Welcome to our six new students joining us today at Lexis Byron Bay!
Silvan is from the German speaking part of Switzerland. His hobbies include skiing, fitness and listening to music. After finishing school he worked as a roofer and carpenter but will join the Swiss army for 5 months when he returns. He wants to improve his English as it is the language of the world and he would like to travel Canada, USA and England as well as Australia!
Juliana, from Brazil, enjoys swimming, cycling and watching movies. She also loves going to beach and would like to learn to surf, so Byron Bay was the perfect choice for her studies! She also chose this location because of the beautiful weather that is similar to Brazil. She believes this learning experience will be very important for her future work and life!
Rafael, from Brazil, is the second oldest son in a family of seven men! In Brazil his job was to audit big companies and give them financial advice, but he decided he needed a break from this and that’s what has brought him to Byron! It has always been his dream to come to Australia and he is wanting to improve his English so he can either find work here or further his career in Brazil!
Nana is from Nagano, Japan. They get a lot of snow here in the winter so she snowboards often. She loves animals and has a dog named Sappu and a cat named Hana (flower in Japanese). She is looking forward to studying hard, meeting new people and having a good time whilst here with us at Lexis!
Amanda, from Brazil, loves travelling and experiencing new things! She has just graduated in Chemical Engineering and during her studies worked as an intern at Sandland, a business management consultant company. She wants to improve her English so she can complete a post graduate course in Australia!
Luis, from Brazil, will study with us at Lexis Byron for 24 weeks in General English before starting our Business course at the end of May. Before coming to Byron he also studied at Lexis Brisbane! He is here with his wife and they are both hoping to find work and stay here in Australia for at least 2 or 3 years!

Today we had a BBQ to celebrate the end of our current Cambridge courses!
Our two Cambridge classes, Advanced with Josie and First with Paul, have just finished their 12 weeks of study, so we thought they deserved a treat for all their hard work!
They were joined by the students from our General English classes so they could all enjoy some sausages and drinks together in the sun!
Myself and Harriett made sure nobody went hungry and everyone was delighted with their free lunch!
Good luck to our Cambridge students with your remaining exams!!

We tried 5 different ciders: Apple Mercury, Pear Monteith’s, Blackberry Somersby, Apple and Ginger Hills and Strawberry and Lime Rekoderlig.
I covered all the labels so the students could then guess the flavours, the country where it was made, alcohol percentage and price!
After each one they discussed together and decided on their answers as a team.
There were a lot of surprised reactions with the answers I gave at the end, especially the Hills being 8% and the Somersby being blackberry flavoured and not cherry!

Its been a tasty month of delicious Breakfasts Clubs for our afternoon students.
From fresh healthy smoothies to local cheese and bread, we have had the best mornings full of yummy food and great conversations.
Today I thought I would put together some snaps of our mornings shared together.
Smoothie making is one of my favorite activities, experimenting with different combinations of fruit and inventing our own smoothies! Some of the students named their smoothies and then voted for their favorite one.
Thank you for all the students who come into school early for the morning activities.
Its always lovely to hang out with you guys relaxing, eating yummy food, having great conversations and finding out all about your countries and life!
Keep an eye out for Decembers calendar to see what activities we have in store for you next month!

Harriett and myself assisted the students as they worked together to make this vegan friendly desert!
The results were delicious! If you’d like to try yourself at home here’s how:
Ingredients
5 tablespoons sunflower oil
200g dark chocolate (dairy free if you want to make it vegan)
170g of self-raising flour
3 heaped teaspoons of cocoa powder
180g golden caster sugar
230ml coconut milk
200g walnuts
Method
Preheat the oven to 180ÂşC/350ÂşF/gas 4. Grease a square baking tin (roughly 20cm) with a little oil, then line with greaseproof paper.
Place a heatproof bowl over a pan of simmering water, making sure the base doesn’t touch the water. Break 150g of chocolate into the bowl and allow it to melt, then set aside to cool slightly.
Meanwhile, sieve the flour and cocoa powder into a large bowl, then stir in the sugar. Stir in the oil, milk and melted chocolate until combined.
Roughly chop and stir in the remaining chocolate and most of the nuts reserving a few for the top. Pour the mixture into the prepared tin, spreading it out evenly. Sprinkle over the remaining pecans, then place into the hot oven for 20 to 25 minutes, or until cooked on the outside, but still gooey in the middle.
Leave to cool for around 5 minutes, turn out onto a wire cooling rack, and then serve warm with a scoop of vanilla ice cream, if you’re feeling extra indulgent.
Learn English in Byron Bay. Lexis English students study General English, IELTS, FCE, CAE and English plus Surfing and Yoga in a friendly and professional school right in the heart of Byron Bay and only 15 minutes from the beach.
Myself and Harriett showed the students how to make net wrap pendants that they could then make into bracelets, necklaces, key chains or decorations!
They had a selection of beads, stones and shells to choose from and we then gave them a tutorial on how to make the nets to hold them.
It was up to the students how they wanted to finish it off, but we showed them a couple of options including different ways of braiding.
Some students got even more creative and made their own style of bracelets and necklaces!
Every piece made was unique and beautiful, and a great souvenir or gift from their time in Byron!

This week Lexis Byron Bay hosted a Sweet Exchange! We encouraged all of our students and staff to bake or buy something sweet to bring in and share with their school friends and teachers!
Everyone who came along had to donate a minimum of one gold coin ($1 or $2) and could then help themselves to as much cake, biscuits and chocolate as they could eat!
The money raised will be given to two charities; Golden Oldies Animal Rescue and WIRES Wildlife Rescue. These 2 charities are close to mine and Lisa’s heart; Lisa has adopted two elderly dogs and an 8 year old cat from rescue groups like Golden Oldies and I am a volunteer/rescuer for WIRES. Last week we got all the students together and each did a presentation for our chosen charities, explaining all the good they do and how our donations would help. Jacko, Lisa’s 14 year old Jack Russell cross, came along to help Lisa express how much the charity means to her. It’s fair to say he stole the show and everyone loved having him at school for the day!
We are so pleased and proud of how many of our students and staff got involved. Many made things together as a class, others baked at home and some bought from shops; all contributions were greatly appreciated!
Once we received all the food at reception I set everything up in one of our classrooms ready for the morning and afternoon breaks!
We had two pots at the front so everyone could choose which charity to donate to, with many putting in both, and they were then able to help themselves to all the treats one offer!
There was a huge variety to choose from, including an assortment of cheesecakes, lemon slice, cinnamon scroll, chocolate cake, brigadeiro, chocolate covered strawberries, cupcakes and Aussie favorite Tim Tams!
My first attempt on a Banoffee Pie was miraculously a success and finished off before I even got try it!
There were so many delicious treats brought in we even had enough left over to do a silver coin donation the next day!
A huge thank you to everyone that bought something in and everyone who donated to our chosen charities, it is very much appreciated and we’re really looking forward to letting the charities know how much Lexis has raised for them…
Which is a total of $280!!

On Wednesday we held our monthly Table Tennis Tournament to find out who our November champion would be!!
We had 4 players in our morning competition, with Brice walking away as the winner!
Not content with just being our morning champion, he decided to skip class in the afternoon (which is never encouraged here at Lexis but it was a rare occasion for Brice!) to see if he could be crowned our overall November champion!!
Our afternoon competition started with 16 players. Everyone was paired off and played first to 11, with the winner staying on for the next round.
Tobias, our September and October champion, was knocked out in the semi finals by Shin.
This took Shin through to the final against Brice, who had just beaten Gustavo.
Shin played an extremely good game but Brice managed to secure his place as November’s Table Tennis Superstar!!
