Today we celebrated the last day of Winter with some Beer Tasting!
We tasted six different types of beers from various parts of Australia. There were beers from all the way over in Perth on the west coast to Sydney on the east, and one local favourite that is brewed right here in Byron Bay.
Everyone had different preferences, but the most popular beers from this tasting were the Stone & Wood Pacific Ale and the Little Creatures Pale Ale.

We have three new starters at Lexis Byron Bay this week. Meet Miki, Erika and Yuki!
Miki is from Japan. She likes drawing, watching movies, skiing and swimming. She is in her fourth year of University, studying Architecture. She hopes to travel around Australia to see beautiful or amazing buildings, such as the Sydney Opera House. She would like to improve her English skills to the point of being able to think in both Japanese and English. She would also like to travel and explore this big world that we live in.
Erika is from Brazil. She likes music, especially reggae and electronic music, and enjoys camping at music festivals. She also likes the beach and reading about psychology and psychoanalysis. She has worked as a Hotel Receptionist and as an Assistant Administrator. She hopes to study hospitality in the future to help gain work back in Brazil. In the meantime, she came to study English in Australia because she loves Byron Bay!
Yuki is from Japan. He really likes to travel, most recently he visited India, and he also enjoys playing football. He is in his third year of studing Economics at university, majoring in International Economics, which includes electronic products of China and Korea, the European economy and the American economy. He enjoys speaking English and came to Lexis Byron Bay to improve his skills so that he can work in different countries in the future.

This afternoon the students set off into the sunshine on a Scavenger Hunt! They got into teams of 2 or 3 and were given two lists of items to find around Byron Bay. The first list included items relevant to their afternoon Options class and the second were general items around Byron Bay. The first team back for each class who had completed their Options class list won a 6-pack of beer, and the team back first with both lists complete won a Kayaking Trip each from BWT!
The winning team from Ellie’s Mixed Skills class was Maria, Yuki and Priscilla.
They won a 6-pack of beer for being the first team back with their Options Class list completed! In class they are studying ‘Health and Fitness’ this week, so their list of items reflected what they have been learning. They completed items on the list such as a photo of a team member doing the “Usain Bolt” pose in a shop that sells sports clothes, a selfie with a person who looks like they exercise regularly (though they are not sure he understood why they wanted a photo with him!), a photo with a beach towel that is bigger than the smallest team member, a photo of team members doing yoga poses in the park, and a photo of a team member showing three products which help us stay safe in the sun.

Paul’s Speak like a Native class had a very efficient team win the beer after completing the class list!
Juliano and Maria were very quick (and rather puffed out on their return) and completed their list by getting photos of Aussie slang words, for example, of a team member holding a pair of “Budgy Smugglers”, a photo of a “Hot Chick” and a “Hot Bloke”, a photo of the “Meat Pie Menu” and a photo of a tube of “Zinc Cream” at the Chemist.

The winning team from Becky’s Film and Music class was Vanessa, Leticia and Momoko.
They were the quickest team in their class to complete the items on their class list which were about Film, Music and Australiana, including getting photos of the two video shops in Byron Bay, a shop where you can buy records, a video of a busker, a photo of Aboriginal Art, a photo of a team member holding a boomerang and an example of Aboriginal language.

After completing the list from Paul’s class by getting photos of “snags”, a carton of Coopers Pale Ale (beer) at the “bottlo”, and the “bouncer” at Beach Hotel, just to name a few, they then completed the general list too! This included getting a selfie at the Lighthouse, photos of the most easterly point of Australia, a photo using the barbecue at Wategos Beach, a photo of the waves at The Pass, a selfie at the Lexis English school sign and a photo of them doing a surf pose in front of BWT!

Mariko from Japan and Angela from Spain joined us this week on the Lexis Byron Bay English and Yoga programme. This course includes full time English classes plus the opportunity to take advantage of the many different types of yoga on offer in Byron Bay.
So far this week Mariko and Angela have practised Vinyasa flow with Alex at the Lexis Byron Bay Campus Yin Yoga and Ashtanga (modified primary series) at Creature Yoga in the Arts and Industry Park and Hot Yoga at Bikram Yoga, Byron Bay.
I asked them which had been their favourite so far and this is what they told me:
Mariko
“The Bikram Yoga was really good. It was my first experience of hot yoga and I sweated a lot but it wasn’t too hot or too difficult. The instructor spoke slowly and it was easy to understand, as well as follow the people in front of me. Afterwards, I felt really refreshed.”
Angela
“I liked the Ashtanga because it’s more dynamic and, personally, I find it really difficult to hold a pose for a long time, such as in Yin Yoga. Bikram was really nice too, although it was a bit difficult at first because of the heat. It was worth it though because, afterwards, I felt an amazing sense of peace and achievement.”
Mariko and Angela now have passes for both studios to last them the full two weeks, including the weekends, and they still have Vinyasa, Restorative Yoga, Yang to Yin and Hatha Yoga classes to try!

Any other decorations you fancy! For the cookie dough:
Whisk together the coconut oil, rice syrup, sugar and vanilla, until it’s well combined and fluffy.
Mix in the almond flour, salt and baking soda.
Roll small pieces (about a teaspoon) of dough into balls and place on a tray lined with baking paper. Put them in the freezer for 10 minutes to firm up, which will make dipping them in the chocolate easier.
For the chocolate:
Melt all the ingredients in the microwave for 1-2 minutes and whisk together until smooth and well combined. Using a toothpick, dip each ball into the chocolate and then place back on the tray. (You can either leave the toothpick in or take it out after you’ve dipped it in chocolate).
For the Koala decorations:
Decorate the balls like Koalas! For example, cover the chocolate with coconut for the fur, use pink marshmallows for the ears, silver balls and/or writing icing for the eyes, nose and mouth. Or get creative and decorate however you like!
Put the koalas in the freezer until the chocolate is set, then eat them all!

Laetitia is from Switzerland and is one of four in her family, including her mother, father and older sister. She likes to spend time with her friends and family, listen to music and go horesriding. She has just completed her studies at Business School and hopes to work in tourism. She chose to study with Lexis Byron Bay to improve her English and because she has always dreamt of visiting Australia.
Jain is from Korea and lives with her close-knit family of her mother, father, grandmother and sister. She is interested in religion and studies management at university, at the School of Christianity. She enjoys playing musical instruments, including the piano, guitar and violin. She is interested in working in Management for Developing Countries in the future, and needs to be able to communicate with foreigners. She came to Lexis Byron Bay so she could improve her English to achieve this goal.
Antoine is from Belgium and is one of five in his family, including his two older brothers. He likes playing soccer, guitar, surfing and hanging out with friends. In Belgium he works in the shop that his parents own. Next year, he will be studying at a new school in Holland. Antoine came to Australia to learn English because he enjoys surfing and likes the variety of animals we have here.
Caterina is from Switzerland and is one of four in her family. She has a fantastic sister who she gets along really well with and all of her family are quite sporty. She likes listening to music and practicing circus arts. She is studying English so that she can get into tourism and event work. She plans to also live in the German part of Switzerland to improve this language as well.
Denise is from Brazil and lives with her husband and their pet cat. She is a fashion designer and has a range of homemade accessories, such as necklaces, bracelets and rings, that they make during the week to sell on Saturdays and over the internet. She came to Australia because her husband loves to surf. They travel a lot, so learning English is important to her. She hopes to build a pop-up store to travel her own country selling her fashion accessories.
Natsumi is from Japan and is one of four in her family, including her mother, father and younger sister. She enjoys watching movies and her favourite film is ‘Funny Face’. She studies Psychology at University and finds it very interesting and useful at times. She would like to study English to improve her speaking and listening skills, so that she can communicate with her foreign friends.
Mariko is from Japan and joins us in Byron Bay for the English in Action: Yoga course. She lives with her family of her mother, father, brother and grandmother. She works at a wedding company, welcoming people when they arrive at wedding receptions. She enjoys her work, because the guests are always happy which makes her happy too! She came to study English in Byron Bay to try new things and to have a holiday.
Kazumi is from Japan. She loves being in nature and likes to go for regular surfing and camping trips with her friends. She studied at university then worked for 3 years as a Web Designer. She then went to Malta to learn English before travelling in Europe. After completing more studies in PHP programming, she got another job as a Web Designer. She has just left that job to come to Australia because she loves travelling and wants to improve her English.

One of our lovely teachers, Julia, is lucky enough to be travelling through Europe at the moment. On her travels, she managed to catch up with a group of her former Lexis CAE students who studied the Cambridge course in Byron Bay.

We have two students graduating from Lexis Byron Bay this week.
Nuria is from Spain and graduates from Ellie’s Upper Intermediate class. She is a very friendly student and an active participant in class. She started at Lexis in February this year before heading north to study at Sunshine Coast and doing some travel around Australia. She enjoyed her time in Byron Bay so much that she returned to complete her last two weeks of English studies with us. Even after just two weeks in her current class, her classmates are sad that she is leaving and will miss her valuable contributions. Now Nuria hopes to find work in Byron Bay and live here…forever and ever if she can!
Sua is from Korea and graduates from Paul’s Intermediate class. He has contributed well to the learning environment in the classroom and has made many great friends here. After eight weeks of studying at Lexis Byron Bay, he has improved his English skills. Sua now plans to spend the next month travelling, starting from tomorrow morning!

Lexis Byron Bay has been given a bit of a face-lift this winter with some smart new paintwork inside and out. The exterior walls are now a lovely dark grey and all the doors, door frames and window frames provide a refreshing contrast in white.

Yoshi is from Japan and is one of six in his family, including his mother and father, two sisters and one brother. He likes to ride his motorbike and enjoys drinking a beer with his awesome friends. After finishing High School earlier this year, he then worked in a restaurant before travelling to Australia. He chose to come here for the great weather, beautiful beaches and hopes to work on a farm. In the future, he would like to live and work in London.
Vanessa is from Switzerland and is one of four in her family with her parents and an older brother. She enjoys swimming, reading, hanging out with friends, snowboarding and travelling. She worked as a Front Office Manager in a hotel before following her dream to travel to Australia. She is studying English at Lexis to improve her travelling experience while in Australia! In the future she hopes to move to Sweden to live and work.
Priscilla is from Switzerland and lives with her family of five including her mother, father and two younger sisters. She likes travelling, cooking, gymnastics and going to the beach, and works with young children in a kindergarten. She decided to study English here so that she can meet her relatives in Australia. She would also like to learn to surf in Byron Bay! She hopes to do two more years of study when she returns to Switzerland, before settling down and starting a family.
Ethan is from Korea and lives with his family in Seoul. He likes to go to the beach and swim, and would like to learn how to surf during his time here in Byron Bay. He studied English in High School and hopes to continue improving on what he has learnt. When he was a child, Ethan visited Australia for one month and felt it was a very good country. He now returns to learn English and chose Byron Bay for the variety of foreigners who live and travel through this area.
Othman is from Saudi Arabia. He enjoys football, tennis and PS4, as well as going to the beach with his family. He came to Australia to learn English, which he needs in order to study at university. He chose to spend his time with Lexis in Byron Bay because he is the only student from Saudi Arabia here, so he will be able to totally immerse himself in the English language.

It turned into a beautiful day this afternoon and we made the most of it by soaking up the sun in the garden!
Olmo from Balance Revolution came by and taught us the basics about slacklining.
After learning a few tips and tricks, everyone had a go at walking and balancing along the slackline. It is surprising how difficult walking in a straight line can be!
With a bit of practice and focusing on breathing, everyone made progress and are looking forward to continuing to improve at the next session in September! 🙂

Jongwon is from Korea and graduates from David’s Pre-Intermediate class. He has been a pleasure to have in class and a committed student. He has worked well to improve his English skills and his confidence in using the language. His classmates gave him a send-off yesterday and wish him all the best for the future!

Romane is from Belgium and graduates from Paul’s Intermediate class. She has improved her English and has been involved in many different activities, such as learning how to surf. She has made great friends with other students from all over the world during her time at Lexis Byron Bay. All the best for the future Romane!

Santiago is from Spain and graduates from Ellie’s IELTS class. He has been an enthusiastic student who happily shares his learning and understanding with his classmates. He has developed his excellent listening skills and learns new phrases quickly. Santi has been the student who wears the most fluorescent clothing to class and has been enjoying the great surf of Byron Bay during his time here! We wish you the best on your return to Spain!

The students at Lexis Byron Bay enjoyed a relaxing afternoon of eating pizza and watching a movie – the perfect activity for an overcast, drizzly day in Byron Bay!
The movie they watched is called ‘Room‘, which is based on a novel and won an Academy Award. The students thought the movie was really good even though it was a bit sad at times. They were able to understand the movie well with the English subtitles to complement the English audio and had a very enjoyable movie afternoon!

This afternoon we spent some time in the Student Kitchen cooking a Thai Green Curry!
After grating, chopping, slicing, stirring, frying and simmering (and learning what all these words mean), the result was a very aromatic and delicious curry.
Check out the recipe below to make it yourself at home!
Ingredients
Oil
400g tofu
6cm piece of ginger
2/3 cup sliced water chestnuts
1 lemongrass stalk
2/3 cup Thai basil leaves
4 garlic cloves
600g rice noodles
200g Thai green curry paste
500g broccoli
800ml coconut milk
250g baby corn
3 cups vegetable stock
500g snow peas
4 kaffir lime leaves
2 cups bean sprouts
4 tsp sugar
½ cup chopped salted peanuts
4 Tbsp lime juice
2 limes
2 bunches baby bok choy
1 red chilli
Method
Using the small holes on a grater, grate the ginger, lemongrass and garlic. Heat oil in a large saucepan over medium heat. Add ginger, lemongrass and garlic and cook, stirring, for 2-3 minutes until soft. Add curry paste and cook, stirring, for 1-2 minutes until fragrant.
Add coconut milk and stock, stir to combine. Add kaffir lime leaves and simmer for 15-20 minutes.
In a frying pan, heat some oil. Cut tofu into 1cm cubes, then fry over medium heat until lightly browned on all sides.
Add sugar, lime juice and tofu to the curry. Simmer for a further 2 minutes. Stir in the water chestnuts and most of the basil leaves (leave some for garnish).
Cook the rice noodles then drain. Cut the broccoli into small florets and the bok choy into quarters then cook in boiling water for 2 minutes. Trim the ends of the snow peas and chop baby corn into 1cm pieces then add to saucepan with broccoli and bok choy to cook for a further 1 minute. Drain and rinse in cold water.
Cut the ends off the bean sprouts, cut the lime into quarters and slice the red chilli ready for serving.
To serve, divide the noodles and cooked vegetables between serving bowls. Pour green curry over the vegetables. Garnish with bean sprouts, peanuts, red chilli, Thai basil leaves and lime wedges.

After learning a few basics, we were able to skateboard fairly successfully up and down the length of the garden.
Flavio gave us tips and advice throughout the session, and everyone improved a lot from just one hour of practicing.
Some of the more experience skaters made use of the quarter pipe and showed the beginners what they could aspire to!

Last week, on Wednesday, we had our 1-hour Surf Lesson. After getting our wetsuits on, carrying the surfboards, walking down to the beach and being taught a few of the basics on the sand, there came a rumble of thunder and crack of lightning over the ocean! The storm was forecast to pass right over Byron Bay, so unfortunately it was not safe to continue our lesson. Not to be put off by this, we rescheduled our lesson for the next week and we went along to learn to surf yesterday afternoon!
The weather was looking nice and the surf conditions good, so we quickly put on our wetsuits, grabbed the surfboards and walked down to the beach to begin our lesson. Our instructor Katie recapped the basic skills we had learnt last week but not been able to put into practice yet, and we were soon in the water to test them out!
We caught a few waves to get the feel of being out in the surf, then returned to the sand to learn to most important part – how to stand up. Katie gave us some excellent advice on how to do this, then we were back in the water to try it ourselves.
The first few times, while still getting used to the feel of being on the surfboard and trying to remember everything we had been taught, resulted in falling off the board almost as soon as getting to our feet! But with a bit more practice and the ongoing support of our instructor, each and every one of us managed to get to our feet and stay standing on the board to ride some small waves.
It was a lot of fun and all of us are keen to get back out there as soon as possible! Thanks to our wonderful instructor Katie from the team at Let’s Go Surfing for teaching us how to surf!

We have two new starters at Lexis Byron Bay this week.
Momoko is from Japan and loves to travel. She travels once or twice each year, and has visited many different places in Japan including Okinawa, Hokkaido and Hakone. In Japan she works as a Care Worker for handicapped adults and children at a hospital. While it is a difficult job, she loves it and is already looking forward to seeing her patients again when she returns home. Momoko chose to study in Australia to take advantage of the Working Holiday Visa. She hopes to visit lots of different places in Australia and to really experience the Aussie culture.
Nuria is from Spain and is a returning student at Lexis Byron Bay. Since graduating from her previous course with us in May, she travelled and studied in many different places around Australia, such as up the Queensland coast to Cairns and Port Douglas. Even after seeing so much of the country, she still loves Byron Bay so much that she wanted to finish off her studies with us here!

Saki battled it out to defend her title, but eventually conceded defeat to a new Lexis Champion.

Richard and Vanessa are from Brazil and travelled to Australia together to study at Lexis Byron Bay. They have been here for nine weeks now and are enrolled to study with us for a total of 24 weeks. They then hope to extend their stay by continuing their studies at Lexis with a Business course later in the year.

Richard has always dreamt of living in a different country and experiencing a different culture. When the two of them realised the importance of learning English to further their careers, they decided to study English in Australia. In Brazil, having a higher level of English often means better opportunities for jobs.
First day at school – Richard and Vanessa starting with five other new students
Both Vanessa and Richard are enjoying their time in Byron Bay. For Vanessa, one of her favourite parts of living here are the beautiful beaches. She said that even if you go to the same beach every day, each day is completely different – whether it be the water, the sky, or the sunset, it is a different place every day. She finds the beaches here very peaceful. She also loves the night sky in Byron Bay, with so many stars that can be seen so clearly, it is a beautiful night view. Richard is a big fan of the famous Byron Bay Lighthouse. He enjoys the walk through the National Park area, which always delivers close encounters with the local wildlife including wallabies, rabbits, whales, dolphins, parrots, bush turkeys, lizards and turtles. Richard has been impressed by the respect that Australians show for wildlife in this country, which he feels is a huge cultural difference between here and Brazil.

Having been studying for nine weeks already, both Richard and Vanessa feel that their English has greatly improved already. They both agreed that studying at Lexis has really helped them improve their grammar skills, and that meeting other students and people in Byron Bay has helped them improve their speaking skills as they use English in all their social situations. Vanessa has found all the people in Byron Bay to be very friendly and believes we live in a little piece of paradise. Richard would recommend others to study here as it is a unique experience and life is short! Both said that the staff at Lexis, both in the office and all the teachers, are all gentle, kind, helpful and friendly too. They have both learnt a lot from their teachers and find that each teacher helps them to understand English in new ways.

When they first arrived, Richard and Vanessa lived with a Homestay family for the first two months. They thoroughly enjoyed this experience, as they felt very at home with their host family who were very friendly and great cooks! Initially they found it a bit difficult to adapt to the cultural differences and different house rules compared to Brazil, but before long they had settled in and quickly felt as though they were part of the family. They have just moved into a rental property – right next door to their host family. They have been lucky enough to share their property with an Australia local too – a friendly koala who is living in a tree in their garden!

After completing their current English course, Vanessa and Richard hope to continue studying here for an extra six months before travelling around Australia. They would like to visit Tasmania, Cairns, the Outback, Sydney, Melbourne and many other places across the country before returning to Brazil and to work.
