Friday afternoon’s activity was the art of Sushi Making.
There was some discussion in the beginning about the best method to cook the rice. We decided to use the rice cookers and hope for the best. They have proven to be unreliable in the past, but lucky for us, this time, they worked perfectly!! After the sushi rice was cooked, we added rice vinegar, caster sugar and salt to make the perfect sticky consistency for sushi rolls.
While the rice was cooking, we prepared the vegetables, salmon and tuna. We sliced carrots, capsicum, cucumber and avocado into long strips. We also added mayonnaise to the tuna for flavour.
Then it was time to roll..
We used cling film on our bamboo mats to prevent the yaki nori (seaweed) from sticking.
We placed some rice on the bottom 1/4 of the yaki nori and then added our choice of fillings on top. We then simply rolled the mats to create our masterpieces!
We had pickled ginger, soy sauce, wasabi and mayonnaise to compliment our sushi.
Everyone enjoyed their fresh sushi. Easy to make + delicious! Whats not to love? <3

It was a great turn out for this weeks coffee club! We had our usual selection of delicious coffee’s and of course everyone’s favourite, Tim Tams.
It was nice to have a catch up with everyone about their weekend and life in Byron. Then we got stuck in to a very serious game of Jenga.
Lexis Jenga is exceptionally fun because each block piece has a question on it so we can all get to know each other better whilst we play.
Serious concentration was required.
Then it was Talita’s turn …. the moment it all came crashing down!
So we played another round while we continued to sip our coffee’s..
Until it was Talita’s turn again…
Haha sorry Talita, but thank you for making us all laugh!! 🙂
Coffee Club happens outside the student lounge every Tuesday at 2pm. Come and join us to chat with new friends and of course, for coffee and Tim Tams!

At Coffee Lounge we played a game of Aussie Heads while enjoying coffee and TimTams!
The game involves sticking a card on your forehead (without looking at what is on it) and then asking yes/no questions to discover what you are!
From crocodiles and sandcastles to the Aussie flag and Sydney Harbour Bridge, the students gradually asked the right questions to find out what card they had stuck to their head, with many laughs in the process!
