Graduation 23 June

Today we said goodbye to to five students and see you later to another.

We are going to miss Shodai and Felipe from Kristy Pre-Intermediate class.

Kristy said she really enjoyed teaching Shodai, that he had a kind and smiley personality and always asked good questions. She also said she hated notice a great improvement in his speaking and pronunciation.

Felipe, who was here for 24 weeks, was described as positive, caring and kind because of the way he helped other students in class.  He has progressed from Elementary level and now can communicate much more fluently than when her arrived.

davFrom Josie’s Upper Intermediate class we say goodbye to Pauline, who was also here for 24 weeks. Pauline has made excellent progress during her time at Lexis English, progressing from Pre-Intermediate to Upper-Intermediate. Her teachers said she always participated in class and will be sadly missed from the class.

20170623_121537Two students also graduated from our new Advanced class. Mauricio has been at Lexis Byron Bay for 18 weeks and started in Intermediate. His teacher, Claudia, said that it had been a pleasure teaching him and that his vocabulary and speaking skills have greatly improved.

Julio has been here for 14 weeks in total and was previously in our FCE preparation class. Although he only studied with Claudia for a few days she said that she enjoyed his contributions in class.

IMG_9090Finally, we are saying a temporary farewell to Bitna. Bitna has already studied at Lexis Byron Bay for 20 weeks and will return in July for another 20 weeks. She has already progressed from Elementary to Intermediate and will be ready to start thinking about exam classes when she returns. Enjoy your holiday Bitna!

Cooking with chocolate! 22nd June

Yesterday we made chocolate brownies in the student lounge! We experimented with a vegan recipe and we added walnuts and raspberries.

Maria and Juliana provided a beautiful musical accompaniment on their Ukuleles.

The recipe is vegan and we added raspberries and some marshmallows on top! They might look a little rustic but they certainly tasted delicious!

Here is the recipe if you would like to make it.

Ingredients

5 tablespoons sunflower oil

200g dark chocolate (dairy free if you want to make it vegan)

170g of self-raising flour

3 heaped teaspoons of cocoa powder

180g golden caster sugar

230ml coconut milk

200g walnuts

Method

  1. Preheat the oven to 180ºC/350ºF/gas 4. Grease a square baking tin (roughly 20cm) with a little oil, then line with greaseproof paper.
  2. Place a heatproof bowl over a pan of simmering water, making sure the base doesn’t touch the water. Break 150g of chocolate into the bowl and allow it to melt, then set aside to cool slightly.
  3. Meanwhile, sieve the flour and cocoa powder into a large bowl, then stir in the sugar. Stir in the oil, milk and melted chocolate until combined.
  4. Roughly chop and stir in the remaining chocolate and most of the nuts reserving a few for the top. Pour the mixture into the prepared tin, spreading it out evenly. Sprinkle over the remaining pecans, then place into the hot oven for 20 to 25 minutes, or until cooked on the outside, but still gooey in the middle.
  5. Leave to cool for around 5 minutes, turn out onto a wire cooling rack, and then serve warm with a scoop of vanilla ice cream, if you’re feeling extra indulgent.

Coffee Lounge 20th June

The Lexis Byron Bay Coffee Lounge had a guest host this week, as Claire is on holiday.

Instead, providing the Tim-Tams, coffee and conversations was our much-loved teacher Josie. She really enjoyed mixing with students from a range of levels, including some students from her recent CAE Preparation class. In fact, she enjoyed it so much that she’s volunteered to do it all again next week.

BWT Travel Talk (and Pizza)

At lunchtime today, Shak from BWT came to the school to tell all our students about our weekend activity programme; the BWT welcome pack and the BWT travel desk.

Everyone enjoyed a slice or two of Domino’s pizza while Shak went through the contents of the welcome pack, which includes, amongst other things, a $50 off voucher.

He then reminded them about Tuesday Party night at Cheeky Monkeys where students can enjoy free entry, free drinks all night and 50% off all meals.

Finally, he introduced the weekend activity calendar for July. This month we have Nimbin and Noosa trips plus skydiving and whale watching. (See full details below.)

Shak will be at the BWT Travel Desk on Mondays, Wednesdays and Fridays between 12.15 and 3pm.

End of Course Sausage Sizzle

The rain did not put the dampers on our end of course BBQ on Friday. Instead a hot sausage sizzle was perfect for a chilly Byron day.

As usual Naomi and Claire cooked the sausages (and veggie sausages) like pros, with a little bit of help from Shak from BWT, who also supplied the drinks.

New Starters! 19th June

Welcome to our three new starters at Lexis Byron Bay today!

Mayuko, from Japan, has left her job working for Ralph Lauren to come to Byron Bay and pursue a career in the organic food industry. Having already traveled around Australia, visiting Sydney, Melbourne and Perth, she decided on Byron to come and study.  She certainly chose the right place! She would like to improve her English so that she can communicate with people internationally for work.

Beatrice joins us from Milan, Italy. She has escaped the sweltering Summer in Milan to enjoy the fresh air of Byron in winter. She leaves behind her family, her dog and her horse Strudel – who she practices show jumping with! She has come back to Australia, having studied in Lexis Noosa last year, because she loves Australia so much and she believes the best way to learn a language is to fully immerse yourself in it. She loves to surf and could not wait to get in the water today to ride the waves.

Cameron, from Belgium, joins us in Byron having studied at Lexis Noosa. Cameron loves surfing and would surf everyday if he could. He has certainly come to the right place too! He has just finished high school and will return home to study pursue his studies in environmental sciences. Cameron sees learning English as necessary for him to communicate with people while he continues to travel and explore the world.

June’s Table Tennis Tournament!

This week we had our monthly Table Tennis Tournament!

The competition started with 8 players in the first round:

Nil VS Cesc: Nil

Juan VS Felipe: Juan

Roman VS Joao: Roman

Felipe PC VS Mauricio: Mauricio

Onto the second round, the winners then making it through to the final were:

Nil VS Juan: Nil

Roman VS Mauricio: Roman

It was a tough final, with Nil putting up a good fight, but once again it was Roman who walked away as champion!!
