Crepe Making Competition! May 31st

Last Friday afternoon we had a Crepe Making Competition in the student kitchen. We had a range of delicious toppings including; nutella, whipped cream, bananas, strawberries, golden syrup, 100’s and 1000’s, coconut, marshmallows, chocolate and nuts.

IMG_2884

We prepared our mixture and then got busy whipping up our crepes.

INGREDIENTS

  • 4 cups plain flour
  • A few pinches of salt
  • 4 eggs
  • 4 cups of milk

METHOD

  • Combine all ingredients in a bowl. Blend until smooth. Add a little water and mix to desired consistency. Cover and set aside to rest for 5 minutes.
  • Heat a medium non-stick frying pan over medium heat. Spray with cooking oil. Using 1/4 cup mixture per pancake, pour batter over pan, tilting from side to side so batter covers base in a thin film. Cook pancake for about 1 minute or until underside is golden, then use a spatula to flip. Cook other side for just under a minute until golden. Repeat with remaining mixture, spraying pan with cooking oil between pancakes.

Once everyone had made their crepes, it was off to the decoration station to begin creating the masterpiece.

Absolutely delicious. I couldn’t possibly choose a winner as they were all so amazing.

And lucky for us it was such a beautiful Friday afternoon we could all sit outside and enjoy.

Job Hunting Tips from our Lexis Students!

job-search

We recently spoke with six of our students here at Lexis Byron Bay, to ask them a few questions about their part-time jobs. We found out where they work, what they like about their jobs and working in Byron and also, what their dream jobs would be…

Arriving in a new place, meeting new people, starting school as well as having to find a job can be difficult! Thanks to these students, we have some tips for our current and future students, to help with the headache of finding a job. Thanks to Judith, Leo, Ania, Maria, Pedro and Lucas for the tips and positive vibes! πŸ˜‰

WAS IT HARD TO FIND YOUR JOB AND WHAT DID YOU DO TO GET IT?

  • No, it wasn’t too hard! Byron is small but you have lots of options for work. Everybody always finds a job! It really helps to be positive and focused.
  • It wasn’t too easy! I spent many weeks searching and bringing my CV to every store and restaurant.
  • When I arrived in Byron it was tricky to find a job as it was Winter season here, so a bit quiet, but I didn’t give up! I went to many places and gave in my CV and after a few weeks, got my job!
  • No, it wasn’t hard to find a job! My friend told me she was leaving her job at Orgasmic Falafel and asked if I would like to take over. This was the same for another job a few months ago, my friend was leaving his position at an Italian restaurant in town. I also got some cleaning work at my accommodation after suggesting some ways to make the public spaces better and cleaner for everyone. As I am a long term student here, I was also approached about some cleaning work here in Lexis.
  • I found a job on my first week in Byron! I recommend making a CV that is very personal to you – what do you know? What experience do you have? What are your strong points?
  • It took me about 15 days to find my job. I went around to all shops, bars and restaurants asking for the manager and handing them my CV personally.

WHAT ADVICE DO YOU HAVE FOR OTHER STUDENTS LOOKING FOR WORK?

  • Be patient! It will all work out ok!
  • If you put in the effort and are persistent, you will find your job! Ask to speak with the manager where possible.
  • Keep in touch with people and tell everyone you are looking for a job. There are so many people coming and going so you can take their jobs as they leave.
  • Never give up! and try speak with the manager.
  • Make your CV interesting and personal to you.Β Show them why they should hire YOU! πŸ˜€

Re-match Soccer Game against BBELS! May 22nd

Yesterday afternoon we had our highly anticipated re-match against BBELS.

When we played last time it was a disappointing loss for Lexis. After a close game, BBELS scored the winning goal in the final 5 minute tiebreaker.

IMG_2563

Enrique was our designated captain for yesterdays game. He took it upon himself to get us motivated by practicing a New Zealand haka. The haka is a type of ancient Māori war dance traditionally used on the battlefield, as well as when groups came together in peace. You will often see New Zealand sports team perform a haka before a game.

Great enthusiasm from the students! I had stitches from laughing so hard!

The students had some warm up exercises before the match started and lucky for us we also had the loudest support crew!

With all of our shouting we managed to attract a new friend.. The adorable Cookie!!

He was definitely ‘Team Lexis’!!

The match went on as the sun began to set.

IMG_2631

After 15 minute quarters we were all exhausted. Thank you Captain Enrique for keeping us enthusiastic! Unfortunately it was another close game, with BBELS taking the win with a final goal in the closing minutes. The final score was 4-3. Hard luck Lexis.

It was still a great afternoon. Thank you to everyone who played and came down to support!

Salsa & Sangria! May 17th

Friday afternoon we strapped on our dancing shoes and got funky forΒ Salsa & SangriaΒ with Danni from Sassy Salsa.

IMG_2475

We started off with a warm up to get us into the swing of it…

And then we got straight into learning a short ‘reggaeton’ routine…

Which then quickly escalated into an epic group dance circle…

Now everyone was well and truly warmed up and ready to enjoy some sangria! I made the sangria following a simple recipe of red wine, orange juice, a table spoon of maple syrup and diced apple, strawberries, orange and lemon.

Our lesson continued learning some salsa moves and practiced with a partner.

IMG_2469

Thank you everyone for such a fun afternoon! I am already looking forward to our next dance lesson. πŸ™‚
