Body boarding! 29 November

Today’s activity was body boarding and what an amazing day we had for it! Everyone was so eager to get started that they were all ready and waiting at reception before 11am! We had a great turn out, over twenty students in total 🙂

All but two of the group braved the water, which happened to be full of seaweed today!

The water was the perfect temperature, especially with the heat of the morning sun 🙂

Sweet Exchange! November 21

Last week we had our fourth Sweet Exchange here at Lexis Byron Bay!

Everyone was encouraged to bake or buy something sweet to bring in on Wednesday. All these delicious treats were then set up in one of classrooms for each of the break times, and everyone had to donate a minimum of $1 to then help themselves to as much sugary goodness as they could manage!!

We had a brilliant variety brought in by students and staff, including cookies, cinnamon scrolls, fresh fruit, vegan brownies, brigadeiros, muffins and of course Tim Tams! Absolutely spoilt for choice!

This was our most successful one yet, with us raising $332 for our two chosen charities!

The two charities we will be donating to were picked by two of our teachers. They both feel very passionately about their chosen charities and each gave a presentation to give us more information about what good are money will do!

Teacher Adrienne chose Doctors Without Borders (Medicins Sans Frontieres), who are a non-government funded organisation who assist in conflict zones and areas affected by diseases, providing much needed medical treatment. You can read more about this amazing charity here (or ask Adrienne!): https://www.doctorswithoutborders.org/

Teacher Michelle chose Sugarshine Animal Sanctuary, who provide a peaceful, loving home to animals of all shapes, sizes and personalities! Read more about the wonderful work they do here: https://sugarshinefarm.com.au/

The difference of money in each jar was very small and a lot of the students didn’t want to have to pick one charity, so it was decided that we will split to money evenly, giving them each $166!!

Once again, great work from everyone on supporting these brilliant causes!

Morning Coffee Club – 27 November

It’s a beautiful day here again in Byron Bay and this morning we all gathered for our weekly Lexis Coffee Club! It’s always great to see some new faces and learn more about everyone. It is also a fabulous way to start off the morning – with a coffee in hand to wake us all up 🙂

IMG_8845

We all chatted together, each giving a little bit of information about ourselves and learning new names. Some of this morning’s students have just joined us since yesterday so are new to Byron. What an amazing time of year to come! 🙂

Everyone decided to play Uno and things got a little competitive – especially when Annick had to swap her hand of just a few cards in exchange for a much bigger one!

Coffee Club happens here at Lexis Byron every Tuesday at 11.30am (and 2pm for the morning students). It is a chilled atmosphere and a really fun and easy way to improve your English. Be sure to join us in the garden/student lounge every Tuesday! 🙂

Volleyball in the Lexis Garden – 23 November

On Friday last, the sun returned to Lexis, here in Byron Bay, just in time for our morning volleyball game! We started out as a small group of two, so the girls had some serious practice with all the running around for the ball. (It was a quiet morning due to many students studying for their upcoming test later that day.) Here they are in action…

img_8772.jpg

With all that running in the sunshine, the girls needed a quick break – just enough time for us to recruit two more students to join in the fun!

IMG_8793

And then there were 4… 🙂

Check out this team work!! 🙂

Be sure to join us every day for our activities! It’s a great way to meet new people, make new friends and most importantly – a fun way to improve your English speaking!

Check out the notice board at reception to sign up for our daily activities 🙂

Garden Picnic! 22 November

After the downpour our morning group experienced for their beach picnic (read about it here! https://lexisbyronbay.com/2018/11/22/morning-beach-picnic-22-november/) we were lucky to have the sun back out in time for our afternoon picnic!

Instead of going to the beach we decided to instead relax in the garden at school and enjoy our snacks there!

While the students enjoyed their time in the sunshine I took some natural completely unposed photos of them…

We had a wonderful afternoon enjoying our cheese, crisps and fresh fruit while playing a game of Uno!

Salsa & Sangria! 16 November

What a fantastic time we had at last Friday’s Salsa & Sangria activity!!

I’ve had almost as much fun watching the videos back…

We started off with some sangria to get everyone a bit more relaxed before the dancing began..

Danielle from Sassy Salsa first went through a simple routine to get everyone warmed up and ready to Salsa!

IMG_8525

Once everyone had mastered that we moved onto some traditional Salsa, then some partner work.

I was very impressed by how much everyone got into it and there was some really remarkable dancing going on!

As well as learning some new moves there was also plenty of laughter involved; a winner all round!!

Morning [Beach!] Picnic – 22 November

This morning, we left a sunny Lexis and headed for the beach. Minutes into our walk, the sky started to look VERY angry! We got as far as the Beach Hotel and out of nowhere, there was a loud bang of thunder and the heaviest downpour of rain I have ever seen! One minute it was sunny, the next – everyone was running to escape the water! We ran to take better shelter under a doorway with lots of other people and watched as the road turned into a river in front of us.

IMG_8745

Thankfully, it passed as quickly as it started and we set off towards the beach, in search of a suitable picnic area.

We settled by a BBQ area under shelter, right in front of the beach. We were all standing in water but still enjoyed all the delicious snacks that we brought and agreed it would be a picnic to remember! 🙂

Although the rain kept most people away, it was great to see some new faces for our morning group and we all learned lots about eachother such as our jobs/studies/hobbies and future travel plans. The rain may have tried very hard to stop us but we still had fun! We are definitely hoping for some sunshine for tomorrow’s activity though… 🙂

Baking Koala Cupcakes! 15 November

Yesterday’s free activity should have been baking koala cupcakes, but sadly the oven decided it was a good day to break!

Teacher Serena and her morning group were unaware of this until they’d made the cupcake mixture, put them in cases,  into the oven and waited patiently for them to bake!

It was only upon checking on them that they realised the oven was just blowing cold air, resulting in this being as far as their koala cupcakes got…

IMG_8404

Luckily I had time to come up with a back up in time for the afternoon, running to Woolworths to buy cakes for us to decorate! They were all out of cupcakes though, so we had to go with muffins instead!

We still got to do the fun part, decorating :), and while they maybe didn’t look that great the muffins and icing tasted amazing!!

IMG_8436

For anyone who has a working oven and would like to make them at home, here’s the recipe!

Koala Cupcakes Recipe

INGREDIENTS:

For the choc-almond cupcakes:1 cup self-raising flour

½ cup plain flour

1 cup raw sugar

4 Tbsp cocoa

½ tsp bicarb soda

Pinch of salt

65g butter, melted

1 cup almond milk

½ tsp vanilla essence

For the buttercream icing:200g butter, softened

2½ cups icing sugar

Grey food colouring:
5 drops blue + 5 drops red + 2 drops green

1 Tbsp almond milk, as needed

For the koala decoration:

Desiccated coconut

Pink marshmallows

Licorice

Choc chips

DIRECTIONS:

For the choc-almond cupcakes:

Preheat oven to 180 degrees Celcius and line cupcake tray with cupcake papers.

In a large bowl, combine all dry ingredients and mix well. Mix in melted butter. Combine milk and vanilla together, then add to dry ingredients and mix well.

Spoon the mixture evenly between prepared cups. Bake for 20-25 minutes or until a knife inserted in the middle of the cupcake comes out clean. Allow to cool on a wire rack for 15-20 minutes.

For the buttercream icing:

Using a fork, beat the butter until it is pale and fluffy.

Gradually beat in icing sugar, half a cup at a time.

Add food colouring and mix through well. Add milk, if needed to thin the mixture.

For the koala decoration:

Sprinkle the icing with coconut then assemble the features of a koala face – use pink marshmallows for the ears, licorice slices for the nose and choc chips for the eyes.

The best English Only essay ever!

Untitled

Here at Lexis Byron Bay, if a student breaks the English Only Policy, they get a chance to redeem themselves by writing an essay about the policy. Students are encouraged to reflect on why the policy is important (to be inclusive of everyone, to practise English in real-life situations, to make it easier to make friends with students from other cultures) and why they broke it.

However, current student Chiara Mazzola, from Italy, went one step further and wrote this wonderful fantasy story.

ONCE UPON A TIME a young lady named Kiki decided to leave her reign and travel to a far land known as “Australia”. There she wanted to make some new experiences and learn a strange language called English, which, according to an old legend, should be the key to discover the world.

After a long trip through the ocean, lady Kiki finally arrived in the reign of Byron Bay in the Lexis Castle, a magical place where dreams become true, and there she started her new life.

But one day the girl broke her the main rule of the castle: the feared English only policy introduced a long time ago to make sure every and each inhabitant forces his self to speak the new bizzare language in order to improve his abilities and build relationships indifferently from the nationality or cultural differences.

Kiki knew how important this rule was but when telling Sir Aeon about an old story, anger took over from her common sense.

Luckily, Kiki had the chance to redeem her mistake by writing a letter to the powerful magician who reigned over the castle and apologise for her behaviour.

The magician appreciated her commitment, had mercy on her and allowed Kiki to stay in the extraordinary kingdom to realise all other dreams.
