Today, we had our Hallowe’en BBQ! Everyone gathered promptly out front at 12.15pm, all waiting to sample Claire’s culinary BBQ delights 🙂 Student Eric kindly assisted with the cooking, Lorene provided the party music and Orla and Judit help set up the table of delights!
It’s an amazing day here in Byron Bay – bright, sunny and warm – perfect for eating outside!
Everyone lined up, creating their sandwich with barbecued meat, fresh salad and a variety of sauces and dressing, all washed down with something sweet!
As it was very hot, a lot of students didn’t want to dress up in costume, however we did have some interesting hats and head pieces wandering around, even among the staff! We really loved how one of our students Arisa was dressed in her traditional Japanese Kimono and gave her the chocolate prize for effort! She loves wearing it and welcoming questions about Japanese culture so be sure to ask her about it! 🙂

Last Friday, the sun was out and we all headed to Main Beach for a morning of sand, sea and…. BODY BOARDING! What better way to clear the head before afternoon classes than get out for some fresh sea air 🙂
We all met promptly at reception at 11.30am and walked together to our favourite surf shop to get our boards. We had the option of getting a wet suit but most of the group decided to brave the cold(ish) waters! Here they are, all ready and eager to get in the water!

Yesterday, we all got to sample some Spanish style cooking, in the form of the well-known Spanish favourite, ‘Paella’. We all gathered outside the student lounge where we had a look at our chosen recipe and discussed how we would all work together. Luckily, we had a few Spanish cooks among us! We started out with our list of ingredients… I then learned that we definitely do NOT use chorizo in an authentic Spanish Paella… so we went with something a little different – Spanish/Lexis Style Paella! 🙂
Everyone had different jobs to do in preparation for our cooking such as preparing and chopping the vegetables, sourcing pots, pans, bowls and any cutlery needed. We then lined everything up at our cooking station, all ready to go! We got in to the spirit of it all with some fun Spanish music playing in the kitchen.
Everyone helped out but two of our Spanish students, Jose and Maria, took the main responsibility of overseeing the actual cooking. We had to cook everything well first before adding in the rice and stock at the end, leaving it for a very long time then to simmer slowly. It is always tempting to stir and scrape the bottom, but apparently this is the wrong thing to do with Paella! It naturally sticks to the bottom and we just lightly fold through the top, as it’s cooking. Amazing to have our Spanish students for these little tips along the way! Check out our dish as it progressed…
There was a lot of love and effort put into the making of our paella and the hardest bit was waiting for it to cook! We had regular tasting along the way and eventually when it was all cooked, we were ready with 16 empty bowls!
End result: Spanish/Lexis Paella = DELICIOUS! 🙂

Last week, both morning and evening students gathered together for an extra special evening activity of wine and cheese tasting! The sun was out, the wine was flowing, the cheese was disappearing fast and it was Friday – perfect!
We had a range of different cheeses to choose from – Brie, Goats cheese, Edam, Camembert, Gouda, Cheddar, Tasmanian Feta, Spring onion and chive cream cheese, apricot cream cheese… all accompanied by a range of different crackers. For wine, we had a range of reds – Merlot, Shiraz and Cabernet Sauvignon as well as a crisp Pinot Grigio and a soft Rose.
We all had a lot of fun and it was great for all the classes to mingle together, chat about all things cheesy and get ready for the weekend ahead!

Yesterday morning we held a table tennis tournament in the student lounge! It was the first VERY sunny day in quite some time, so we had a small group for our morning session. We reckon the others were at the beach! They missed out on all our fun 🙂 As there were only three students in the tournament, things got quite competitive (especially with the promise of beer for the winner). Here are the guys with their game face on, ready to go…
The all had some warm-up games first, before things got really serious…
Of course, there can only be one winner – Gilles! In fact, he was undefeated in all of his games! Well done Gilles. Some cold beers coming your way 🙂

Last week, we hit Main Beach here in Byron Bay for our surf lesson! We all left our Lexis Campus together at 10am. Everyone got fitted with a wet-suit and we set off to get our boards for the beach. The boards were very long – better for catching the waves!
As we approached the beach, it looked beautiful. The sun was out for us but the sky over the distant sea looked very dramatic indeed. Thankfully, we were spared the rain and thunder for our whole session 🙂 Here they are, all ready to go!
Our surf instructor spoke with all students for the first few minutes at the beach, going over all the important tips and things to do/not do when in the water… then it was time to hit the waves!
We started at one section of beach, before moving further down, to catch some better waves. Some of our students had been surfing a few times already but for some of the others, it was their first time to try. Everyone did amazingly well. I think they are all hooked!

We were all very happy to have blue skies back yesterday afternoon!
We were even happier that this meant we could enjoy yesterdays Boomerang Painting activity outside in sunshine 🙂
We had some examples to follow and the explanations of symbols traditionally used by aboriginals to tell stories with their paintings.
Everyone got really creative and came up with their own unique ideas; I was very impressed with all the end results!

Yesterday morning we had a very fun, colourful and educational activity – Boomerang painting! We gathered in the student lounge (as it was raining outside) and looked at some examples of work by other artists. The style in which they were painted sees many, many tiny dots, perfectly painted into various shapes. These shapes can be ‘read’ as they each symbolise different things – for example, a tiny circle, within two more circles represents a campsite and a large dot, surrounded by smaller dots represents a star! See some examples here below…
We all really enjoyed the painting process! We all started with one base colour and as we waited for that to dry, came up with our designs. They were all so different! See some of the progress here…
In the end, we were all very happy with our finished pieces! We were so engrossed, I think we would all have happily stayed painting for another hour!

Yesterday morning we gathered outside in the fresh air for our weekly morning Coffee Club. We chatted all things Byron as well as finding out more about each other and our native countries. We intended playing a game of Uno but instead, got caught up with our chat!
We learned loads of new and exciting information – from our best-known foods (and how to make them the correct way!), to how many people inhabit our homelands. Google was our friend for finding out this particular bit of information… 🙂
I was also very pleasantly surprised to meet our Swiss student Shannon, whose name I immediately recognized – named after our longest river in Ireland – The Shannon! Looking forward to catching up with these guys (and some others who are out of shot) next week for some more interesting chats, facts, games and of course, Tim Tams! 🙂

On Friday we had our own Casino Royale here at Lexis Byron!
There was a roulette wheel set up but everyone was only interested in competing in the poker tournament!
Eric did a great job of explaining the rules to everyone, with some help from Pablo.
We continued playing until 7pm, when we then counted up our chips to see who had the most…
Daniel was the clear winner, earning himself a 6 pack of beer which he kindly shared with some of his fellow players! It’s been a good month of prizes for Daniel, having won himself a Whitsundays trip from Happy Travels last week!

Welcome to our six new students joining us at Lexis Byron Bay today!
Deborah is from Sao Paulo, Brazil. Her passions are traveling and visiting new places. She works as an analyst in trade marketing. She decided to study English in Australia because she has always wanted to explore this country and learn more about the language!
Alexandre is from New Caledonia. His hobbies include surfing, windsurfing, wakeboarding and skating. He is also interested in space and flying. When he finishes school he would like to become a pilot and travel the world. It is important for him to have a good level of English to be able to fulfill his dreams.
Francoise is the mum of Alexandre, so also from New Caledonia! As well as sixteen year old Alexandre, she also has a nine year old daughter. She enjoys horse riding and cooking. She studied law and worked as a lawyer within the education sector. She wants to improve her English for traveling and plans to visit New Zealand, the United States and England after her trip to Australia!
Fernando is from Brazil. She works in the investment department of a bank. In her free time she likes to watch movies and go out with her friends. Her biggest love is traveling. She wants to improve her English so she will have the confidence to speak to people from all over the world, and also so she can one day work for a global bank.
Noriko is from Japan. She works as a travel agent in Tokyo but has taken a year off to study and travel in Australia. She wants to improve her English so she can be a guide for tourists when the Olympic games are in Tokyo in 2020. Her hobbies are reading, walking and yoga. She chose Byron Bay for her studies because it is popular for yoga and the relaxed lifestyle here!
Rafaela is from Brazil. She has been in Australia for 2 years and already completed our Business course. She likes surfing, traveling and working out. She works at one of the nail bars here in Byron Bay. She loves living in Australia and is now studying IELTs with us so she can pass her exam and apply for a nursing course and extend her visa!

Last Thursday we had a fun photo competition using the theme ‘faces in places’!
The students had to look closely at their surroundings and find faces in everyday objects they probably wouldn’t have looked twice at!
They had lots of fun looking for faces and some got creative making faces (technically cheating :/ but still great photos!)
There was even the added bonus of a free surf lesson for the best photo…
Well done Lorene! We thought this was a really funny original one! Enjoy your surf lesson 🙂

Fernanda (far right) on her first day at Lexis 🙂

Yesterday morning, a few of us braved the rain and gathered together to chat all things photography! We had a range of cameras – from fancy digital SLR’s to iPods and phones. Here are some of the guys, all ready to go 🙂
The theme of the day was a really fun project called Faces in Places. The idea is to look at EVERYTHING around you and try to find a naturally occurring face…
This project is not only fun, but works really well at training our eye to be better photographers. It makes us more aware of our surroundings and helps us to see beauty and potential in things that we might have otherwise walked past!
Things got interesting as we decided to make it a competition, with a fabulous prize of a free surf lesson for the best shot. Here are a few examples…
In the end though, we had to choose just one and we really loved this little gem. Congrats to our winner Annick! Get ready for your surf lesson! 🙂

Fluently, just English – followed by Irish (dia dhuit! / hello!) and then French. I also know a little Polish (my sister-in-law from Poland). I really want to learn Spanish!
I ALWAYS WANTED TO BE…?
An artist and musician. (One out of two ain’t bad!) I was surrounded by art and music as a kid so have always had a great appreciation of both.
WHEN YOU ARE IN BYRON BAY, DON’T MISS OUT…
On all the amazing buskers around town, the drum circle by the beach at sunset and the amazing markets!
I’LL BET YOU DIDN’T KNOW…
My amazing Gran is 100 years old! (See photo of us on the day she officially turned 100 last May. We had a huge party to celebrate in Galway, Ireland).
