Yesterday afternoon we headed to the kitchen for some Mexican Cooking!! We had two recipes (one meat and one vegetarian), so everybody had a job to do, whether it was chopping the vegetables or cooking the mince.
For our meat dish we had beef tacos and for our vegetarians we had enchiladas filled with beans, veg and salsa sauce (Vanessa also adapted this to a vegan option by not covering it in cheese!).
What everyone was most excited for though was the cheesy nachos! Nicol had the task of covering the corn chips in cheese then popping them in microwave, and had everyone jumping on her as soon as they were ready!
The nachos kept us going whilst the enchiladas baked in the oven and we filled the tacos with our beef and veg mix.
There was plenty of food to fill our bellies and even some left over mince we’re going to have for lunch today!
