Friday afternoon we had my personal favourite activity for the month..
The Crepe Making Competition!
We followed the following simple recipe to make the crepe mixture:~~~~INGREDIENTS
4 cups plain flour
A few pinches of salt
4 eggs
4 cups of milk
METHOD
Combine all ingredients in a bowl. Blend until smooth. Add a little water and mix to desired consistency. Cover and set aside to rest for 5 minutes.
Heat a medium non-stick frying pan over medium heat. Spray with cooking oil. Using 1/4 cup mixture per pancake, pour batter over pan, tilting from side to side so batter covers base in a thin film. Cook pancake for about 1 minute or until underside is golden, then use a spatula to flip. Cook other side for just under a minute until golden. Repeat with remaining mixture, spraying pan with cooking oil between pancakes.
We had a wide range of delicious ingredients to decorate our masterpieces with including; nutella, whipped cream, nuts, bananas, strawberries, blue berries, golden syrup, coconut, hundreds and thousands, chocolate fingers and icing sugar
There was plenty of mixture to go around, so we all made ourselves multiple crepes to enjoy! The competition was judged on creativity and appearance.
Congratulations to Filipa for her beautiful love heart design! She is our crepe making champion for the month! I was especially impressed with how your crepe was a perfect circel 😉 Well done!

A warm welcome to our 5 new students joining us at Lexis Byron Bay this week.
Martin is from Madrid, Spain. He lives near the center of the city in a loft style apartment. His passion is boxing. He is lucky where he lives, as it is close to his boxing gym. Martin has been studying electronic engineering and business management for the last six and a half years and has recently finished. He is here in Australia to improve his English and to have a good time 🙂
Alice is from the Italian speaking part of Switzerland. She enjoys playing sports. When she was young she practiced gymnastics, but as she got older, she needed something more dynamic. This lead her to become a triathlete. She hopes to continue to train whilst here in Australia. In the future, Alice, thinks that she may like to study hotel management or study at a school of sports. She has not made up her mind yet, so for now she just wants to enjoy her time in Australia.
Jules is from France. He loves swimming and since he has arrived in Australia he has been swimming every morning in the sea. He has recently finished his masters degree in law and now he is here to improve his English for his future career. He choose to come to Australia for the beautiful weather and beaches.
Marc is from Spain. His hobbies include, climbing mountains, football, horse riding and surfing. In Spain he works as a computer scientist. He has been working hard ever since graduating and is now looking forward to traveling and gaining personal experiences.
Marine is from Belgium. She likes to travel and discover the world. In the future she would like to study event management, but first she hopes to improve her English because she believes it is very important for her future goals. It has always been a dream to come to Australia and she hopes to make the most of her time here and meet many wonderful people.

On Wednesday we had Byron’s best Hip Hop dance teacher come and take us for another fun filled lesson!
Mina always starts her hip hop lesson with a full on warm-up, to get our bodies ready. We then got straight into learning a routine.
Mina gave us the option of learning a fast paced routine, or something a bit slower.. nobody was quick enough to speak up, so she went with a fast paced routine to challenge us.
There was some tricky floor work involved, but everyone nailed it 🙂

What an epic weekend we had at the campout …. everyone is still buzzing …. one student from the weekend has already paid today to come on the next campout !!! Super keen ….

Learning how to fish was a really awesome experience …. as you can see Aline hasn’t quite grasped the idea of fishing ……. LOL
Romy, now safe from being caught as a fish, is finally now relaxing …. showing Aline the correct way to fish….’in the water’
The campers stopped for lunch and had an encounter with a Diamond Python….. these snakes are non-venomous. They become most active in November, looking for mates and laying eggs. … As well as being non-poisonous, the Diamond Python is one of the most placid snakes in Australia, rarely hissing or threatening people.

Looking for a super star animal lover to help assist me on morning group dog walks down at Byron Bays beautiful local dog beaches!
The position is casual only for approx for 1 hour, a couple of days each week.

The successful applicant would be working at various childcare centres, coaching fun soccer games and activities to 2-5 year olds.

Equipment and uniform are provided. Training is also provided. Pay rate is between $24 – $28 per hour, depending on experience and qualifications.

Lukas is from the German speaking part of Switzerland. His hobbies include surfing, going to the gym and jogging. He loves the sun, beach and ocean 🙂 and this is why he decided to come to Australia to study. He hopes to surf everyday and improve his English by the time he returns home.
Nicola is from the German speaking part of Switzerland. He plays football and inside hockey. In his free time he enjoys catching up with friends, going to concerts and skating. When Nicola has finished his studies he is going to travel for 5 months through Australia and Thailand. He hopes to improve his English for his future career and also future travels.
Carmen is from the German speaking part of Switzerland. She comes from Brunnen, a beautiful city next to a lake and mountains. She likes to practice pole fit, catch up with friends and travel. Next year she plans to study business. She hopes to refresh her English while she is here at Lexis. After her studies is looking forward to travelling through Australia.
Leonie is from the German speaking part of Switzerland. She enjoys playing sports and being outdoors with friends. It is a dream for her to study in Australia because she loves the beach and the life style here. After her time at Lexis, she will return to Switzerland to continue studying to become a nurse, she then hopes to be able to travel and see more of the world.
Camila is from Chile. Her hobbies include walking, dance and travel. She has come to Byron Bay with her husband. She has had many friends come here to study and they have all highly recommended Byron Bay as a great place to live! In the future Camila hopes to improves her English and travel to many different countries with her husband.
Camille is from France. She enjoys travelling, sports and has a passion for all things associated with spirituality, massage and alternative medicine. She decided to study in Australia as there are many open minded people here, and she loves the sun, beach and ocean! Her goal while she is here is to improve her English in order to find a good job when she returns to France.
Asuka is from Japan. She loves dogs very much, she has 5 at home. While she is here in Australia she hopes to learn to surf. She enjoys organic food and loves the ocean. During her time at Lexis Byron Bay she hopes to improve her English skills and meet many new friends.
Marta is from Spain. She has studied fine arts at university and is now working to become a tattoo artist. She has come to Australia to improve her English for her career and future travel plans. She believes improving her English will open her up to many more opportunities. In her free time she likes to surf, run, ride horses and play sports.

Yesterday afternoon’s activity was Boomerang Painting.
It was a stunning afternoon so we decided to sit outside and enjoy the sunshine!
In Aboriginal culture it is common to see the style of painting where a lot of tiny dots are painted to create a specific shape. These shapes or symbols often represent things relevant to aboriginal culture.
Fabbi had the brilliant idea to bring along some cotton-tips. We used these to make the perfect tiny dots. I was so impressed!! They look just like the ones you can buy in a store. I hope you keep them as a nice memory from your time here in Australia and at Lexis Bryon Bay.

Ive seen some sore heads today walking around the recreation room at lunch time…. ‘good effort’ well done for turning up to class…..
Wednesday afternoon we had our scheduled Soccer match against Byron Bay English Language School (BBELS). On this particular afternoon it was also Chilean Independence Day. To celebrate, the students decided to cook a BBQ and enjoy some traditional Chilean music at the student accommodation.. It was a great celebration, but sadly, this meant that not many students were up for playing soccer..
Lucky for us, BBELS had a great turn out and those students who were keen to play could still enjoy a game. We started by choosing our teams, mixing the Lexis students with the BBELS. It was a fantastic game to watch, as there were many skilled players.
We played four 15 minute quarters. Naoki scored the last goal to make the final score 4 all.. Of course we couldn’t finish on a tie so we had one more 10 minute tie breaker round which was intense to watch.
On the walk home we meet this cute little guy who just topped off the lovely afternoon!
Thanks to our awesome students who made it down to play. We will have another game next month against BBELS, and possibly a beach volleyball game as well. Keep an eye on the activity calendar for more information 🙂

Friday afternoon’s activity was the art of Sushi Making.
There was some discussion in the beginning about the best method to cook the rice. We decided to use the rice cookers and hope for the best. They have proven to be unreliable in the past, but lucky for us, this time, they worked perfectly!! After the sushi rice was cooked, we added rice vinegar, caster sugar and salt to make the perfect sticky consistency for sushi rolls.
While the rice was cooking, we prepared the vegetables, salmon and tuna. We sliced carrots, capsicum, cucumber and avocado into long strips. We also added mayonnaise to the tuna for flavour.
Then it was time to roll..
We used cling film on our bamboo mats to prevent the yaki nori (seaweed) from sticking.
We placed some rice on the bottom 1/4 of the yaki nori and then added our choice of fillings on top. We then simply rolled the mats to create our masterpieces!
We had pickled ginger, soy sauce, wasabi and mayonnaise to compliment our sushi.
Everyone enjoyed their fresh sushi. Easy to make + delicious! Whats not to love? <3

Anaelle would like to improve her English because she believes it is very helpful for her future career. It has always been her dream to come to Australia and while she is here she hopes to find a job, surf a lot and have fun!
Elodie, is from France. Her hobbies include drawing mandalas, reading books and spending time with her adorable niece. <3 In France, she studied as an educator for kindergarten children. She is passionate about young children and their development, and is curious to learn about the differences in learning techniques here in Australia. Elodie would like to study English here in Byron, so she can go to University in Australia and continue her studies to achieve a Bachelor of Early Childhood Education.
Malu, is from Brazil. In her free time she likes to do yoga, dance, take photos and go out with friends. In Brazil she studied business and now hopes to improve her English for her future career. She has chosen to come to Australia for its beautiful weather and relaxed way life 🙂
Nicolas, is from the German speaking part of Switzerland. He is very interested in sports, including football and American football. He has been working at an insurance company but now hopes to try something new and study film and photography. Nicolas hopes to improve his English so he can get more confident speaking and understanding the English language.
Loris, is from the German speaking part of Switzerland. His plan to study in Australia was very spontaneous. He originally planned to visit New Zealand, but then decided to combine it with a stay in Byron Bay to improve his English and learn to surf. When he returns to Switzerland, he plans to study social work.
Biel, is from Spain. His interests include scuba diving, surfing and playing football. He came to Australia because it is a very different country and the people are very friendly. His plan for the future is to work for a scuba diving company.
Carlos, is from Spain. His hobbies include surfing, playing basketball, listening to music and meeting friends. He thought Australia was the perfect place for him because he can surf, make new friends and learn a lot about another culture. While he is here he hopes to travel to other cities like Melbourne and Gold Coast.
Lena, is from the French speaking part of Switzerland. She has just finished her bachelor in architecture and is taking a break with her studies. She will go on to do her masters in February. She came to Australia to improve her English, and have an adventure travelling around a new country.
Guilherme, is from Brazil. He has just transferred to Lexis Byron Bay after 2 weeks studying in Perth. We look forward to getting to know you during your time here.

Yo Yo Yo so last week we took the students to Aquarius for the student party night…. it started off a bit quiet but we had DJ Johnny there to make sure we had awesome tunes playing… Johnny was the resident DJ and dancer for the evening …..
There was some serious table tennis matches happening as well…. these guys know how to play for sure
It was an awesome turn out …. Free food, cheaps drinks and some really hard trivia…. which we bailed on as the team were frothing to go to Cheeky Monkeys …. where dancing on the tables happened 🙂

Yesterday was our monthly Table Tennis Tournament in the student lounge. Everyone was out to win the Stone & Wood Beers.. but there could be only one winner!
We had 4 knock out rounds. Each game was played first to 21.
There was some strong competition, but in the end Nico was our champion, only just beating Fabrice!
Thank you Nico for being a great competitor and a good sport for sharing the beers 🙂
