Christmas Food Fair! 22 December

For the last day of school before the Christmas break the staff here at Lexis Byron Bay put on a special treat for our students…

A pantomime based on Cinderella but with a Byron Bay twist!!!

Our talented teacher Anji wrote a brilliant script and each of the teachers and Lexis staff members had a role!

I think all will agree Anji and Adrienne were hilarious as the ugly sisters, and Kathleen was nothing short of amazing in her role as Madonna!

Everyone did a great job playing their parts and getting into their roles; who knew we had a team of such incredible actresses?!

After the pantomime we had our traditional food fair, where we had encouraged the students to bring in party food from their home country to share with their Lexis classmates and staff!

Kathleen’s class made tasty sushi and we had a variety of delicious sweet snacks, including Toblerone mousse from Switzerland and Brigadeiro from Brazil!

To finish the day we had a Christmas trivia with prizes to be won!

Graduation! 22 December

Congratulations and farewell to our twenty students who graduated from Lexis Byron Bay last week!

Charlotte, from Switzerland, graduates from Kathleen’s Upper Intermediate class. In her 14 weeks here at Lexis she has made improvements in all areas of her English, particularly in her speaking and listening skills. We are glad this isn’t goodbye as Charlotte will be back next year for our Cambridge course!

Lydie, from Switzerland, graduates from Kathleen’s Upper Intermediate class. She has worked hard to improve her English and has a great ability to understand the underlying concepts of grammatical structures. Lydie will also return for our Cambridge course next year! We hope you enjoy your Christmas break and look forward to seeing you in January!

Tifany, from Switzerland, graduates from Kathleen’s Upper Intermediate class. She has made incredible progress in her 10 weeks studying with us. She shows particular strength in her writing and understanding of grammatical structures. Given her aptitude and determination we are sure she will do well in our Cambridge course next year! Enjoy your break and we’ll see you in the new year!

Heitor, from Brazil, graduates from Kathleen’s Upper Intermediate class. In his 19 weeks here at Lexis he has made many friends and provided much entertainment! He has also worked hard and progressed from Pre-Intermediate to Upper Intermediate with an A! We will miss your sense of humour Heitor and hope to see you again one day!

Gioele, from Switzerland, graduates from our Upper Intermediate class. His teacher Kathleen says he had a great attitude in class and demonstrated a solid command of the English language. His spoken English is fluent and shows intelligence and humour! Best of luck for the future Gioele!

Diego, from Brazil, graduates from Kathleen’s Upper Intermediate class. He has made amazing progress in his 20 weeks here with us at Lexis, starting in Pre-Intermediate and graduating from Upper Intermediate with an A! His participation in class and out of class activities is excellent and he is always ready with intelligent ideas and suggestions! We are very glad you’re staying in Byron, so this isn’t goodbye yet!

Nana, from Japan, graduates from our Elementary class. Her teacher Michelle describes her as a polite courteous student who always participated well with her classmates. We have seen her speaking confidence grow significantly in her 4 weeks with us. She graduates with an A, which she should be very proud of!

Adrienne

Julieta, from Argentina, graduates Adrienne’s Pre-Intermediate class. Adrienne says Julieta has exceeded her expectations and sailed ahead of the level, something she should be very proud of! Everyone has loved having her in class and she will be missed greatly! We hope you enjoy your farm work in Tasmania and the rest of your travels!

Joel, from Switzerland, gradates from Serena’s Pre-Intermediate class.  He has improved in all areas of his English in his 5 weeks here at Lexis Byron and should be very proud of his achievements! His teacher Serena described him as a diligent and polite student. We wish you all the best for the future!

Takako, from Japan, graduates from Serene’as Pre-Intermediate class. In her 24 weeks here at Lexis we have seen her English and confidence improve immensely. He started with us 24 weeks ago at Pre-Intermediate level, and has now completed the Cambridge course and graduates at an Advanced level with an A; you should be extremely proud of yourself Gustavo, we are! Luckily we don’t have to say goodbye to his sense of humour and kindness just yet, as he will continue to stay in Byron!

Nadja, from Switzerland, graduates from Claudia’s Advanced class with an A! It has been wonderful having Nadja at Lexis Byron; she always has a smile on her face and a positive energy. Nadja is a very intelligent girl who we are sure will go on to do very well in the future! We wish you the very best with this, you will be missed!

Lucas, from Brazil, graduates from our IELTS class. He has only been with us at Lexis for 2 weeks but in this time he has worked very hard and improved his English in all areas. His teacher Josie says it has been a pleasure to have him in the class and wished he was staying longer! We hope you have an amazing time on your travels Lucas!

Christmas Decoration Making! 21 December

Yesterday we made some beautiful decorations for our Lexis Byron Christmas tree!

For our morning session we made pretty stars and beach themed baubles with sand, shells and lotus flowers!

In the afternoon we got creative making paper ball ornaments and some more stars!

It was great fun and the tree looks amazing covered in the students brilliant craft work!

Christmas Cooking! 20 December

On Wednesday we made delicious edible mini Santas!

We started by using a mini Oreo for the biscuit base then followed the below recipe to make mini cheesecakes:

  1. Use an electric beater to beat the cream cheese (250g), caster sugar (1/2 cup), vanilla  essence (1 teaspoon) and lemon juice (1 tablespoon) until smooth and creamy. Add the eggs, one at a time.
  2. Divide the cream cheese mixture amongst the muffin cups, pouring it or spooning it over each mini Oreo.
  3. Bake in the oven for 20 minutes or until slightly risen and just beginning to crack on the surface.
  4. Cool completely on a wire rack and refrigerate while you make the toppings.

We then put a generous amount of whipped cream on each one, followed by a strawberry (with the top cut off) and another small blob of cream on the top; which became the fur trim, hat and bobble!

They tasted even more delicious then they looked!! Oreos, Cheesecake, Strawberries and Cream – what’s not to love?! Plus they looked super cute 🙂

Jobs! 21 December

There’s not many advertised online this week, but you CAN still find a job!!

I would recommend dropping your resumes off in town and then going back again a couple of days later. The bars, restaurants and shops get lots of people dropping off resumes in the summer, so you need to stay determined and keep going back so when they do need someone new it’s your name they remember!

If you need any help with your resumes you can go along to GIL; everyday at 12pm and 2pm – in room 8 every day, except room 7 on a Monday!

Luscious Cafe in Byron Bay is looking for a qualified Cook to join our team. Must have commitment to hard work, and proven 2 years’ relevant experience and qualifications as a cook. We require experience within an aged care commercial kitchen setting plus the ability to manage catering operations and food supply management.
