The Easter celebrations continue with more tasty treats <3
In our Easter Baking activity this week we made Chocolate Brownie with an Easter Twist and Easter Nests! We were also lucky enough to be gifted some lamingtons from our friend Alfred – the Bike Man.
To make the Easter Nests, we first melted chocolate in a bowl and added butter and golden syrup. We then combined the cornflakes to the bowl and mixed until the chocolate covered the cornflakes. It was now time to create the nests. Using a spoon we filled a paper cupcake case with the mixture and added decorations before putting in the fridge to set.
For the Easter Brownie we followed this recipe:
Brownie Recipe:
Ingredients
125 g butter
1 1/2 cups caster sugar
1/2 cup cocoa powder
2 eggs
1 tsp vanilla essence
1/4 tsp salt
1 cup plain flour
Recipe
Melt the butter in a medium saucepan.
Stir in sugar, cocoa, vanilla and salt.
Remove from heat and allow to cool slightly.
Quickly whisk in eggs.
Fold through sifted flour.
Spoon the mixture into a greased and lined 18 x 28cm slab tin.
Bake at 170C for 25-30 minutes.
The mixture will seem soft but will harden on cooling.
Allow to cool in tin before removing.
For the Easter twist, we took the brownie out of the oven after 20/25 minutes and pushed chocolate eggs into it and baked it for a further 5 minutes so they could melt into the brownie! Delicious!
Our creations turned out amazing!! Well done everyone.

Welcome to our 7 new students starting today at Lexis Byron Bay!
Ai is from Japan. She has been living and studying in Tokyo for the last 7 years. She works as a kindergarten teacher with children aged between 3-6. Her classroom would have about 35 students so she was very busy. Ai hopes to improve her English so she can communicate with people all over the world. She is very happy to be in Byron Bay because she loves to surf!
Asuka is from Japan. She enjoys running, walking and shopping. She wants to improve her English so she can get a good job when she goes back to Japan. She chose to study in Australia because she thinks this country is beautiful.
Juliane is from Germany. In her free time she likes to play soccer, read or meet with friends. She would like to study Biology when she gets back to Germany. She has wanted to visit Australia for a long time and is excited to learn to surf while she is here.
Aurea, is from Reinosa, a small town in the north of Spain. She moved to Australia to improve her English. Her hobbies are surfing, snowboarding an dancing. Music is very important in her life. She finished studying last year to become a nurse and hopes to work in all different places around the world.
Sara, is from Spain. Her hobbies are playing volleyball and scuba diving. She loves animals very much, even sharks. While she is here she hopes to scuba dive at Julian Rocks and is planning on volunteering at Currumbin Park after studying at Lexis. In Spain she studied to be a veterinarian, and will continue her studies when she gets home.
Kim, is from the German speaking part of Switzerland. Her hobbies are driving, snowboarding, listening to music and hanging out with friends. She wants to improve her English so she can travel. She is looking forward to backpacking around the South Coast after studying at Lexis.
Quentin, is from the French speaking part of Switzerland. He loves food, and trying new dishes from other countries. In Switzerland, Quentin, works for Rolex as a watchmaker. He hopes to improve his English so he can move with the company to Hawaii in the future.

On Friday we had a free Sausage Sizzle lunch for the students! It was my first time running the BBQ and I had so much fun!
We were lucky that the rain held off and the sun was shinning so we could enjoy the BBQ outside.
It was nice to share the last lunch with the Hiroshima Juniors before they left us. We are all going to miss your happy faces!

We had a relaxing afternoon painting boomerangs in the student lounge. The rain poured down outside while we got creative inside. Everyone came up with their own unique design. Some of us chose to follow the traditional aboriginal style while others let their creative imaginations run wild.
They all look amazing, I think even better than the ones you can buy in a store!!
I think we could of stayed painting for hours, thank you for a fun afternoon! 🙂

Gabriela, is from Brazil. She loves to travel and is so happy to be in Australia! She enjoys spending time at the beach and exploring new places. She is hoping to improve her English for her job when she returns back to Brazil.
Nanaka, is a university student from Japan. She loves watching old movies, Westerns are her favorites. It is her first time studying abroad and living alone, so she is a little bit nervous, but also very excited for a new life! She is hoping to find work in a cafe, and start practicing yoga. She chose to study in Australia because she loves the hot weather, nice people, and beautiful beaches.
Cyntia, is from Chile. She enjoys listening to music, watching movies and speaking with her friends. She hopes to improve her English while she is here at Lexis so she can get a good job when she returns home. Her brother has lived in Byron Bay for 3 years, she has always wanted to visit and feels very lucky to be able to stay with him.

There were some crowd favorites and some food that nobody liked! We discovered that, with a lot of butter, vegemite sandwiches are not so bad!! We all agreed lamingtons are delicious, and are NOT made out of the same sponge you wash the dishes with! It was a revelation to work out mince pies are savory, and not sweet and some of us thought musk sticks taste like perfume. The Tim Tams we are all familiar with, were the first plate to be emptied.. closely followed by the very yummy ANZAC biscuits!

He works as a flight attendant for one of the biggest travel company’s in the world, Travel Union International. He want to refresh his English and is looking forward to travelling around Australia after studying at Lexis.
Ayumi is from Japan. She enjoys playing tennis, watching soccer games and movies. She loves Australia for the weather and the beaches. She hopes to get to see many Australian animals while she is here. She would like to be a flight attendant when she finishes school because in her experience travelling, they have always been very kind to her.
Celine is from the German speaking part of Switzerland. She enjoys playing volleyball. She speaks French and German very well and hopes to improve her English while she is in Australia. She thinks she will return to study when she leaves Australia or maybe go back to her office job that she loved.
Jessica is from Spain. She loves animals and is the proud mother of three cats that she has re-homed from Spain. She has a lot of interests and hobbies, but her main passion is surfing. She loves spending her time at the beach, even on rainy days. In the future she would like to become a surf instructor and yoga teacher and make her passion her profession.

Yesterday we headed down to the beach for some Bodyboarding!
Summer is still here and it was beautifully warm in and out of the water 🙂
We collected the boards from the wonderful team at Let’s Go Surfing, then I gave the students a quick demonstration on the beach before they headed into waves!
The waves were pretty small but they all managed to catch a few and had lots of fun, which is the important thing!

His writing has also improved and it’s been wonderful to see him grow more confident with speaking. Michelle says his questions, communication skills and contributions were great for the whole class. Leonie is from the German speaking part of Switzerland. She likes floorball and has played piano for four years. She chose Byron Bay for her studies as she likes to live in a small town, instead of a big city like Sydney. She has just finished 4 years at economic school and wants to improve her English for University.
Nicolas is a dentist from Chile. He chose to come to Byron Bay as he likes the warm weather and the life style. He hopes to improve his English to continue studying in Spain.
Patrick is from the German speaking part of Switzerland. In his free time he enjoys mountain biking, hiking, motorsports and wakeboarding. He is interested in cars and good conversation. Patrick hopes to improve his English for travel.
Mano is from France. He is passionate about sport, mostly CrossFit. He also loves music. He is interested in science and the human body and has a lot of questions about life. Mano will start studying philosophy next year.
Eliane is from the German speaking part of Switzerland. During the Winter she likes to snowboard in the mountains and has worked as a snowboard instructor in ski resorts. In the Summer she likes to swim, surf and enjoy the outdoors. She chose Byron Bay so she can surf and enjoy travelling while she improves her English.
Gabriela (Gabby) is from the German speaking part of Switzerland. She chose Byron Bay because she is from a small town and likes the country side. She enjoys swimming in the ocean and thinks she might learn to surf while she is here. She is a hairdresser and wants to improve her English because she has many foreign customers in Switzerland.
Juhee is from Korea. She is interested in making international friends to share good food and conversation with. She is passionate about health and enjoys sports, such as basketball and swimming. She hopes to enhance her English skills so she can get a good job and also communicate with her international friends.

Yesterday Orla and I taught the students how to make dreamcathers!
I had a small group in the afternoon, which made it easy to show and help each of them individually, ensuing they were made to perfection!
We all opted to go for neutral, rustic designs. Once we had covered the outer ring and made the web, we made them more decorative with hanging feathers, tassels, shells and beads.
Maria and Patricia made theirs to go in their van, which will no doubt give them fond memories of Byron and Lexis when they’re on their travels, whilst Raphael decided his made a great accessory for glasses!
