Mayra is from Chile. She has been studying at our Lexis school in Brisbane but wanted to experience a different part of Australia, and Byron’s laid back vibe really appealed to her! She is very happy to be here with us for the next 12 weeks and joins Michelle’s Pre-Intermediate class today.

Sara is from Italy. She loves to do sports, in particular running and going to the gym. She is studying law as one day she hopes to be a lawyer or a judge. She is here to improve her English as it will be important for her future job. She chose Australia for her studies as it has always been her dream to come here!

Jasmin is from the German speaking part of Switzerland. She plays soccer for the local woman’s team and enjoys all sports. She also loves animals and children. She has just finished high school and is now taking a gap year before starting university in September. Last summer she worked in tourism and was able to use her English skills and would now like to further improve these.

Christmas Salsa Party! 21 December

To celebrate the last day of school before the Christmas break we had a Salsa Party here at Lexis Byron!

Before the dancing began we had some nibbles and sushi, accompanied with sangria!! Perhaps a bit of an odd combination, but no-one was complaining!!

We had Christmas songs playing in the background and everyone was in great spirits and excited for Christmas!!

Danielle from Salsa Sassy then arrived to show us some moves!

A lot of our students joined in the fun, but there were others who preferred just to watch…

Hoping you all had a wonderful Christmas break and looking forward to welcoming our returning students back on Monday ❤

Christmas Cooking! 20 December PM

Last week to help get us in the festive spirit we had a Christmas themed cooking activity!

IMG_9873

To start with we followed the below simple recipe to make bliss balls:

  • 1 cup walnuts (100 grams)
  • 1 cup almond meal (80 grams)
  • 1/4 cup cacao or cocoa (20 grams)
  • 12 dates, seeds removed (180 grams)
  • 1 tablespoon honey (30 grams)
  • 1 teaspoon vanilla extract
  • pinch of salt
  1. Place the ingredients into your processor and blend at high speed until the mixture resembles a fine, sticky crumb. Firmly press and shape the mixture into balls. Place in the fridge to set.
  2. Eat and enjoy.

We then covered them in coconut flakes and icing sugar so they would resemble snowmen. They of course weren’t complete until they had their eyes (chocolate chips), nose (m&ms) and scarf (sour lace) though!

We also created some from marshmallows, even simpler than making the bliss balls!

What they may have lacked in appearance they certainly made up for in taste! The bliss balls were simply delicious!!

Christmas Decoration Making! 19 December – PM

Last Wednesday we set about making some beautiful decorations to adorn our Christmas tree in the Lexis Byron reception!

IMG_9767

Orla led the morning session and explains how you can make your own, here on her blog: https://lexisbyronbay.com/2018/12/19/christmas-decoration-making-morning-19-december/

The most important thing to remember, and which I kept repeating to the students, is ‘two down, one up’! It’s very easy and relaxing once you get into it!

Check out the wonderful creations made by our students…
