

I chose to come to Byron because since I was a child, I always dreamed about the Australian life – the beach, the surf… and Byron is the perfect place to realise this dream!

2. What do you remember about your first day in school?

I remember that I was so happy to start here! Everybody was so friendly and everything was so well organised. My last school was too big – here is more personal as everybody knows you and your name πŸ™‚

3. What are your English goals and how is Lexis helping you achieve them?

My goal is to reach a good level of English for work and travels. I think that Lexis is a really good school – every week we are tested to check our progress levels and the teachers really help us and push us towards these goals.

4. What do you like about your classes?Β

I love the variety! We are not always in the classroom – sometimes we have lessons to do outdoors!

5. You’ve joined many of our free activities. What has been your favourite one so far?

The school organises a lot of activities and since the beginning, I have really enjoyed doing morning yoga every week. The other activities are always loads of fun – I really loved the craft ones, especially making dream catchers. The take-home pieces are great for remembering our time in Lexis!

6. Outside school, what is your favourite thing about Byron Bay?Β

I love Byron for the lifestyle, the music on the streets, the amazing beach, the public BBQ (which I used every day when my family was visiting in January!). I love that it is a small place but there is always something to do.

Mexican Cooking! 17 January PM

Yesterday afternoon we headed to the kitchen for some Mexican Cooking!! We had two recipes (one meat and one vegetarian), so everybody had a job to do, whether it was chopping the vegetables or cooking the mince.

For our meat dish we had beef tacos and for our vegetarians we had enchiladas filled with beans, veg and salsa sauce (Vanessa also adapted this to a vegan option by not covering it in cheese!).

What everyone was most excited for though was the cheesy nachos! Nicol had the task of covering the corn chips in cheese then popping them in microwave, and had everyone jumping on her as soon as they were ready!

The nachos kept us going whilst the enchiladas baked in the oven and we filled the tacos with our beef and veg mix.

There was plenty of food to fill our bellies and even some left over mince we’re going to have for lunch today!

Mexican Cooking! (morning) January 17

Yesterday morning (Thursday) we gathered in the kitchen for our Mexican cooking activity! Our plan was to have a meat AND a veggie option – beef tacos and veggie enchiladas. Our main ingredients included beef, red peppers & onions, lettuce, mixed beans, re-fried beans, sour cream, various sauces, lime, cheese, taco shells, tortillas and of course – some corn chips and salsa to snack on as we cooked πŸ˜€

img_0387

As we were cooking two separate mixes, there were plenty of jobs for everyone to do – prep and chop the vegetables, divide the ingredients for each meal, find the chopping boards, pots, pans and the fun bit – the cooking! πŸ™‚

As the onion tears were starting to get to us, one of the group had a genius idea to help her… sunglasses!!! πŸ˜€

Some shots of the cooking in progress…

Looking good, chef Max! πŸ™‚

The food was so tasty – it’s not at all surprising that a few friends turned up just as the food was ready to eat…! πŸ˜›

Table Tennis Tournament! (morning) January 16th

Yesterday morning (Wednesday), we had a very fun table tennis tournament in the student lounge! We started out with just a few but everyone spotted the fun we were having and wanted to join! πŸ™‚

We brought out the competitive side among our students by offering a chocolate prize! πŸ˜€ Tom took the lead with preparing the score sheet and determining the competitors…

Some more action shots…

It was a lot of fun and thankfully, nobody took winning or losing TOO seriously… πŸ˜›

Don’t forget to join us every day at 11.30am or 2pm for our variety of free fun activities! Pop by reception to check the notice board and sign up for a place in any activity πŸ™‚
