Hallowe’en BBQ! 31 October

Today, we had our Hallowe’en BBQ! Everyone gathered promptly out front at 12.15pm, all waiting to sample Claire’s culinary BBQ delights 🙂 Student Eric kindly assisted with the cooking, Lorene provided the party music and Orla and Judit help set up the table of delights!

It’s an amazing day here in Byron Bay – bright, sunny and warm – perfect for eating outside!

Everyone lined up, creating their sandwich with barbecued meat, fresh salad and a variety of sauces and dressing, all washed down with something sweet!

As it was very hot, a lot of students didn’t want to dress up in costume, however we did have some interesting hats and head pieces wandering around, even among the staff! We really loved how one of our students Arisa was dressed in her traditional Japanese Kimono and gave her the chocolate prize for effort! She loves wearing it and welcoming questions about Japanese culture so be sure to ask her about it! 🙂

IMG_8034

Maria is from Barcelona, Spain. She plays handball and likes riding her bike. She works as a hairdresser in Spain. Gustavo is from Brazil and here with his wife Giovana. His favourite hobby is playing soccer. He works within administration but would like to study business when he returns from Australia. He is looking forward to improving his English over the next 20 weeks with us!

Giovana is also from Brazil. She loves animals and takes care of cats and dogs. She wants to improve her English for new opportunities in her professional and personal life. She chose to study in Australia so she can discover a new country, culture and people! She picked Lexis Byron Bay because her cousin Izabel studied with us for nearly a year between 2016-2017 and said it would be the best place for her!

Celine is from the South of France. She loves sports, with her favourite being volleyball and judo, which she has a black belt in! She has a masters degree in Chemistry and works the CNRS (Central National of Research Scientific). She needs to improve her English as it is very important for her future career.

ChangSeok, nickname Eidan, is from Korea. His biggest hobby is basketball, both playing and watching.  He started his English studies in Sydney but there were too many Korean people, so he decided to move to Byron Bay instead to meet people from other countries and improve his English quicker! When he finished his studies he would like to work in Uluru.

Nicol is from Italy and currently living in the Italian part of Switzerland with her family. She likes to spend time with her friends, playing sports. She also loves to travel, which is one of the main reasons she is here! She has worked as a secretary for 3 years in the state’s office, but is taking a year break to travel and improve her English and German. She chose Byron Bay for her studies as it has always been her dream to be near the sea and surf!

Marta is from Spain. She has been living in Sydney for the last year and a half but chose to move to Byron Bay because of the nature and yoga! She worked as a beauty therapist in Sydney, giving massages and facials. In the future she would like to manage a business focusing on health, yoga, surf and massages.

Silvia is from Italy. She loves travelling, reading and all sports, but particularly surfing! She has a bachelor degree in Civil Engineering and an after-degree certificate in International Co-operation. It has always been her dream to come to Australia and she wants to be able to surf the beautiful Australian waves! When she has improved her English she would like to do an internship in Civil-Environmental Engineering.

Audrey is from the French speaking part of Switzerland. She works with children, as a social worker. She wants to improve her English so she can travel the East Coast of Australia and makes friends with people from all different countries! She is very excited to be here for the Australia summer, especially as it is snowing now in Switzerland!

Elsa is from the French speaking part of Switzerland. Her hobbies are drawing, painting, snowboarding and hanging out with friends. She studied applied arts and has worked as a decorator for the past 4 years. She wants to study English in Australia for many reasons; the main one being when she returns to Switzerland she would like to be a snowboard teacher and English is very important for this. She also loves travelling and knows English as important for this, as many people are able to communicate in English.

Yaiza is from Spain. She loves surfing, yoga, running and photography. She has been studying human resources at university and also working as a waitress. She wants a good level of English so she is able to speak fluently with people and get a good job. Her dream job is one which will allow her to work online so she has the flexibility to work and travel at the same time!

Alejandro is from Spain. He has been studying at Lexis Brisbane but decided he wanted to experience Byron Bay, so will now study with us for the next 3 months!

Morning Spanish Cooking – Paella! 25 October

Yesterday, we all got to sample some Spanish style cooking, in the form of the well-known Spanish favourite, ‘Paella’. We all gathered outside the student lounge where we had a look at our chosen recipe and discussed how we would all work together. Luckily, we had a few Spanish cooks among us! We started out with our list of ingredients… I then learned that we definitely do NOT use chorizo in an authentic Spanish Paella… so we went with something a little different – Spanish/Lexis Style Paella! 🙂

IMG_7777

Everyone had different jobs to do in preparation for our cooking such as preparing and chopping the vegetables, sourcing pots, pans, bowls and any cutlery needed. We then lined everything up at our cooking station, all ready to go! We got in to the spirit of it all with some fun Spanish music playing in the kitchen.

Everyone helped out but two of our Spanish students, Jose and Maria, took the main responsibility of overseeing the actual cooking. We had to cook everything well first before adding in the rice and stock at the end, leaving it for a very long time then to simmer slowly. It is always tempting to stir and scrape the bottom, but apparently this is the wrong thing to do with Paella! It naturally sticks to the bottom and we just lightly fold through the top, as it’s cooking. Amazing to have our Spanish students for these little tips along the way! Check out our dish as it progressed…

There was a lot of love and effort put into the making of our paella and the hardest bit was waiting for it to cook! We had regular tasting along the way and eventually when it was all cooked, we were ready with 16 empty bowls!

End result: Spanish/Lexis Paella = DELICIOUS! 🙂

Cheese & wine tasting – 19 October

Last week, both morning and evening students gathered together for an extra special evening activity of wine and cheese tasting! The sun was out, the wine was flowing, the cheese was disappearing fast and it was Friday – perfect!

We had a range of different cheeses to choose from – Brie, Goats cheese, Edam, Camembert, Gouda, Cheddar, Tasmanian Feta, Spring onion and chive cream cheese, apricot cream cheese… all accompanied by a range of different crackers. For wine, we had a range of reds – Merlot, Shiraz and Cabernet Sauvignon as well as a crisp Pinot Grigio and a soft Rose.

We all had a lot of fun and it was great for all the classes to mingle together, chat about all things cheesy and get ready for the weekend ahead!

Morning Table Tennis Tournament – 24 October

Yesterday morning we held a table tennis tournament in the student lounge! It was the first VERY sunny day in quite some time, so we had a small group for our morning session. We reckon the others were at the beach! They missed out on all our fun 🙂 As there were only three students in the tournament, things got quite competitive (especially with the promise of beer for the winner). Here are the guys with their game face on, ready to go…

The all had some warm-up games first, before things got really serious…

Of course, there can only be one winner – Gilles! In fact, he was undefeated in all of his games! Well done Gilles. Some cold beers coming your way 🙂

Last week in Survival English, we learned about common greetings and ‘social expressions’. So, on Friday, we went to Santos to practise ordering coffee and general conversational skills.

We had golden chai, matcha tea and earl grey tea.

There was a water dragon that became friends with Abraham, too!  He said they were, ‘Best friends forever.’  They looked very comfortable together!

Last week, we hit Main Beach here in Byron Bay for our surf lesson! We all left our Lexis Campus together at 10am. Everyone got fitted with a wet-suit and we set off to get our boards for the beach. The boards were very long – better for catching the waves!

As we approached the beach, it looked beautiful. The sun was out for us but the sky over the distant sea looked very dramatic indeed. Thankfully, we were spared the rain and thunder for our whole session 🙂 Here they are, all ready to go!

Our surf instructor spoke with all students for the first few minutes at the beach, going over all the important tips and things to do/not do when in the water… then it was time to hit the waves!

We started at one section of beach, before moving further down, to catch some better waves. Some of our students had been surfing a few times already but for some of the others, it was their first time to try. Everyone did amazingly well. I think they are all hooked!

Boomerang Painting! 18 October PM

We were all very happy to have blue skies back yesterday afternoon!

IMG_7486

We were even happier that this meant we could enjoy yesterdays Boomerang Painting activity outside in sunshine 🙂

We had some examples to follow and the explanations of symbols traditionally used by aboriginals to tell stories with their paintings.

Everyone got really creative and came up with their own unique ideas; I was very impressed with all the end results!

Morning Boomerang Painting! – 17 October

Yesterday morning we had a very fun, colourful and educational activity – Boomerang painting! We gathered in the student lounge (as it was raining outside) and looked at some examples of work by other artists. The style in which they were painted sees many, many tiny dots, perfectly painted into various shapes. These shapes can be ‘read’ as they each symbolise different things – for example, a tiny circle, within two more circles represents a campsite and a large dot, surrounded by smaller dots represents a star! See some examples here below…

We all really enjoyed the painting process! We all started with one base colour and as we waited for that to dry, came up with our designs. They were all so different! See some of the progress here…

In the end, we were all very happy with our finished pieces! We were so engrossed, I think we would all have happily stayed painting for another hour!

Morning Coffee Club – 16 October

Yesterday morning we gathered outside in the fresh air for our weekly morning Coffee Club. We chatted all things Byron as well as finding out more about each other and our native countries. We intended playing a game of Uno but instead, got caught up with our chat! IMG_7445

We learned loads of new and exciting information – from our best-known foods (and how to make them the correct way!), to how many people inhabit our homelands. Google was our friend for finding out this particular bit of information… 🙂

IMG_7448

I was also very pleasantly surprised to meet our Swiss student Shannon, whose name I immediately recognized – named after our longest river in Ireland – The Shannon! Looking forward to catching up with these guys (and some others who are out of shot) next week for some more interesting chats, facts, games and of course, Tim Tams! 🙂

Casino Royale! 12 October

On Friday we had our own Casino Royale here at Lexis Byron!

There was a roulette wheel set up but everyone was only interested in competing in the poker tournament!

Eric did a great job of explaining the rules to everyone, with some help from Pablo.

We continued playing until 7pm, when we then counted up our chips to see who had the most…

Daniel was the clear winner, earning himself a 6 pack of beer which he kindly shared with some of his fellow players! It’s been a good month of prizes for Daniel, having won himself a Whitsundays trip from Happy Travels last week!

Francoise is the mum of Alexandre, so also from New Caledonia! As well as sixteen year old Alexandre, she also has a nine year old daughter. She enjoys horse riding and cooking.  She studied law and worked as a lawyer within the education sector. She wants to improve her English for traveling and plans to visit New Zealand, the United States and England after her trip to Australia!

Fernando is from Brazil. She works in the investment department of a bank. In her free time she likes to watch movies and go out with her friends. Her biggest love is traveling. She wants to improve her English so she will have the confidence to speak to people from all over the world, and also so she can one day work for a global bank.

Noriko is from Japan. She works as a travel agent in Tokyo but has taken a year off to study and travel in Australia. She wants to improve her English so she can be a guide for tourists when the Olympic games are in Tokyo in 2020. Her hobbies are reading, walking and yoga. Photography Competition – afternoon session! 11 October

Last Thursday we had a fun photo competition using the theme ‘faces in places’!

The students had to look closely at their surroundings and find faces in everyday objects they probably wouldn’t have looked twice at!

They had lots of fun looking for faces and some got creative making faces (technically cheating :/ but still great photos!)

IMG_4924

There was even the added bonus of a free surf lesson for the best photo…

Lorene3

Well done Lorene! We thought this was a really funny original one! Enjoy your surf lesson 🙂

Morning Photography Masterclass – 11 October

Yesterday morning, a few of us braved the rain and gathered together to chat all things photography! We had a range of cameras – from fancy digital SLR’s to iPods and phones. Here are some of the guys, all ready to go 🙂

IMG_7330.JPG

The theme of the day was a really fun project called Faces in Places. The idea is to look at EVERYTHING around you and try to find a naturally occurring face…

This project is not only fun, but works really well at training our eye to be better photographers. It makes us more aware of our surroundings and helps us to see beauty and potential in things that we might have otherwise walked past!

Things got interesting as we decided to make it a competition, with a fabulous prize of a free surf lesson for the best shot. Here are a few examples…

In the end though, we had to choose just one and we really loved this little gem. Congrats to our winner Annick! Get ready for your surf lesson! 🙂

Soccer match against BBELS – 10 October

Yesterday we played a soccer match against BBELS, one of Byron’s other local schools.

Every couple of months we meet at the sports field for a friendly game. It’s good fun for the students and it’s nice for them to meet other students outside of Lexis 🙂

Rain was forecast for the afternoon but there wasn’t a cloud in the sky! Even at 4pm it was still really warm, so the players did a great job of running around for over an hour!

Meanwhile us supporters stayed cool in the shade!

IMG_7290

Both teams showed great skills and played brilliantly, but there could only be one winner…

US!! Go Team Lexis, taking the win with a 6-5 result!

Coffee Club! 9 October

Summer is definitely on it’s way here in Byron Bay! It was a beautifully warm day so we enjoyed today’s Coffee Club in the sunshine <3

The Tim Tams had to be eaten very quickly as they were melting in the heat, but luckily the students were happy to help out!

We were all amazed that Sacha has been in Australia one month and this is the first time he’s had Tim Tams?! He now loves them almost as much as the other students and said he’ll be coming back to Coffee Club again next week 🙂

We had lots of fun playing Jenga with questions, until Sacha knocked the tower over and had to do 10 push ups!

Happy Student – Eric

Eric Giminez Claret has only been at Lexis Byron Bay for three weeks but he has made a bit impact with his cheerful demeanour and always smiling face. I caught up with him earlier this week to finalise his study plan and, when he told me that he was “so, so, so happy” in Byron Bay, I asked if he would like to be our next “Happy Student”.

Here are the answers to his questions and some photos of his time in Australia so far.

Why did you choose to come to Australia and to Lexis Byron Bay in particular?

I chose Australia because it’s far from my country, I like the culture and I’m interested in the history. Also, it’s a good starting point for travelling in Asia and NZ.  I chose Byron Bay because it’s similar to my town (Plaja D’aro) in Spain and because I think a small town is better for me for learning English. I chose Lexis because some of my friends from Spain have been to Lexis schools and recommended it.

What do you remember about your first day at school?

It was exciting and scary because everything was new and it was my first trip alone and far from home. It was also strange because everything was in English so I had to concentrate really hard. Luckily I met Lorene, another new starter, and we hit it off straight away and the friendship has grown and grown ever since.

What are your English goals and how is Lexis helping you achieve them?

I’m going to do the CAE preparation course in January. I need to pass this because I want to study psychology in English, ideally in Australia. I only started learning English two years ago but I like languages and I feel like I’m improving so much because I’m speaking English all the time. And also because of the grammar and vocabulary, I’m learning in class.

What do you like about your classes? Is there a class you particularly remember?

I really like the way we study with lots of activities, speaking and games. And my classmates are great; really social and fun.

On Thursday, we did an excursion to the Farmers Market. We did a Scavenger Hunt where our teacher, Mel, gave us a list of items that we had to find and photograph. I enjoyed that and the food, live music and the conversation with the people at the market.

You’ve also joined in a lot of our free activities. What has been your favourite one so far?

I really enjoyed the Ping-Pong Competition (which Eric won). I’m a tennis coach in Spain and also used to have a ping-pong table so it’s easy for me.

Dreamcatcher making was fun too, even though mine was not good. I love Claire (our Student Services and Activities Officer); she so sweet.

Have you participated in the weekend activities? What have you done?

Yes, 20 of us went on the camping trip to Yamba, organised by Sarah from Happy Travels. The whole trip was so funny. It was my first time seeing kangaroos and my favourite part was when we got up at 5am to watch the sunrise on Sunday. It was so beautiful.

I also enjoyed the BBQ at Brunswick River and jumping into the water there. And this weekend I went skydiving. Amazing!

Outside of school, what is your favourite thing about Byron?

I love surfing so I go as often as I can. I also want to go scuba diving but first I need to find a job. Actually, I really enjoy all watersports so I’m also keen to go windsurfing.

Finally, what would you say to anyone thinking of coming to Lexis Byron Bay?

Do it; it’s paradise!!!!!

Kristy’s Birthday! 27 September

Last week the lovely Kristy celebrated her birthday!!

IMG_6808

To show their appreciation to their wonderful teacher her options class threw her a surprise party!

IMG_6804

They all put money in to get her, not one, not two…but three beautiful cakes!

When Kristy suggested heading into town for their ‘Speaking Out & About’ class she was surprised that they were all very against the idea! The reason being they had already set everything up downstairs, so had to convince her they should do the class in the student lounge instead!

The plan worked and Kristy was very happy and grateful for her surprise party! It’s so nice to see how much our students appreciate our brilliant teachers 🙂

Meet the Staff – the kind and dedicated teacher Kathleen!

This week, find out more about Kathleen, who is currently teaching our FCE class.

Kathleen has been at Lexis for just over 5 years now so many students will remember her for her thoughtful teaching approach and her chocolate. If you were at Lexis last Christmas, you will also remember her show-stealing performance as Madonna in the staff pantomime of Cinderella.

  1. How many languages do you speak?

The short answer is ‘one’. I studied Latin when I was at school but it’s difficult to maintain speaking practice when the native speakers all died thousands of years ago.  However, I can say the essentials (eg. Hello, please, thank you, coffee, beer, toilet) in many languages as I love travelling to other countries.

  1. I always wanted to be …

Johnny Depp’s girlfriend.

  1. In Byron Bay, don’t miss …
  • Cycle the back road (Myocum Road) to Mullumbimby and check out the Saturday markets and the town in general.
  • Bangalow markets on the fourth Sunday of each month.
  • Whale watching at sunrise at the lighthouse.
  • Sunday afternoons at Brunswick Pub.
  • The Rails Hotel.

  1. BB’s best-kept secret …

If I tell you, I’ll have to hug you to death.

  1. Have you ever lived in another country?

As Lexis students know, living in another country is THE BEST way to appreciate its people and culture while also having the time to explore places that are off the beaten track. Fortunately, I’ve had several opportunities to live abroad:

  • An 8-month volunteering assignment in East Timor at a time when this young nation was recovering from 30 years of foreign invasion.
  • During the Australian winter, I teach English to Vietnamese schoolkids. It’s funny: I’ll be in Byron preparing a Lexis students for the FCE exam and a week later I’m teaching “Hello, my name is …” to a class of 5-year-olds.
  • A nine-week volunteering assignment in Phnom Penh, Cambodia. To be polite, you need to eat with your mouth open and be very noisy. Yum yum.
  • A six-month contract with a firm in Washington DC, in my previous life as a management consultant. Before the contract, I thought that Australians and Americans spoke the same language and had similar cultures. How wrong was I!!!

  1. Dream holiday destination

Somewhere new, so I can learn about another culture. Ideally, it also has friendly people (some of whom speak a bit of English), cycling, rock climbing, a warm climate, very cold beer, and vegetarian food that ISN’T boiled veggies and effing white rice.

Afternoon Crepe Competition! 4 October

Yesterday we had a morning and afternoon Crepe Competition!

I (Claire) was the judge of the afternoon and had a very hard decision on my hands!

The students split into three groups to make the crepes, following this simple recipe:

INGREDIENTS

  • 4 cups plain flour

  • A few pinches of salt

  • 4 eggs

  • 4 cups of milk

METHOD
  • Combine all ingredients in a bowl. Blend until smooth. Add a little water and mix to desired consistency. Cover and set aside to rest for 5 minutes.

  • Heat a medium non-stick frying pan over medium heat. Spray with cooking oil. Using 1/4 cup mixture per pancake, pour batter over pan, tilting from side to side so batter covers base in a thin film. Cook pancake for about 1 minute or until underside is golden, then use a spatula to flip. Cook other side for just under a minute until golden. Repeat with remaining mixture, spraying pan with cooking oil between pancakes.
