Boomerang Painting took place downstairs in the common area at Lexis Byron Bay!
This is some of the beautiful work created by Sina and Lucia.
We listened to Dreamtime music while we created stories on our boomerang canvas.
The students discussed the different symbols, colours and techniques each wanted to try.
Lucia creating her artwork, and Sina working on her boomerang.
We read through the different types of boomerangs:
hunting boomerang
returning boomerang
cross boomerang
It was decided that what we were working on looked more like the ‘returning boomerang’, though was only for decorative purposes.
Students also practiced their English while looking at the works in progress.
Sina’s Boomerang: the main feature is the kangaroo. She has only seen one though is hoping to see more on her travels around Australia. Sina has been told that there are hundreds near Melbourne airport!
Lucia’s Boomerang: the central focus on Lucia’s boomerang is the koala. She had great difficulty trying to paint it!

This week Siobhan joins us at reception as the Activities and Administration Assistant at Lexis English Byron Bay! Siobhan is originally from Melbourne, though moved to Byron Bay almost three years ago to live the beach lifestyle dream with her husband Eli and dog Kaiser. Most mornings you’ll find her on the sand with a coffee in hand, watching the dolphins play and waves lap against The Shipwreck with Kaiser.
Languages spoken: I speak English, though I am attempting to learn German so that I can speak with my best friend in her native language.
Byron Bay’s best kept secret: Killen Falls is a favourite waterfall of mine! It’s a short drive from town, an easy walk and makes for beautiful photos.
At 11pm on a Saturday, you‘ll find me… possibly at The Loft drinking espresso martinis with friends 🍸
At 8am on a Saturday, you’ll find me… at one of Byron’s beaches with my husband and my dog! 🥰
Best cafe in Byron Bay is: Doma, in Federal! It’s in the Hinterland and has the best sushi in the shire and has great coffee 🥢☕
When you’re in Byron Bay, don’t miss… the Bangalow Markets! They’re beautiful, especially during jacaranda season 🌸

It was a great turn out for this weeks coffee club! We had our usual selection of delicious coffee’s and of course everyone’s favourite, Tim Tams.
It was nice to have a catch up with everyone about their weekend and life in Byron. Then we got stuck in to a very serious game of Jenga.
Lexis Jenga is exceptionally fun because each block piece has a question on it so we can all get to know each other better whilst we play.
Serious concentration was required.
Then it was Talita’s turn …. the moment it all came crashing down!
So we played another round while we continued to sip our coffee’s..
Until it was Talita’s turn again…
Haha sorry Talita, but thank you for making us all laugh!! 🙂
Coffee Club happens outside the student lounge every Tuesday at 2pm. Come and join us to chat with new friends and of course, for coffee and Tim Tams!

On Wednesday we got busy in the student kitchen making ANZAC biscuits. The Anzac biscuit is a sweet biscuit, popular in Australia and New Zealand, made using rolled oats, flour, sugar, butter, golden syrup, baking soda and desiccated coconut.
Anzac biscuits have long been associated with the Australian and New Zealand Army Corps established in World War I. The biscuits were sent by wives and women’s groups to soldiers abroad because the ingredients do not spoil easily and the biscuits kept well during transportation.
Alessia, Mano and Juliane having fun getting ready to bake! Also very excited about another public holiday for ANZAC day on Thursday!
INGREDIENTS
2 cups rolled oats
1 cup plain flour
2/3 cup sugar
3/4 cup desiccated coconut
1/3 cup golden syrup
125g butter
1 teaspoon bicarb soda
METHOD
Preheat oven to 160°C.
Place the oats, flour, sugar and coconut in a bowl and mix to combine.
Melt the butter and golden syrup together in a saucepan over low heat, stirring constantly.
Combine the bicarb soda with the water and then add to the butter mixture.
Pour butter mixture into the oat mixture, and mix together until well combined.
Place a large spoonful of the mixture onto baking trays lined with baking paper. Flatten to 7cm rounds and make sure there is room between each cookie for them to spread while baking.
Bake for 8-10 minutes until golden in colour.
Allow to cool on baking trays for 5 minutes then transfer to wire racks to cool completely.
Enjoy this tasty Australian treat!!

Our free activity for today was Jewellery Making!!
We gathered in the student lounge to get creative with a collection of beads, shells, stones and old miscellaneous pieces of jewellery. We had a lot to work with, the fun part was deciding what to create. Here we are in action..
Everyone got stuck in and came up with some beautiful, unique designs.
Carina’s lovely necklace
Hongky’s colourful and fun necklace
Juliane’s beautiful shell necklace
Kim’s matching bracelet and anklet
You are all so clever and creative! I hope you enjoy your jewellery and have something nice you can keep and remember your time here at Lexis 🙂

There were some crowd favorites and some food that nobody liked! We discovered that, with a lot of butter, vegemite sandwiches are not so bad!! We all agreed lamingtons are delicious, and are NOT made out of the same sponge you wash the dishes with! It was a revelation to work out mince pies are savory, and not sweet and some of us thought musk sticks taste like perfume. The Tim Tams we are all familiar with, were the first plate to be emptied.. closely followed by the very yummy ANZAC biscuits!
-Lamingtons
-Vegemite sandwiches
-Caremello Koalas
– Mince Pies and Sausage Rolls
-Musk Sticks
-Allens Red Frogs
-Macadamia Nuts
-(Everyone’s favourite) Tim Tams
It was nice to see everyone giving everything a try, even if some of the food seemed strange and didn’t smell very good (vegemite)! It will be fun to make our own ANZAC biscuits soon!

On Wednesday we had a delightful morning and afternoon making dreamcatchers!
I demonstrated first how to make the netting and then assisted the students to do their own (with some needing more assistance than others!)
Using our box of materials, beads, shells and feathers we then decorated our dreamcatchers, with some beautiful results!
Carlos showed us just one of the many things they can now do with their dreamcatcher…
Previously students have given them as a gift (often to their homestay families!), hung them in their vans before going off traveling, decorated their bags with them, and taken them home as a souvenir of their time in Byron! Or they can use them for their original purpose and simply hang them in their rooms to protect them from bad dreams!

We all worked together to prepare the rice and fillings, with everyone having their own job, whether it be cutting carrots, slicing avocado or cooking the rice.
Once everything was prepped we all sat around the table to prepare our own individual sushi rolls. For fillings we had a choice of tuna, smoked salmon, cream cheese, cucumber, carrots and avocado.
Some of the students then sliced theirs into small neat pieces, whilst others just wanted to eat theirs straight away!
Then we had Lucas who tried to smoke his…
However they were eaten, they were all delicious!
