Cooking with Chocolate! May 23rd

Yesterday afternoon we all managed to give ourselves a belly ache by over indulging on the chocolate treats that we created.

We started off by making chocolate brownies following this simple recipe:

Ingredients

  • 125 g butter
  • 1 1/2 cups caster sugar
  • 1/2 cup cocoa powder
  • 2 eggs
  • 1 tsp vanilla essence
  • 1/4 tsp salt
  • 1 cup plain flour

Recipe

  • Melt the butter in a medium saucepan.
  • Stir in sugar, cocoa, vanilla and salt.
  • Remove from heat and allow to cool slightly.
  • Quickly whisk in eggs.
  • Fold through sifted flour.
  • Spoon the mixture into a greased and lined 18 x 28cm slab tin.
  • Bake at 170C for 25-30 minutes.
  • The mixture will seem soft but will harden on cooling.
  • Allow to cool in tin before removing.

We also decided to give chocolate chip biscuits a go. All was going well..

Until it was time to take them out of the oven..

Something had gone slightly wrong and we had managed to create one giant cookie pancake.. HAHAHA!

Luckily it still tasted delicious and we all managed to laugh at our epic fail.

With the left over chocolate, we made MORE chocolate biscuits that we shared with everyone in the student kitchen.

Cooking with Chocolate! (morning) February 20th

On Thursday morning we all met in the kitchen at 11.30am for this months cooking activity – chocolate brownies!

Our ingredients included: flour, caster sugar, cocoa powder, coconut oil, coconut milk, organic dark chocolate, raspberries and walnuts. We adapted our recipe so that it is also suitable for vegans 🙂

The first thing we did was preheat the oven and prepare the baking tray, followed by combining the ingredients together in a large mixing bowl.

Next, we melted the chocolate in a bowl, over some hot water so it was ready to add to the mix of flour, sugar, coconut oil, milk, raspberries and nuts.

All ready for the oven! (Our tray was too big so we had a genius idea to make it smaller – using some tin foil to build a little wall 😀 )

After waiting patiently for 25 minutes, our brownies were ready…

The result? DELICIOUS! 😀

Easter Cooking! 29 March

Last Thursday we made some tasty Easter treats!

This included chocolate brownies with an Easter twist! Once the brownies were nearly ready we took them out the oven and pushed in caramel and malteser chocolate eggs, then put them back in for 5 minutes so they would melt into the brownie!

Whilst we were waiting for the brownies to cook we also made some chocolate nests!

These are really simple to make; melt some chocolate in a bowl over boiling water, then add cornflakes! We also added marshmallows and digestives biscuits to ours 🙂 We then popped some M&M eggs on the top to finish off the nest look!

Both were absolutely delicious and between us a lot of chocolate was eaten!

 

Brownie Recipe:

Ingredients

For an Easter twist, take the brownie out the oven after 20/25 minutes and push chocolate eggs into it and bake for a further 5 minutes so they can melt into the brownie!

Sweet Exchange! 2 March

After the success of our last Sweet Exchange we decided to do it all again to raise more money for our chosen charities (and eat lots of cake!!)!

Sweet Exchange

We encouraged all of our students and staff to bake or buy something sweet to bring in and share!

Everyone had to donate a minimum of $1 and could then help themselves to as many sweet delights as they could eat!

The money raised will be given to two charities myself and Lisa are very passionate about; WIRES Wildlife Rescue and Golden Oldies Animal Rescue. I am a rescuer/volunteer for WIRES and Lisa has adopted two elderly dogs and an 8 year old cat from rescue groups like Golden Oldies. We each did a presentation for our chosen charities to explain all the great things they do and how everyone’s donations would help.

We had a fantastic selection of homemade cakes and shop bought biscuits, chocolates and doughnuts!

I’m so proud to work for a school where we have such caring and generous students and staff who were happy to get involved for a brilliant cause! Everyone’s contributions and donations were greatly appreciated and we can’t wait to let the charities know how much Lexis has raised for them…

a total of $272.25!!

Cooking with chocolate! 22nd June

Yesterday we made chocolate brownies in the student lounge! We experimented with a vegan recipe and we added walnuts and raspberries.

Maria and Juliana provided a beautiful musical accompaniment on their Ukuleles.

The recipe is vegan and we added raspberries and some marshmallows on top! They might look a little rustic but they certainly tasted delicious!

Here is the recipe if you would like to make it.

Ingredients

5 tablespoons sunflower oil

200g dark chocolate (dairy free if you want to make it vegan)

170g of self-raising flour

3 heaped teaspoons of cocoa powder

180g golden caster sugar

230ml coconut milk

200g walnuts

Method

  1. Preheat the oven to 180ºC/350ºF/gas 4. Grease a square baking tin (roughly 20cm) with a little oil, then line with greaseproof paper.
  2. Place a heatproof bowl over a pan of simmering water, making sure the base doesn’t touch the water. Break 150g of chocolate into the bowl and allow it to melt, then set aside to cool slightly.
  3. Meanwhile, sieve the flour and cocoa powder into a large bowl, then stir in the sugar. Stir in the oil, milk and melted chocolate until combined.
  4. Roughly chop and stir in the remaining chocolate and most of the nuts reserving a few for the top. Pour the mixture into the prepared tin, spreading it out evenly. Sprinkle over the remaining pecans, then place into the hot oven for 20 to 25 minutes, or until cooked on the outside, but still gooey in the middle.
  5. Leave to cool for around 5 minutes, turn out onto a wire cooling rack, and then serve warm with a scoop of vanilla ice cream, if you’re feeling extra indulgent.

Cooking with Chocolate! May 18

This afternoon we baked Echidna Cookies – cookies that look like echidnas! If you are unsure what an echidna is, it is an egg-laying mammal that is native to Australia and is somewhat similar in looks to a hedgehog. Seven students joined me to create these delicious treats that (sort of) resemble the echidna!

Everyone agreed that the cookies looked adorable and were very tasty too  – they were all eaten very quickly!

If you want to try making these at home, here is the recipe:

 

INGREDIENTS

1/3 cup margarine

¼ cup sugar

½ tsp vanilla extract

2/3 cup all-purpose flour

2/3 cup ground almonds

1/8 tsp salt

1 cup cooking chocolate

1 Tbsp coconut oil

½ cup chocolate sprinkles or flake

½ cup slivered almonds

Optional decorating ingredients: desiccated coconut, 100’s & 1000’s, writing icing, edible silver balls, etc…

DIRECTIONS

  1. Preheat oven to 160°C and line a baking tray with baking paper.
  2. In a small bowl, whisk margarine and sugar together until light and fluffy. Mix in vanilla.
  3. Combine flour, ground almonds and salt; gradually add to the creamed mixture and mix well.
  4. Shape 1 tablespoon of dough into a ball; pinch the dough to form a nose and feet. Repeat until all the dough is used up and place each cookie 2 inches apart on the prepared tray.
  5. Bake for 12-15 minutes or until lightly browned. Let stand for 5 minutes before removing to cool completely.
  6. In a small saucepan, melt chocolate and coconut oil over very low heat, constantly stirring until smooth.
  7. Holding a cookie by the head, spoon chocolate over the back leaving the face uncovered. Allow any excess to drip off. Place on the baking paper and immediately add sprinkles/flake or slivered almonds for the spikes, and add any other decorations for the eyes, tongue and feet.
  8. Place in the fridge to set, then eat them all! 🙂

May Activities!

The month of May starts this Sunday, so it is time to announce the next month of exciting free activities especially for our Lexis students!

On Mondays you can stretch out and relax doing Yoga with Stefanie from 2:15 to 3:15 in Room 8.

Tuesdays is Coffee Club with coffee, TimTams and conversation, a Trivia afternoon to test your knowledge and a Poker Tournament for beginners and card sharks alike! Prizes will be awarded to the winners at the Trivia and Poker afternoons!

On Wednesdays we will start the month being artistic and learning some Australian culture with Boomerang Painting. After the awesome reports from last month, we are doing another 1 hour Surf Lesson for just $15! We will also get into the kitchen to do some Cooking with Chocolate and will finish off the month with Cider Tasting.

Every Thursday there will be a Movie with free popcorn, with Job Club also happening every second week.

On Fridays we will get active, with a Lighthouse Bush Walk to see some iconic Byron scenery, a friendly game of Soccer in the garden, show off your mad skills and Learn to Skateboard, and get competitive at the Table Tennis Tournament!

We will also continue to enjoy our Student Nights at Cheeky Monkeys every Tuesday night – meet at BWT first to get your drinks, food and fun!

Don’t forget you can book your 3-hour surf lessons with us at Reception, available most days at 2pm or at select times over the weekend with Gaz at Style Surf.

Making Raw Desserts! April 27

Today we spent some time in the kitchen preparing possibly the most delicious raw dessert  ever made in the Lexis kitchen!

Eleven Lexis students helped prepare the ingredients to make a base with layers of coconut and chocolate, topped off with another layer of chocolate . YUMMY! <3

The hardest part of making raw dessert – being patient. The mini tarts are sitting in the freezer (safe from thrifty fingers – I’m looking at you, Santi!) overnight for an excellent morning break snack tomorrow!

If you want to try this yourself, here is the recipe:

RAW LAYERED CHOCOLATE AND COCONUT TART

INGREDIENTS:

For the Base

1 cup Almond Meal

½ cup Peanut Butter

3/4 cup Coconut Oil

1/2 cup Desiccated Coconut

½  cup Sweetener

1 tsp Vanilla

¼ tsp Salt

 

For the Layers
2 Tbsp Cocoa

1 cup Tbsp Sweetener

2 cups Peanut Butter

1/2 cup Desiccated Coconut

1/2 cup Coconut Oil

1½ tsp Vanilla

½ tsp Salt

 

For the Topping

1 block Chocolate

3 Tbsp Coconut Oil

Handful of Desiccated Coconut

 

METHOD:

  • Prepare a cake or muffin pan lined with baking paper. Place in the freezer while preparing base.

For the Base

  • Put all ingredients in a bowl, mixing until well combined. The mixture should be slightly sticky and hold its shape easily. Add more almond meal if it is too sticky or more oil if it is too dry.
  • Pour mixture into prepared pan and press down, covering the bottom of the pan evenly. Return pan to the freezer while preparing the layers.

For the Layers

  • Combine all ingredients in a bowl, except the cocoa. The mixture should be thick like a paste. Add more peanut butter if it is too runny or more oil if it is too dry.
  • Split the mixture in two, putting one half in a separate bowl.
  • From one bowl, spoon about 1/3 of the mixture into the pan, spreading it across the base until it is covered in an even layer.
  • Return pan to the freezer to allow that layer to set.
  • Meanwhile, add cocoa and the extra sweetener to the other bowl of mixture, stirring until well combined. Spoon about 1/3 of this chocolate mixture into the pan over the first layer.
  • Return pan to the freezer until firm, then repeat the process alternating the layers, allowing some time in between each layer for the layers to firm up in the freezer.

For the Topping

  • Gently melt the chocolate and oil together in a pan over low heat, stirring to combine.
  • Pour over the top of the layers then sprinkle with coconut.
  • Return to the freezer until the topping has hardened (at least 3 hours or overnight).
  • Slice and enjoy! 🙂

Coffee Club! April 12

This afternoon I was joined by seven Lexis Byron Bay students and one Lexis Perth student! We enjoyed coffee and Tim Tams, plus some bonus chocolate, with a rowdy game of Lexis Jenga.

While everyone tried their best to be careful, the Jenga tower fell 5 times! Each time, the person who made it fall had to try some Vegemite straight out of the jar… EmikoMayumi and Noriko were not impressed with the Vegemite but Kim and Shin thought it was pretty tasty. Bernarda and Yuki (and Adrian from Perth) also played but were skilled enough to avoid the Vegemite tasting this time round!

Easter Cooking!

There’s only a few days until Easter so we spent the afternoon doing some Easter cooking! Almonds covered in melted dark and white chocolate make the perfect little eggs for decorating. Jeannine, Simone, Ana and Simone joined me to make these Easter treats
