Pizza and Games!! 30 November

Last Thursday we treated the students to free pizza!!

It was a rare rainy day here in Byron Bay; perfect for some indoor activities!

We had the Wii set up, as well as games of Twister, Jenga and cards to keep us entertained and dry!

Making Raw Koala Treats! August 24

Today we spent the rainy afternoon making Raw Koala Treats!

First we made Cookie Dough balls…

Then we coated them in chocolate…

Then we decorated them to look (kind of) like Koalas, as well as some other shapes and decorations.

Here is the recipe to try it yourself at home:

Cookie dough balls

1/2 cup softened coconut oil
1/2 cup rice syrup
4 Tablespoons brown sugar
4 teaspoons vanilla extract
3 cups almond meal
pinch sea salt
pinch baking soda

Melted chocolate

3 cups dark chocolate pieces
2 Tablespoon coconut oil
1 Tablespoon rice syrup

Koala decorations

Desiccated coconut
Pink marshmallows
Silver balls
Writing icing
Any other decorations you fancy!
For the cookie dough:

Whisk together the coconut oil, rice syrup, sugar and vanilla, until it’s well combined and fluffy.
Mix in the almond flour, salt and baking soda.
Roll small pieces (about a teaspoon) of dough into balls and place on a tray lined with baking paper. Put them in the freezer for 10 minutes to firm up, which will make dipping them in the chocolate easier.

For the chocolate: 

Melt all the ingredients in the microwave for 1-2 minutes and whisk together until smooth and well combined. Using a toothpick, dip each ball into the chocolate and then place back on the tray. (You can either leave the toothpick in or take it out after you’ve dipped it in chocolate).

For the Koala decorations:

Decorate the balls like Koalas! For example, cover the chocolate with coconut for the fur, use pink marshmallows for the ears, silver balls and/or writing icing for the eyes, nose and mouth. Or get creative and decorate however you like!

Put the koalas in the freezer until the chocolate is set, then eat them all!
