New Starters! 18 June

Welcome to our six new students joining us at Lexis Byron Bay today!

Koki is from Tokyo, Japan. He has just spent the past 2 years studying English in New Zealand and will now spend a year in Australia studying and working. He is really looking forward to his time here, meeting new people and experiencing new things!

Christoph is from Germany and lives near Frankfurt. He has played football for many years and also tennis for 4 years. He wants to study English as he feels it is an important language, and chose Australia for his studies as it has always been his dream to come here. After his 4 weeks at Lexis he will travel to Sydney and then New Zealand.

Theo is from Reunion Island, a region of France in the Indian Ocean (it’s closer to Australia than France!). His hobbies include skating and surfing, which he’ll be able to do plenty of in Byron Bay! He is studying Science at high school as he hopes to become a doctor one day. He is really happy to be here to improve his English and enjoy Byron’s famous waves!

Sacha is also from Reunion Island, travelling with Theo. He enjoys sports, surfing and skating. He is currently studying at High School, with English being one of his main subjects. He visited Byron Bay last year with his family and after enjoying it so much decided to come back this year to further his English and improve his surfing!

Ayumi is from Japan. She works in a vegan cafe there and is very interested in biodynamic and organic farming. Her other interests include yoga and foreign culture and languages. She is really looking forward to her time at Lexis Byron, meeting people from all different countries and learning about their cultures!

Patrick is from the German speaking part of Switzerland. He loves to go skiing in the winter and play squash in the summer, but his favourite thing is Carnival. In the future he would like to have his own carpentry business.  He will study with Lexis for 4 weeks and is hoping he’ll be able to make big improvements in his English and make lots of friends in this time; we’re sure you will!

Vegan Cooking – Lemon Slices! 14 June

Last week we made Lemon Slices for our Vegan Cooking activity!

We substituted butter with coconut oil and milk with almond milk to make them vegan friendly!

Everyone worked great together as a team, with everyone having a job to do.

The end results didn’t look quite like the recipe picture, but it they tasted delicious, which is the most important thing!

 

Follow the instructions below to make them at home:

Ingredients

For the base:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup coconut oil, softened a bit but not melted
  • 1/2 cup unflavored soy or almond milk

For the lemon curd:

  • 2/3 cup lemon juice (about 4 to 6 lemons)
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 2 tablespoons lemon zest
  • 1/2 teaspoon lemon extract
  • 1/4 teaspoon salt
  • Pinch turmeric (optional, for color)
  • 3/4 cup coconut cream

For topping:

  • Powdered sugar

Instructions

  1. Preheat the oven to 350°F and lightly oil a 9 x 9 inch square baking pan.
  2. Make the base by stirring together the flour, sugar and salt together in a medium mixing bowl. Add the coconut oil and cut it in using a pastry cutter or a fork, until the mixture resembles fine crumbs. Stir in the milk to form a dough, continuing to stir or mix with your hands until it’s nice and uniform.
  3. Press the dough evenly into the bottom of the prepared baking pan. Place it into the oven and bake just until the edges begin to brown, about 20 minutes.
  4. While the base bakes, make the curd. Place the the lemon juice, sugar, cornstarch, lemon zest, lemon extract, salt, and turmeric (if using) into a small saucepan. Whisk until uniformly combined. Place the saucepan over medium heat and whisk in the coconut cream. Continue to whisk the mixture constantly as it heats up. The mixture should thicken up quickly once it gets to a simmer. Cook about 1 minute more, continuing to whisk vigorously, then remove the saucepan from the heat.
  5. Once the base comes out of the oven, pour the lemon mixture over it, and smooth it out into an even layer. Return the pan to the oven and bake about 15 minutes longer. You should see a few bubbles forming in the curd by this time.
  6. Remove the pan from the oven and transfer it to a cooling rack to cool. The curd will continue to set as it cools. Once it has cooled completely and the curd has set, slice into 16 bars.
  7. Sprinkle with powdered sugar and serve.

June Table Tennis Tournament!

On Wednesday we had our monthly Table Tennis Tournament!

We started with 10 competitors and names were picked at random to decide who would compete against eachother.

The results from the first round were:

As we had an odd number going through to the semi finals one lucky player was picked at random to go straight through to the finals: FELIPE!

The three finalists then each played against eachother to see who would get June’s title!

Graduation! 15 June

Congratulations and farewell to our five students graduating from Lexis Byron Bay today!

Rocio, from Spain, graduates from Michelle’s Pre-Intermediate class. Michelle says she has a fantastic attitude and always participated well in class activities and discussions. When she started with us at Lexis she had very little English, so should be extremely proud of all she has achieved! Best wishes for the future Rocio!

Carlos, from Spain, graduates from Michelle’s Pre-Intermediate class. He brought great enthusiasm and attitude to school every day and it was always wonderful to see his smiling face. Michelle says he worked extremely well with everyone in his class and brought much laughter to the lessons. We are glad this isn’t goodbye; we look forward to seeing you after your break Carlos!

Yui, from Japan, graduates from Mel and Julia’s Intermediate class. Her English has improved a great deal during her 8 weeks at Lexis, with her quickly progressing from Pre-Intermediate to Intermediate. We hope you enjoyed your time in Byron and wish you well for the future Yui!

Marta, from Spain, graduates from Mel and Julia’s Intermediate class. Mel said it has been brilliant to watch her progress from Elementary and her confidence in speaking continue to grow. She also added that Marta always asks thoughtful questions to improve her knowledge of English. She got on well with all her classmates and will be missed next week! Enjoy your break Marta and we look forward to seeing you on your return!

Isabel, from Switzerland, graduates from Claudia’s Upper Intermediate class. Claudia loved having her in class, describing her as a conscientious, hard working and dedicated student. All of her participation and contributions in class were greatly appreciated. We wish you all the best for the future Isabel!

Casino Royale! 8 June

Last Friday we had a Casino afternoon here at Lexis Byron Bay!

Lexis Noosa kindly lent us their poker mat & chips and here at Lexis Byron we got a new roulette wheel for the occasion!

At one end of the table we had Jeff leading the Poker Tournament,

and at the other I was in charge of Roulette, with Dana doing an excellent job as the dealer.

All of our students had been given vouchers to exchange for $100 worth of chips, with the person finishing with the most winning a 6 pack of beer!

Our poker players attempted to keep their poker faces by wearing sunglasses, but couldn’t keep serious for long enough!

Crisps and nuts were provided to keep the students energy up, and they also had brigadeiro (traditional Brazilian desert) which they had made during their Options class!

The poker tournament was going on for quite some time, so as the only two players left with chips Luis and Lucas decided to share the winners prize:
