Students were happy today at Lexis Byron Bay because we had Aussie Food Tasting!
Lots of different foods were tried and tested!
Most of the foods could be described as Aussie Junk Food and could be found at a children’s birthday party 🥳
Some food options were definitely rated higher than others 😋
On the menu today was:
sausage rolls
meat pies
Vegemite and Vegemite on toast
fairy bread
must sticks
Milo
lamingtons
Caramello koalas
ANZAC biscuits
macadamia nuts
Milo and Caramello Koalas were rated the highest!
Though no one really liked Vegemite at all 😫

Yesterday afternoon’s activity was Aussie Food Tasting in Room 1!
We had a range of delicious.. (and some not so delicious) Aussie favourites to taste.
The sausage rolls and mince pies were the first to be demolished.. definitely a crowd favourite!
We also had macadamia nuts, caremello koala’s, musk sticks, lamingtons, tim-tams, milo, kirks fizzy drinks, vegemite sandwiches, fairy bread, Anzac biscuits and red frogs to try.
As you can tell from the facial expressions of everyone in this video..
Not everyone enjoyed vegemite for the first time, it’s certainly a taste to be acquired! 🙂
Hinako was the only student who did enjoy vegemite and Ayumi of course loving the tim-tams 🙂

I hope you all enjoyed at least some of the Aussie food we tried! I am interested to know what other food you have enjoyed during your time in Australia. Roslane recommends the kangaroo burger from the Railway Hotel and the I can safely say the fish and chips from Hunky Dory are delicious. 🙂

Throughout the month we always have a variety of different activities, with a mix of sports, cooking and craft, so there’s something for everyone!
We have free Yoga with Jimmy every Monday at 2pm– in Room 8.
We continue our Coffee Club on Tuesday’s at 2pm; join me for coffee, Tim Tams, games and conversations!
GIL (Guided Individual Learning) runs every day 2-3pm in Room 8. Come along to get help with anything from homework to vocabulary to writing your resume.
Teacher Kristy runs a free Guided Meditation on Wednesdaymorning between 8-8:30am in room 8. (Except for Wednesday 12th, as the class room will be occupied)
We continue our friendly Soccer Match with Byron Bay English Language School (BBELS) every second Wednesday at 3:30pm. Meet in front of the school around 3pm and we can all walk down to the soccer field together. Help us claim back the trophy!
We have a couple craft-ernoon activities for you to make something special for a loved one or something you can keep to remember your time here at Lexis. Jewellery Making on Thursday June 6th and Hand Made Gift Cards on Friday 21st June. Everything will be supplied but you are welcome to bring along your own materials to use if you wish.
On Wednesday 12th June Join Yuka for a very special one off High Intensity Interval Training Pilates Class in room 8. One hour that is sure to get the blood flowing and get you warmed up on a chilly winters afternoon.
On Thursday 13th June come along and try a variety of Aussie food – from lamingtons to vegemite sandwiches. You might just surprise yourself by what you enjoy.
Thursday 14th May we have another Table Tennis Tournament with fantastic prizes for the winner of course!
I am really looking forward to Baking Koala Cupcakes on Thursday 20thand then Making Pizzas the following Thursday 27th. YUMMMMM!
We also have our 1 Hour Surf Lesson for $25 on Wednesday 26th and on the last Friday of the month we will have a hit of backyard cricket and some fun playing Garden Games.

The students were able to try Aussie favourites: Vegemite, Lamingtons, Tim Tams, Macadamia nuts, Allens red frogs, Musk sticks, Caramello koalas, Anzac biscuits and Fairy bread!
Nobody was a fan of Vegemite! It’s always great to see people’s reactions when they try it for the first time!!
The clear favourite was Tim Tams, which all the students were already very familiar with!
There were some the students hadn’t heard of, like musk sticks, but they were happy to give everything a try!
To accompany their snacks we had a selection of Kirks soft drinks (Creaming soda, Lemon and Pasito flavours) and Milo (chocolate and malt powder mixed with milk), both popular here in Australia!

After three months of studying very hard, the Cambridge course has come to an end! It feels like only yesterday we were welcoming the Cambridge students on their first day. Many friends have been made and lots of English learnt over the past three months and we will be sad to say goodbye to this group.
In addition to the Cambridge students leaving, we have 16 students finishing up their General English courses today too. This gave us all the more reason to come together for an Aussie BBQ celebration and what a lovely day it was. 🙂

This afternoon we tasted a selection of beers from Australia, including a local Stone & Wood Pacific Ale, the famous Coopers Sparkling Ale and the “no hangover” low carb Pure Blonde.
Many of the students already had their favourites, having sampled a few beers already in their time in Byron Bay, but were more than happy to taste them again, along with a few new ones they hadn’t tried yet!
After tasting the seven different types of beers, everyone enjoyed finishing off the cold beers on such a hot, humid afternoon in Byron Bay.
The activity inevitably turned into a great socialising event. The students were quick to turn the US election updates into a drinking game while sharing many stories about their own governments, and Astrid also gave us her own rendition of ‘Happy Birthday‘ played by blowing over the beer bottle tops! 🙂

At the morning session we played a game of Aussie Heads while enjoying our coffee and TimTams. The students were given a mystery card to stick on their forehead and had to ask questions to work out what place, object, sport or animal they were. Some were quite easy to figure out, like kangaroo and Lexis Byron Bay. Others were more difficult and required some prior knowledge of Australia, such as didgeridoo and TimTams! Either way, it was a good chance to practice speaking and learn some new English words.
In the afternoon we drank coffee and ate TimTams over a game of Uno. There was some fierce competition to start, with Yuki and then Astrid winning the game quickly, followed slowly by the rest of us! With students from all over the world playing, there were a few differences in the rules that each player uses. For example, how many cards do you pick up if you forget to say ‘uno’ when you have only one card left – one, two or seven? Compromises were made quickly and the game continued on in the same friendly but competitive nature that it started in!

Today we got into the kitchen to bake some Anzac Biscuits!
These Australian cookies originated approximately 100 years ago and were created to be sent overseas to soldiers at war. The biscuits contain ingredients that don’t spoil easily and the cookies, once baked and cooled, become hard and crunchy – and delicious!
After following the recipe to prepare the mixture, the biscuits only need about ten minutes to bake. Then, the hardest part of the whole process, you need to wait for the cookies to cool before eating them if you want to experience the delightful crunch that Anzac biscuits are known for!
If you want to try making these at home, here is the recipe:
ANZAC BISCUITS
2 cups rolled oats 1 cup plain flour 2/3 cup sugar 3/4 cup desiccated coconut 1/3 cup golden syrup 125g butter 1 teaspoon bicarb soda 3 tablespoons boiling water
Preheat oven to 160°C.
Place the oats, flour, sugar and coconut in a bowl and mix to combine.
Melt the butter and golden syrup together in a saucepan over low heat, stirring constantly.
Combine the bicarb soda with the water and then add to the butter mixture.
Pour butter mixture into the oat mixture, and mix together until well combined.
Place a large spoonful of the mixture onto baking trays lined with baking paper. Flatten to 7cm rounds and make sure there is room between each cookie for them to spread while baking.
Bake for 8-10 minutes until golden in colour.
Allow to cool on baking trays for 5 minutes then transfer to wire racks to cool completely.
Eat them and enjoy this tasty Australian treat!

It’s the first day of NOVEMBERand we have an exciting month of activities planned in the mornings and afternoons especially for our Lexis students!
Every Monday you can stretch out and relax doing Yoga with Stef in the garden from 11-12 and with Fee in Room 8 from 2:15 to 3:15.
On Tuesdays we have Coffee Lounge, which gives our students the opportunity to practice their English and get to know each other while enjoying great coffee and yummy TimTams!
On Wednesdays we will start the month with a 1-hour Surf Lesson for our students who want to learn to surf in Byron Bay. The following week we have Boomerang Painting for the morning activity and Beer Tasting in the afternoon. Then there is Skateboarding with Flavio, Flamenco Dance with Alba and we finish off the month with a Poker Tournament!
Every second Thursday we have Job Club for those students looking for work in Byron Bay and wanting extra help with writing their resume, preparing for interviews and applying for jobs. This week we will run a Table Tennis Tournament to see who this month’s Lexis Champion is, and on the other Thursday in November we will have a round of Pizza and Pictionary in the morning and Mindfulness Meditation with Chloe in the afternoon.
On Fridays we start the month with baking Anzac biscuits at Aussie Cooking, followed by Volleyball in the garden or at the beach the next Friday. Then we have Slacklining in the morning and our next match against the SAE College at the Soccer Challenge on the 18th. To finish off the month and the Cambridge course, we have the End of Cambridge BBQ.

To celebrate Week 1 of the coursebook this week, we had a BBQ in the garden for our Lexis students. It was another beautiful, warm day in Byron Bay and a perfect afternoon to relax and enjoy an Aussie sausage sizzle!

At Coffee Lounge we played a game of Aussie Heads while enjoying coffee and TimTams!
The game involves sticking a card on your forehead (without looking at what is on it) and then asking yes/no questions to discover what you are!
From crocodiles and sandcastles to the Aussie flag and Sydney Harbour Bridge, the students gradually asked the right questions to find out what card they had stuck to their head, with many laughs in the process!

Today our students learnt about Aboriginal Australian art and boomerangs.
They got creative and, using some examples of authentic Aboriginal art, painted their own boomerangs in beautiful designs.
It was a great chance to chat with each other and get to know the other students, while enjoying a creative and meditative hour of painting!

For students wanting to explore Byron Bay and beyond, there will be a BWT Travel Bonanza with a free sushi lunch and great deals on travel and activities! Then we will finish off the month with some yummy Aussie Cooking.

Today we baked some Australian cookies, ANZAC Biscuits. These tasty treats are very quick and easy to make, so we baked two batches of cookies!
Aya and Sua decided to get creative with their biscuits by sprinkling the mixture with ground coffee and then cooking them in the sandwich press… They insist that the biscuits were just as delicious with this method of cooking!
The rest of the cookies were baked in the oven and came out perfectly. Needless to say, there are no cookies left!
Here is the recipe to try at home:
ANZAC BISCUITS
Ingredients
2 cups rolled oats
1 cup plain flour
2/3 cup caster sugar
3/4 cup desiccated coconut
1/3 cup golden syrup
125g butter
1 teaspoon bicarb soda
2 tablespoons hot water
Method
Preheat oven to 160°C.

We enjoyed coffee and TimTams while chatting and playing a game of Aussie Heads in the garden.
There were a lot of laughs as we asked lots of questions to find out what name we had on our heads!
