Easter Cooking! 29 March

Last Thursday we made some tasty Easter treats!

This included chocolate brownies with an Easter twist! Once the brownies were nearly ready we took them out the oven and pushed in caramel and malteser chocolate eggs, then put them back in for 5 minutes so they would melt into the brownie!

Whilst we were waiting for the brownies to cook we also made some chocolate nests!

These are really simple to make; melt some chocolate in a bowl over boiling water, then add cornflakes! We also added marshmallows and digestives biscuits to ours 🙂 We then popped some M&M eggs on the top to finish off the nest look!

Both were absolutely delicious and between us a lot of chocolate was eaten!

 

Brownie Recipe:

Ingredients

  • 125 g butter
  • 1 1/2 cups caster sugar
  • 1/2 cup cocoa powder
  • 2 eggs
  • 1 tsp vanilla essence
  • 1/4 tsp salt
  • 1 cup plain flour

Recipe

  • Melt the butter in a medium saucepan.
  • Stir in sugar, cocoa, vanilla and salt.
  • Remove from heat and allow to cool slightly.
  • Quickly whisk in eggs.
  • Fold through sifted flour.
  • Spoon the mixture into a greased and lined 18 x 28cm slab tin.
  • Bake at 170C for 25-30 minutes.
  • The mixture will seem soft but will harden on cooling.
  • Allow to cool in tin before removing.

For an Easter twist, take the brownie out the oven after 20/25 minutes and push chocolate eggs into it and bake for a further 5 minutes so they can melt into the brownie!

Easter Coffee Club! 27 March

Today at Coffee Club we swapped Tim Tams for Hot cross buns to celebrate Easter!

Hot cross buns are traditionally eaten on Good Friday in Australia, Britain, Canada, Ireland, New Zealand, South Africa and some parts of the Americas. The buns mark the end of Lent and different parts of the hot cross bun have a certain meaning; including the cross representing the crucifixion of Jesus, and the spices signifying the spices used to preserve him at his burial.

They are typically a spiced sweet bun but we also had some chocolate ones which we enjoyed warmed up with butter 🙂

March Activity Calendar!

Come along to our FREE activities (excluding surfing) exclusively for our Lexis students! They’re a great way to make new friends, practice your English and have some fun!!

From the 19th of March everyone will be studying in the morning, so activities will then just be once a day! Normally at 2pm, unless started otherwise 🙂

We continue to have Yoga every Monday at 11am (until the 19th of March) and 2pm in Room 8.

We’ll also continue to have Coffee Club weekly at 11am (until the 19th) and 2pm. Join me in the garden for coffee, Tim Tams and games! On the 27th we’ll be having an Easter Coffee Club with hot cross buns and Easter themed games!

For the first day of March we have Lawn Bowls, a popular Australian pastime! Join me in the garden at 11am or 2pm!

Then on Friday we have the SWEET EXCHANGE! Everyone is encouraged to bring in something sweet they have either made or bought. You will then be able to try each other’s treats by giving a gold coin donation; this money will then be split between two charities: Golden Oldies Animal Rescue and WIRES Wildlife Rescue. Eating sweets for a good cause?! This will be in Room 8 during your break times: 10.30am and 3.30pm.

On the 7th we’ll be getting creative and making some beautiful Jewellery! 11am and 2pm in the Student Lounge.

Our 1 hour Surf Special for $25 will be on the 8th; sign up and pay in reception. Pick up times from school are 10am and 3pm 🙂 Limited spots available so be quick!

Friday the 9th we’ll be heading to the beach for a game of Volleyball! 11am and 2pm; meet at school first.

The March Table Tennis Tournament will be held on the 14th! Get practicing and the beer could be yours!!

We sadly say goodbye to our Cambridge students so on the 15th we’ll be having a Sausage Sizzle to wish them farewell. Free lunch for everyone!!

The farewell/celebrations continue with Beer Tasting on the 16th. This will be at 5.30pm in front of school so everyone can enjoy together!

Olmo will be coming in on the 21st to teach you how to Slackline! This is when we switch to one schedule, so he will be here at 2pm only.

On the 22nd we have Clothes Swap ‘N’ Style! Bring in an item of clothing that you can then either swap with another student or upcycle! We will have accessories and materials available for you to get creative and transform your old clothes into something new!

We’ll be having a game of Cricket at the beach on the 23rd! 2pm; meet at reception first.

On the 28th we have a Soccer Match against Byron Bay English Language School (BBELS)! This will be 3.30pm at the sports fields. Meet at reception at 3pm if you are not sure how to get there! Sign up in reception 🙂

To celebrate Easter we will be making some tasty treats with our Easter Cooking activity on the 29th! 2pm in the Kitchen.

We will be closed on Friday the 30th for Easter Friday. Speak to Happy Travels about trips you can book onto for the long weekend (we will also be closed Monday the 2nd of April for Easter Monday – 4 day weekend)!

Job Club is every Wednesday in Room 8 (with GIL). Myself or a teacher will be able to help you write resumes/cover letters, look for jobs, apply for TFN’s and give you advice on gaining your RSA or Barista license!

GIL (Guided Individual Learning) runs every day from 12-1pm (until the 19th) and 2-3pm in Room 8 (Room 7 on Mondays). Come along to get help with anything from homework to vocabulary to writing your resume.

April was another fun month here at Lexis Byron Bay!

With it being the month of Easter we had a few Easter themed activities, including….

Easter BBQ! 13th April

Today we had our Easter BBQ!

It was a great way to end the short week and start the long Easter weekend!

The sun was  shining so the students enjoyed their sausages and snacks out on the grass 🙂

We also had chocolate eggs and bunnies hidden around school, well done to those of you who found them; especially those who did so without my help!

Easter Cooking! 12 April

Yesterday we made some delicious Easter treats!

We started by making chocolate chip cookies, and then while these cooked in the oven…..

we melted dark and milk chocolate and mixed it with cornflakes to make Easter nests!

There was a lot of food testing happening as they were being made; but as Celine pointed out, this is very important for quality control!

Once the cookies were out of the oven the students decorated them with icing; there were a few interesting designs not related to Easter….

Both treats are simple and fun to make and tasted delicious!

April Activity Calendar!!

We have another month of exciting activities planned for our Lexis students!

Every Monday you can stretch out and relax doing Yoga with Stef or Fee in Room 8 from 2:15 to 3:15.

On Tuesdays and Wednesdays we alternate the popular activity of Coffee Lounge, which gives students the chance to get to know each other while practicing English with fun activities such as Jenga and Uno! Tim tams are plentiful, and on the 12th we will have a special Easter coffee lounge with hot cross buns, and on the 26th we will have Anzac cookies to commemorate Anzac day which is on the 25th (school will be closed this day).

We have Flavio coming in on the 4th to teach you how to Skateboard and Olmo coming in on the 27th for Slacklining!

On the 6th we will have a Poker Tournament, with beer to be won!

We have the popular activity of Beach Volleyball on the 21st.

Our monthly Table Tennis Tournament will be on the 20th. Last months winner, Bruno, has now left so it’s time to find our new champion!!

There will be a 1 hour Surf Lesson for just $20 with Let’s Go Surfing on the 19th. Please come see me in reception if you’d like to book this!

On the 28th we have a Soccer Challenge against SAE college! This will be at Byron Bay Sports Fields at 3pm. Come compete for your school and make us winners! Sign up at reception, kit will be provided!

With it being Easter we have some Easter Cooking on the 11th and an Easter BBQ on the 13th!

Please be aware the school will be closed for the public holidays; Good Friday on the 14th, Easter Monday on the 17th and Anzac Day on the 25th!

Backpacker World Travel will be doing a Travel Fair in the student lounge on the 7th, with special travel deals for you all!

We have our bi – weekly Job Club on the 5th and 19th. Myself or a teacher will be in Room 8 at 2pm to help you write resumes/cover letters, look for jobs, apply for TFN’s and give you advice on gaining your RSA or Barista license!

Easter Cooking!

There’s only a few days until Easter so we spent the afternoon doing some Easter cooking! Almonds covered in melted dark and white chocolate make the perfect little eggs for decorating. Jeannine, Simone, Ana and Simone joined me to make these Easter treats

March Activities!

March activs

There are only a few days of February left, which means it’s time to announce our afternoon activities for March!

We’ll have yoga with Stefanie every Monday from 2.15-3.15 in Room 8.

On Tuesdays we’ll enjoy coffee, Tim Tams and conversation at Coffee Lounge (and the week before Easter you’ll have chance to try Hot Cross Buns, a traditional Easter food!)

Wednesdays will be varied – Marcella from BWT will be giving a travel talk, we’ll have a table tennis tournament, we’ll get artistic during our Aboriginal art and boomerang painting activity, we’ll cook some delicious treats during Easter Cooking and at the end of the month we’ll do some beer tasting.

Thursdays will alternate between a movie showing with ice cream or popcorn, and Job Club where you can work on your CV, look for jobs and ask any job-related questions.

Finally, on Fridays we’ll have beach volleyball, a BBQ to celebrate the end of the Cambridge course, a bike ride and swimming adventure at Tallow beach, and beach cricket.

We’ll also continue to have our Tuesday student nights at Cheeky Monkey’s with free food and drinks plus plenty of games, dancing and socialising.

Don’t forget you can book surf lessons with us at reception (available most days at 2pm with Gaz at Style Surf).

We have two public holidays in March for Easter, so school will be closed on Good Friday (25th March) and Easter Monday (28th March).
