On Thursday morning we all met in the kitchen at 11.30am for this months cooking activity – chocolate brownies!
Our ingredients included: flour, caster sugar, cocoa powder, coconut oil, coconut milk, organic dark chocolate, raspberries and walnuts. We adapted our recipe so that it is also suitable for vegans 🙂
The first thing we did was preheat the oven and prepare the baking tray, followed by combining the ingredients together in a large mixing bowl.
Next, we melted the chocolate in a bowl, over some hot water so it was ready to add to the mix of flour, sugar, coconut oil, milk, raspberries and nuts.
How tasty do these raspberries look in the chocolate? 😀
All ready for the oven! (Our tray was too big so we had a genius idea to make it smaller – using some tin foil to build a little wall 😀 )
After waiting patiently for 25 minutes, our brownies were ready…
The result? DELICIOUS! 😀
For full instructions on how to make these delicious brownies, see Claire’s blog from the afternoon brownie makers here.

For our Cooking with Chocolate activity we made delicious Vegan Brownies!
We all worked as a team, following the below recipe:
5 tablespoons coconut oil
200g dark chocolate (dairy free if you want to make it vegan)
170g of self-raising flour
3 heaped teaspoons of cocoa powder
180g golden caster sugar
230ml coconut milk
200g raspberries
200g walnuts
Method
Preheat the oven to 180ºC/350ºF/gas 4. Grease a square baking tin (roughly 20cm) with a little oil, then line with greaseproof paper.
Place a heatproof bowl over a pan of simmering water, making sure the base doesn’t touch the water. Break 150g of chocolate into the bowl and allow it to melt, then set aside to cool slightly.
Meanwhile, sieve the flour and cocoa powder into a large bowl, then stir in the sugar. Stir in the oil, milk and melted chocolate until combined.
Chop and stir in the raspberries, remaining chocolate and most of the nuts reserving a few for the top. Pour the mixture into the prepared tin, spreading it out evenly. Sprinkle over the remaining walnuts, then place into the hot oven for 20 to 25 minutes, or until cooked on the outside, but still gooey in the middle.
Leave to cool for around 5 minutes, turn out onto a wire cooling rack.
We adapted it slightly by guessing how much of each ingredient to put in, rather than measuring it! We may have been slightly overgenerous with the sugar…
While we patiently waited the 25 minutes for them to bake in the oven, Maria entertained us by taking over the Happy Travels desk. I think selling travel could definitely be a future career for her!
After the timer went off we eagerly took the brownies out the oven and sat down to tuck in…
Much to our disappointment they were still very gooey in the middle. A few of us (myself included!) were so desperate for our chocolate fix that we were happy to eat them as they were, but the majority voted that we be patient and put them back in the oven for a further 15 minutes!
Back to passing the time we went…
Until they were ready 🙂 🙂 and definitely worth the wait!!

Here at Lexis, we have students from all over the world. Some come to Byron to study for a week, some for a few weeks and some, for many months! I caught up with some of our students who are lucky enough to be on a working holiday visa, to ask them a few things about their working life here in Byron…
Judith joined us from Spain in April of last year and will be with us until next November! We are delighted to also have her on board with us here at Lexis. Read on to find out how 🙂
1. WHERE DO YOU WORK?
I work in Lexis English School as a cleaner and in Orgasmic Falafel restaurant as a waitress in the street offering falafels to people, as well as cleaning, preparing and helping to put away chairs, tables etc.
2. WHAT DO YOU LIKE ABOUT YOUR JOB AND WORKING IN BYRON BAY?
The flexible schedule in most Byron jobs and the work atmosphere. Byron is a relaxed place, of course there are some busy days with stress, but there is no comparison with most of the jobs in Spain and probably in Sydney or other big Australian cities. I also like that in Byron, there are a lot of jobs where you finish at 5pm and you have a whole evening free or if you work in a restaurant, you can enjoy the whole day and work in the afternoon/evening. In Spain, most of the jobs are ‘split-shift’ so it feels like you just work all day, then go home to sleep.
3. WHAT IS YOUR DREAM JOB – AND WHERE?
My dream job is to work in a big company, analysing employees – analysing their worries, motivation, personal life and then try to create a better working environment for them, for example – maybe one employee will be more efficient and happy at work if the boss lets them finish 30 minutes earlier so that they can pick up their child from school. I would like a job that allows me to travel – a company who has offices all over the world, so that travelling is part of my job. I would love to have a flexible schedule – I could work really hard for a few weeks and then travel for one or two weeks at the end.
4. ANYTHING ELSE TO SAY?
Today is a perfect day to be proud of yourself! Have a lovely day 🙂

On Thursday last, we gathered in the student lounge to chat all things photography!
We met at 11am and had a range of phones and cameras between us. We had a brief introductory chat to establish what we all knew about photography.
We all learned about composition (the placement of the subject(s) in the photo) and why good composition is so important. We also learned about composition guidelines such as the Rule of Thirds and how to apply that to a photo.
Finally, we also looked at perspective which was a really fun one to capture together 🙂
Having fun with our perspective shots! (See below how they took this)
Some more process shots of students capturing some exaggerated perspective 😀

Check out these awesome portraits of our students.
(great composition too! 😉 )

What an amazing weekend – the lucky Lexis Legends headed down to Yamba with our an amazing crew who took them into the middle of the national park and camped with the ‘roos!
There were stunning views of the coastline!

Paddle-boarding went down a treat with plenty of laughs on the lake!
All in all it was another cracking camping trip, kicking back with some drinks, watching the sunset and sunrise, and chilling with the Kangaroos.
As always we’ll be doing another Camping with Kangaroos soon so come on downstairs and speak to Sam to get on the waiting list for the next one! Can’t wait for another awesome weekend!

On Wednesday we played a Soccer Match against BBELS School. The students always really enjoy this activity; it gives them a chance to show off/practice their skills, interact with students from another school, and represent Team LEXIS!
Every time we have a match I am so impressed by the level many of our students play at, and also those who haven’t played much before but get involved and give it their best!
We had a brilliant turn out, with over 20 of our students wanting to play and represent their school. We started with 11 on each side and Jeff did a great job of swapping players on and off to make sure everyone got a turn on the pitch.
We won 4-3, with Jeff and Gustavo each scoring 2 goals!
Gustavo was very humble celebrating his goals, as you can see below… 🙂
Although both teams played competitively, and of course wanted to win, there was a good friendly atmosphere and everyone shook hands after the match and got together for a group photo!

English and a bit of French and an even smaller bit of German and Italian.
3. WHICH COUNTRIES HAVE YOU VISITED?
France, Netherlands, Switzerland, Germany, Poland, Hungary, Austria, Slovenia, Italy, Australia
4. WHICH COUNTRIES HAVE YOU LIVED IN?
The UK and Australia
5. WHERE IS YOUR FAVOURITE PLACE IN THE WORLD?
The coast of Bamburgh in the North east of the UK – its rugged, desolate, and has great pubs.
7. TELL US 5 THINGS WE SHOULDN’T MISS OUT ON WHILE IN AUSTRALIA
– Sydney Harbour Bridge Pylon Tower – cheaper than a climb, much more fun!
– Port Macquarie Koala Hospital – the only hospital for Koalas that is run completely by volunteers
– Fraser Island – 90-mile beach in particular
– Airlie Beach – go for a tour of the Whitsundays, it is stunning
– Cronuts – a kind of weird blend of doughnuts and croissants
8. WHAT IS YOUR FAVOURITE THING TO DO IN BYRON?
The weekend markets and street food – it’s crazy how good the selection and quality is. Also a pint at the Rails.
9. WHERE WOULD WE FIND YOU AT 11PM ON A SATURDAY?
At a house party, probably in the kitchen with a bottle of rum, talking to strangers about how terrible Brexit is.
10. AND 8AM ON A SUNDAY?
Either hanging horribly from the night before, or trying to cook up some pancakes and eggs!
11. TELL US SOMETHING YOU TICKED OFF YOUR BUCKET LIST LAST YEAR
Finish my PhD and quit academia, work for a charity, and then move to Oz!
12. AND SOMETHING YOU WANT TO TICK OFF THIS YEAR
See the sunrise from the Lighthouse, I always have the best intentions but other plans always seem to get in the way!
