Beer Tasting! 28 September

Today’s activity was Beer Tasting!!

IMG_6823

I was joined by our new team, the lovely Orla! Orla will be starting with us in the office next week and also running our morning activities. It was a great way to welcome her to the school and for her to get to know some of the students!

We had five different beers to try: Mandarin India Pale Ale (Amanda), Dark Ale (White Rabbit), Stone & Wood (Green Coast), Pale Ale (Colonial) and an IPA (Fixation Obsession).

The students had a taste of each and then guessed the flavours, state where it’s made in Australia, alcohol percentage and price.

Beer Table

There was no clear favourite as there were a few votes for each, but I have a feeling at 6.7% everyone may start buying more of the Mandarin IPA!

Graduation! 28 September

Congratulations and farewell to our two students graduating from Lexis Byron Bay today!

Carmen, from Spain, graduates from Claudia’s Upper Intermediate class. It has been wonderful having her here with us at Lexis for the past 24 weeks and watching her English improve and confidence grow. She worked hard and participated enthusiastically in all activities. She is a respectful student who was friendly and kind to all Lexis staff and students. We’re glad this isn’t goodbye as Carmen will join us again for our Cambridge course in December. Enjoy your break and we  look forward to seeing you in a few months <3

Dunia, from Spain, graduates from Mel’s Intermediate class. She has been a lovely student who was always polite and good to have a conversation with. She put in a great deal of effort during her 4 weeks with us and graduates with a well deserved A; well done Dunia! We hope you enjoyed your time here as much as we enjoyed having you and wish you the very best for the future!

Campus manager, Lisa, stepped in to take the class photo…

Make a Bag! 27 September

Here at Lexis Byron Bay we all care about the environment, but no-one more so then beloved teacher Adrienne. Adrienne is passionate about everything she does, particularly educating and encouraging students and staff to do more to care for this beautiful world we live in <3

Yesterday Adrienne combined this with her love of fashion and showed the students how to make bags from T-shirts!

The bags can be used for shopping to stop us using plastic bags, or make a cute bag for all our regular trips to the beach!

The technique was really simple to follow and Adrienne guided all the students until they each had their own unique bags to take home!

There was lots of fun and laughter along the way, and Ibon even found another use for his…

IMG_6790

Thank you Adrienne <3 Looking forward to doing more activities like this in the future!

Meet the Staff – this week the loquacious (look it up) teacher, Adrienne

Adrienne has been at Lexis Byron Bay for a couple of years now and everyone who has ever met her will remember that she is kind, passionate about English, and not short of a word or two. 🙂

Below, find out more about her, her hairless cat, her hobbies, and her passions.

Adrienne_rescued ducklingHOW MANY LANGUAGES DO YOU SPEAK?

Technically only one now.  I grew up in Canada so I was in French immersion in school, but I have forgotten too much. In my 20’s I went travelling in Central America so I learnt Spanish. Now thanks to many years of no practice with either language, I speak Spench. I feel that if I were immersed in either language, I would be speaking both with a terrible anglicised accent quickly.  That’s the beauty of a North American accent….I sound like the TV even when I don’t want to…. ;P

I ALWAYS WANTED TO BE…someone who is paid to educate people on how to become more environmentally aware with practical tangible solutions that are easy to put into practice. I love permaculture and the ideas the system presents.  It’s not just a gardening technique, it can be applied to business as well as lifestyle choices. If I had any skill in maths, I would have become a designer who retrofitted buildings to become energy neutral or make energy.

WHEN YOU ARE IN BYRON BAY, DON’T MISS OUT….on the Farmers Markets. Byron is a place where you can access some of the freshest food available. At the Farmers Markets, you can buy most of your daily groceries including rice, coffee, cheese, and bananas. That’s only mentioning a small portion of what is grown in our region.

BYRON BAY’S BEST KEPT SECRET IS…. Leave and go see other parts of the area. Go see the Border Ranges or Nightcap National Park (Springbrook and Lamington National Parks are just over the border in Queensland).  There’s so much to do in the surrounding areas so don’t just party, go interact with our nature; our rainforests are special.

I’LL BET YOU DIDN’T KNOW…that hairless cats are not from Egypt but from Canada and the UK.  Sphinx cats (like the one from Austin Powers) was actually developed in Toronto Canada.

All I could think when I learned this is: It’s so cold, why!?

My hairless cat is a Cornish Rex and his breed was developed there.  He loves the sun and will spend hours sleeping in the warmest part of my garden.  He’s my best friend and cuddle partner.

WHAT IS YOUR FAVOURITE THING TO DO?

I like to do many things.  This is a hard question to answer. I love to garden, swim, dance and listen to podcasts.  I love to absorb culture, whether it is radio, theatre or art galleries, I don’t care. I love music that has horns but mostly I love reggae to dance to.  In my 20s as I was living in BC and California, I saw some of the most talented musicians around. There’s a lot of music to enjoy, but what makes me smile most is music with a swing beat that has trumpets and other brass instruments. I love melody so music for me must have a melody.

I also have a bizarre love of fashion.  I am fully aware of fast fashion and its impact on the environment both as waste and resource use for production. To still enjoy fashion and making clothes, I have started upcycling shirts and other pieces of clothing from old worn out clothing that normally would go to the landfill.  It a fantastic creative outlet as well as encouraging both myself and others to do more for the environment.

And as many of my co-workers know, I love to talk and be funny…. Mostly I make fun of myself….

Adrienne_pre-int boyz

HAVE YOU EVER LIVED IN ANOTHER COUNTRY? I am now living in another country….. I have lived in both Canada and the US.

WHAT IS YOUR DREAM HOLIDAY DESTINATION? My dream holiday destination is the cabin my grandparents owned.  My aunts and uncles still own it, but I hardly ever get the chance to stay there. I love nature and swimming.  If any destination has those 2 combined, then I am a happy camper.

WHY DID YOU BECOME A TEACHER?

I didn’t want to be a teacher, however, when I was in university, I got a job teaching swimming and coaching triathletes where I excelled at getting individuals to swim faster and win competitions. I could never decide on a career path when I was in my 20s and just floated through life running grassroots activist organisations. To keep my lifestyle afloat, I kept teaching swimming, fitness, and lifeguarding as it was so easy.  I had a fan club and when I quit, some of my clients and students cried.  I, by accident, ended up living in Australia full time, and eventually came to an impasse and was bored of being a disability support worker.  I wanted an intellectual challenge so I signed up to be a literacy teacher, however, the course I needed wasn’t available so I decided to go the back way in an do my high school teaching certificate. I wasn’t cut out to be a high school teacher, but I did love teaching disadvantaged youth.  After a while though, I needed a less stressful job so I got my qualifications for ESL teaching and have never looked back.  The only regret I have now is that I didn’t do it sooner. I love English and the reasons behind why we use grammar.  I love to edit and can take a moderately well-written piece and make it shine.

WHAT IS YOUR ENGLISH LEARNING TIP?

Listen to the radio.  The more you listen to local radio like ABC Radio National, the easier it will be to travel around the country and understand the locals. On top of that you learn more about Australian culture, but also absorb incredible information.  We are very blessed in Australia with our National Broadcaster. We have radio stations to suit most interests, but also 4 ad-free TV channels. The radio channels range from music with Triple J, ABC Jazz, and ABC classical to local radio that has talk back shows etc.  If you like to know the news ABC News Radio and TV will give you amazing insight to the world.  ABC RN is cultural shows about art, books, but also hosts podcasts of all sorts.

A beautiful afternoon at the beach! 14 September

Last Friday myself and some of the students had a lovely afternoon at the beach 🙂

IMG_6324

The activity that day was soccer but the group got split up on the walk down to the beach and we lost those with the ball! They went ahead and had their game of soccer somewhere else on Byron’s beautiful stretch of beach, while we attempted our own game…

Improvising with a rolled up beach towel! Predictably this version of the game didn’t last long but there was plenty of fun and laughter!

Didgeridoo Lesson! 20 September

Yesterday we had Craig, from Fifth Circle Music Therapy, come in to teach us the basics of playing the didgeridoo!

IMG_6419

We started with vibrating our lips into the didgeridoo, then practiced incorporating different sounds and rhythms with this.

The didgeridoo is a wooden instrument developed by indigenous Australians. Craig told us a bit about the history and origin of this instrument which has been used within aboriginal tribes for years.

Craig taught us how to the imitate the sounds of two of Australia’s native animals, the kangaroo and dingo; first practicing without, then through the didgeridoo. We had lots of fun howling like wolves and making the bouncing noises of the kangaroo!

Some of us were more natural didgeridoo players than others… teacher Adrienne’s technique was best described as ‘cat’s bum’.

This was a brilliant authentic and cultural experience for all of us and one we all thoroughly enjoyed!

Make a Dreamcatcher!! 13 September

Yesterday we had a creative afternoon making our own Dreamcatchers!

IMG_6257

We followed a video (https://www.youtube.com/watch?v=Vmtkc7FOWLw&t=3s) to get us started, then the students created their own, with me on hand to help!

There was plenty of different fabrics, threads, beads and feathers for the students to use, so they were all able to make theirs completely unique!

Jobs! 12 September

Jobs

There’s not many job advertised this week, but that doesn’t mean there’s not jobs out there!

The best thing to do is go round all the bars, restaurants, cafes, hostels and hotels handing out your resume. If you need help writing your resume you can go to GIL any day between 2 and 3pm; in room 8 every day except Mondays when it’s in room 7. Then email to me: adminbyron@lexisenglish.com and I can print 10 free copies every day for you 🙂

Despite being advised by our Korean students that it was ‘impossible’ to make in such a short amount of time, I put together an adapted recipe and (hopefully!) made it work!

Lisa brought in jars for us to re-use so each of the students could take their own Kimchi home with them <3

All was going well until two of our Korean students, Song and Jin Wook, poured the whole 50 grams of curry powder in, instead of the recommended 1 to 2 tablespoons!

We added some extra sugar and watermelon to make it sweeter and take away some of the spice but it was still making us turn red in the face! Song and Jin Wook recommended having with rice when it’s ready to eat, and this will hopefully give it a milder flavour and make it more enjoyable to eat!

It is recommended to wait at least 1 to 5 days so it can ferment, but it can be left (refrigerated) for a few months. I’m looking forward to finding out next week how the flavours have changed after the fermentation period!

To make this at home you can follow my simple adapted recipe below (along with the typical Korean ingredients in red). I prepped the cabbage in the morning so it would have a few hours to soften, and the rest of the recipe took us less than an hour to do! Not impossible after all 🙂

Ingredients

  • 1 medium cabbage (napa cabbage)
  • 1/4 cup sea salt
  • 1 tablespoon grated garlic (5 to 6 cloves)
  • 1 teaspoon grated peeled fresh ginger
  • 1 teaspoon granulated sugar
  • 2 tablespoons fish sauce
  • 1 to 3 tablespoons chilli powder (gochugaru/Korean red pepper flakes)
  • 8 ounces radish, peeled and cut into matchsticks (Korean or daikon radish)
  • 4  medium spring onions, trimmed and cut into 1-inch pieces (scallions)

      Equipment

  • Cutting board and knife
  • Large bowl
  • Plate and something to weigh the kimchi down, like a jar or can of beans
  • Colander
  • Jars with canning lid

Instructions

  1. Cut the cabbage. Cut the cabbage lengthwise through the stem into quarters. Cut the cores from each piece. Cut each quarter crosswise into 2-inch-wide strips.
  2. Salt the cabbage. Place the cabbage in a large bowl and sprinkle with the salt. Using your hands, massage the salt into the cabbage until it starts to soften a bit. Add enough water to cover the cabbage. Put a plate on top of the cabbage and weigh it down with something heavy, like a jar or can of beans. Let stand for 1 to 2 hours.
  3. Rinse and drain the cabbage. Rinse the cabbage under cold water 3 times. Set aside to drain in a colander for 15 to 20 minutes. Meanwhile, make the spice paste.
  4. Make the spice paste. Rinse and dry the bowl you used for salting. Add the garlic, ginger, sugar, and fish sauce and stir into a smooth paste. Stir in the chilli powder, using 1 tablespoon for mild and up to 5 tablespoons for spicy (I like about 3 1/2 tablespoons); set aside until the cabbage is ready.
  5. Combine the vegetables and spice paste. Gently squeeze any remaining water from the cabbage and add it to the spice paste. Add the radish and spring onions.
  6. Mix thoroughly. Using your hands, gently work the paste into the vegetables until they are thoroughly coated.
  7. Pack the kimchi into the jar. Press down on the kimchi until the brine rises to cover the vegetables, leaving at least 1 inch of space at the top. Seal the jar.
  8. Let it ferment for 1 to 5 days. Let the jar stand at cool room temperature, out of direct sunlight, for 1 to 5 days. You may see bubbles inside the jar and brine may seep out of the lid (place a bowl or plate under the jar to help catch any overflow).
  9. Check it daily and refrigerate when ready. Check the kimchi once a day, pressing down on the vegetables with a clean finger or spoon to keep them submerged under the brine. (This also releases gases produced during fermentation.) Taste a little at this point too. When the kimchi tastes ripe enough for your liking, transfer the jar to the refrigerator. You may eat it right away, but it’s best after another week or two.
