Making ANZAC Biscuits! 24th April

On Wednesday we got busy in the student kitchen making ANZAC biscuits. The Anzac biscuit is a sweet biscuit, popular in Australia and New Zealand, made using rolled oats, flour, sugar, butter, golden syrup, baking soda and desiccated coconut.

Anzac biscuits have long been associated with the Australian and New Zealand Army Corps established in World War I. The biscuits were sent by wives and women’s groups to soldiers abroad because the ingredients do not spoil easily and the biscuits kept well during transportation.

3

Alessia, Mano and Juliane having fun getting ready to bake! Also very excited about another public holiday for ANZAC day on Thursday!

INGREDIENTS

2  cups rolled oats
1  cup plain flour
2/3 cup sugar

Easter Baking! 17th April

The Easter celebrations continue with more tasty treats <3

In our Easter Baking activity this week we made Chocolate Brownie with an Easter Twist and Easter Nests! We were also lucky enough to be gifted some lamingtons from our friend Alfred – the Bike Man.

8

To make the Easter Nests, we first melted chocolate in a bowl and added butter and golden syrup. We then combined the cornflakes to the bowl and mixed until the chocolate covered the cornflakes. It was now time to create the nests. Using a spoon we filled a paper cupcake case with the mixture and added decorations before putting in the fridge to set.

For the Easter Brownie we followed this recipe:

Brownie Recipe:

Ingredients

  • 125 g butter
  • 1 1/2 cups caster sugar
  • 1/2 cup cocoa powder
  • 2 eggs
  • 1 tsp vanilla essence
  • 1/4 tsp salt
  • 1 cup plain flour

Recipe

  • Melt the butter in a medium saucepan.
  • Stir in sugar, cocoa, vanilla and salt.
  • Remove from heat and allow to cool slightly.
  • Quickly whisk in eggs.
  • Fold through sifted flour.
  • Spoon the mixture into a greased and lined 18 x 28cm slab tin.
  • Bake at 170C for 25-30 minutes.
  • The mixture will seem soft but will harden on cooling.
  • Allow to cool in tin before removing.

For the Easter twist, we took the brownie out of the oven after 20/25 minutes and pushed chocolate eggs into it and baked it for a further 5 minutes so they could melt into the brownie! Delicious!

Our creations turned out amazing!! Well done everyone.

Happy Easter and enjoy the long weekend!!

Beer Tasting! 12th April

IMG_3371

Today we had the perfect Friday afternoon activity… BEER TASTING!

We had 6 different beers to taste…

  • Amanda Mandarin IPA
  • Fixation IPA
  • Tooheys Old Dark Ale
  • Stone & Wood Green Coast Lager
  • Koscuiszko Pale Ale
  • Stone & Wood Paccific Ale

The students had to take note of what flavours they could taste and guess where each beer was brewed. We also tried to guess what the alcohol percentage was and the price per bottle.

IMG_3367

All of the beer we sampled was from Australia! Everyone guessed mostly correct, except the Koscuiszko Pale Ale, as the label has a snowy mountain and we agreed that the name does not sound very Australian!

Byron Bay’s Stone & Wood beer was a crowd favourite – especially the Pacific Ale!

IMG_3363

Cheers everyone, thanks for a fun Friday afternoon 🙂

Afternoon Jewellery Making!April 3rd

Our free activity for today was Jewellery Making!!

We gathered in the student lounge to get creative with a collection of beads, shells, stones and old miscellaneous pieces of jewellery. We had a lot to work with, the fun part was deciding what to create. Here we are in action..

Everyone got stuck in and came up with some beautiful, unique designs.

You are all so clever and creative! I hope you enjoy your jewellery and have something nice you can keep and remember your time here at Lexis 🙂
