Afternoon Crepe Competition! 4 October

Yesterday we had a morning and afternoon Crepe Competition!

I (Claire) was the judge of the afternoon and had a very hard decision on my hands!

The students split into three groups to make the crepes, following this simple recipe:


  • 4 cups plain flour

  • A few pinches of salt

  • 4 eggs

  • 4 cups of milk

  • Combine all ingredients in a bowl. Blend until smooth. Add a little water and mix to desired consistency. Cover and set aside to rest for 5 minutes.

  • Heat a medium non-stick frying pan over medium heat. Spray with cooking oil. Using 1/4 cup mixture per pancake, pour batter over pan, tilting from side to side so batter covers base in a thin film. Cook pancake for about 1 minute or until underside is golden, then use a spatula to flip. Cook other side for just under a minute until golden. Repeat with remaining mixture, spraying pan with cooking oil between pancakes.

The teamwork was then over as they competed against eachother to present me with the best crepe!

They had plenty of tasty fillings and toppings to choose from; blueberries, bananas, honey, whipped cream, strawberries, chocolate sprinkles, nuts, melted chocolate and Nutella!


They all looked delicious but two really stood out as the best…

Eric had taken a lot of time and care to produce this wonderfully presented restaurant worthy creation…

and Lorene came up with the clever idea of mixing food colour into the batter to make this creative design that was then also beautifully presented…

As there was only one surf lesson to give away they decided to split the cost of a lesson so they can then go together! We gave them some Tim Tams to share as well; as if they hadn’t already had enough sugar for the day!!

Trivia! September 22

This afternoon we had a Trivia quiz to test our knowledge in the categories of Science, Geography, Music and Sport.


The students were faced with questions such as “In which sport would you use a ‘sand iron’?” (golf), “Which rock group did George Harrison belong to?” (The Beatles), “Who developed the theory of relativity?” (Albert Einstein) and “What is the capital city of New Zealand?” (Wellington).

Everyone brought different strengths to their team, with some students being more knowledgeable about Science and others about Sports.  There was much discussion about the right answer for each question and, when they knew the answer in their own language, figuring out the correct English word for it!


The winning team was Shinsuke and Roman, who argued about almost every answer! Well done to them for working out who had the correct answer for each question! Enjoy the beers 🙂

Lighthouse Photo Scavenger Hunt! August 26

This afternoon the students set off into the sunshine on a Scavenger Hunt! They got into teams of 2 or 3 and were given two lists of items to find around Byron Bay. The first list included items relevant to their afternoon Options class and the second were general items around Byron Bay. The first team back for each class who had completed their Options class list won a 6-pack of beer, and the team back first with both lists complete won a Kayaking Trip each from BWT!

The winning team from Ellie’s Mixed Skills class was Maria, Yuki and Priscilla.

They won a 6-pack of beer for being the first team back with their Options Class list completed! In class they are studying ‘Health and Fitness’ this week, so their list of items reflected what they have been learning. They completed items on the list such as a photo of a team member doing the “Usain Bolt” pose in a shop that sells sports clothes, a selfie with a person who looks like they exercise regularly (though they are not sure he understood why they wanted a photo with him!), a photo with a beach towel that is bigger than the smallest team member, a photo of team members doing yoga poses in the park, and a photo of a team member showing three products which help us stay safe in the sun.

Paul’s Speak like a Native class had a very efficient team win the beer after completing the class list!

Juliano and Maria were very quick (and rather puffed out on their return) and completed their list by getting photos of Aussie slang words, for example, of a team member holding a pair of “Budgy Smugglers”, a photo of a “Hot Chick” and a “Hot Bloke”, a photo of the “Meat Pie Menu” and a photo of a tube of “Zinc Cream” at the Chemist.

The winning team from Becky’s Film and Music class was Vanessa, Leticia and Momoko.

They were the quickest team in their class to complete the items on their class list which were about Film, Music and Australiana, including getting photos of the two video shops in Byron Bay, a shop where you can buy records, a video of a busker, a photo of Aboriginal Art, a photo of a team member holding a boomerang and an example of Aboriginal language.

The winners of the BIG prize, for completing both the class list AND the general list were Richard and Emiko!

After completing the list from Paul’s class by getting photos of “snags”, a carton of Coopers Pale Ale (beer) at the “bottlo”, and the “bouncer” at Beach Hotel, just to name a few, they then completed the general list too! This included getting a selfie at the Lighthouse, photos of the most easterly point of Australia, a photo using the barbecue at Wategos Beach, a photo of the waves at The Pass, a selfie at the Lexis English school sign and a photo of them doing a surf pose in front of BWT!

Graduation! April 22

Today we have four students graduating from Lexis Byron Bay – Jeannine, Kim, Mantana and Samonwan.


Jeannine is from Switzerland and graduates from Claudia’s Upper-Intermediate class. She has been a pleasure to teach in class and has been a truly valued member of the Lexis family in Byron Bay! She was a very active participant in class activities and discussions, and has made great improvements with her English. All the best for your travels in Australia over the next month!


Kim is from Korea and graduates from Kristy and Kathleen’s Pre-Intermediate class. He has shown great progress in his English grammar and vocabulary during his time here, and has excellent spoken English with a beautiful accent. Kim will be staying and working in Byron Bay, so if you miss him, you can find him at the fish and chip shop in Byron!


Mantana and Samonwan are from Thailand and graduate from Mel and Becky’s Elementary class. These sisters have been a pleasure to have in class. Both have improved their English speaking skills and have developed their confidence during their time here at Lexis Byron Bay. Enjoy your time in Melbourne and safe travels back to Thailand!

We also had a couple of prizes to award today…


Congratulations to Yuki who won the 6-pack of Coopers beer and a packet of TimTams for attending the free English lessons this week!


Earlier in the week we had some great suggestions for ways to enforce the English Only policy downstairs in the student lounge, and the ideas with the most votes won a prize. Congratulations to EstelleNamiNuria and Elisabeth who won First Prize, which was two 2-for-1 vouchers for a Kayaking trip with BWT! Their idea was: If you speak another language, you have to do a pledge on graduation day (like a song, dance or little game).


The runner up prize went to Shinsuke and Maito who won a 6-pack of beer! Their idea was: If a student speaks different languages, they must pay money. This money can be used for improvements to the school.


Thanks to everyone who came up with all the wonderful ideas! We were very impressed with the wide range of ideas and will be looking closely at whether it is possible to implement some of these.
