This afternoon we baked chocolate-almond cupcakes, covered them with a sweet buttercream icing, then decorated them to look like koalas!
They were fun to make and delicious to eat.

Koala Cupcakes Recipe
INGREDIENTS:
For the choc-almond cupcakes:
1 cup self-raising flour
½ cup plain flour
1 cup raw sugar
4 Tbsp cocoa
½ tsp bicarb soda
Pinch of salt
65g butter, melted
1 cup almond milk
½ tsp vanilla essence
For the buttercream icing:
200g butter, softened
2½ cups icing sugar
Grey food colouring:
5 drops blue + 5 drops red + 2 drops green
1 Tbsp almond milk, as needed
For the koala decoration:
Desiccated coconut
Pink marshmallows
Licorice
Choc chips
DIRECTIONS:
For the choc-almond cupcakes:
Preheat oven to 180 degrees Celcius and line cupcake tray with cupcake papers.
In a large bowl, combine all dry ingredients and mix well. Mix in melted butter. Combine milk and vanilla together, then add to dry ingredients and mix well.
Spoon the mixture evenly between prepared cups. Bake for 20-25 minutes or until a knife inserted in the middle of the cupcake comes out clean. Allow to cool on a wire rack for 15-20 minutes.
For the buttercream icing:
Using a fork, beat the butter until it is pale and fluffy.
Gradually beat in icing sugar, half a cup at a time.
Add food colouring and mix through well. Add milk, if needed to thin the mixture.
For the koala decoration:
Sprinkle the icing with coconut then assemble the features of a koala face – use pink marshmallows for the ears, licorice slices for the nose and choc chips for the eyes.

It is designed for trainees who are seeking to gain an understanding of business fundamentals and who may be interested in gaining employment at a mid-level administrative or customer service role. It is taught wholly in English, thus providing the opportunity for ex-Lexis students to continue to develop their knowledge and application of the language, while also learning some highly valuable business skills and vocabulary.
The Certificate III in Business consists of face to face training and supervised consolidation of learning over a duration of 30 weeks, providing participants with the training needed to work within an office environment in a variety of roles. Experienced industry professionals will guide students learning, providing both a theoretical and practical base for their development.
Students study in class on Monday to Wednesday from 2:00pm – 7:30pm. The same hours on Thursdays are for consolidated learning – revision of material covered during the week, self-study and assignment assistance.
New students can join the course every 6th week*. Each term runs for 4 weeks during which time new material/units of competency are covered. Then every 5th week of the course is offered as a ‘consolidation of learning’ during which time students have access to their trainer who can assist with the completion of the unit, or they can choose to study from home. This afternoon at Beer Lounge we enjoyed drinking some beer and eating chips while asking “Have you ever…” questions of each other. The questions ranged from “Have you ever lied to your parents?” (which everyone all had at least while a teenager!) to “Have you ever eaten anything usually considered strange?” (which a lot of people had done – eating things like ostrich and alligator).
We found out that Natsumi used to eat chocolate straight out of the bulk bins at the supermarket, that Tom regularly has to bribe people in day-to-day life while living in Africa, Mayumi has often lied about her age (and did so even in this conversation!), that being robbed or mugged is a normal part of life for Juliano in Brazil and that Richard takes part in the dangerous sport of skydiving, though he maintains it is not actually dangerous at all!
While the answers to each question were different for everyone, there was one question that every student had the same answer for: “Have you ever made a major change in your life?” – moving to Australia to study at Lexis English Byron Bay!

On Mondays you can stretch out and relax doing Yoga from 2:15 to 3:15 in Room 8.
Tuesdays is Coffee Club with coffee, TimTams and conversation, a Trivia afternoon to test your knowledge, and a Poker Tournament for beginners and card sharks alike. Prizes will be awarded to the winners at the Trivia and Poker afternoons!
On Wednesdays we will get artistic and learn some Australian culture with Boomerang Painting,we will get into the kitchen for some Aussie Cooking, we will continue the popular 1-hour Surf Lesson for just $20, and have a Table Tennis Tournament to see who will be the next champion!
Every Thursday there will be a Movie with free popcorn and a special Blockbuster Movie screening with free pizza on the 14th! We also have Job Club in room 5 every second week and Skateboarding with Flavio in the garden on the last Thursday in July.
On Fridays we will have an End of Course BBQ in the garden, a friendly game of Soccer in the garden, Learn to Slackline with Olmo in the garden, and finish off the month with some Wine Tasting!

Sua studied and worked in Physics back in Korea but would like to run his own business in the future, running a pub, restaurant or guest house. A few weeks ago we were challenged to a soccer match by the SAE College in Byron Bay. Facing a school with 200+ students, we were unsure of pulling a team together. But the Lexis Family has united and pulled together a team of 15 students!
Having never played together before, the game started a bit rough. But after a few minutes, the Lexis team found their flow and gave the SAE team the challenge they didn’t know they were looking for!
It was a very close first half, with the scores tied 1-1 at half time. The competition heated up in the second half, with the teams going goal for goal until SAE pulled away and eventually won the match 6-4.
Every player on the team played really well and, though we didn’t win this time, will surely win that cup back at the next challenge!

Inola is from Switzerland and graduates from Ellie’s Upper Intermediate class. She has been a lovely student to have in class. Inola communicates with confidence and has picked up new language skills quickly. We wish you all the best and hope you find English useful in your future!

She is starting her travel in Australia to discover the landscapes and to learn English so she can speak with and understand the people she meets along the way.
Masumi is from Japan and is one of four in her family. She enjoys music, sports, exercise, going for walks, going to the beach and travel. She is in Australia to learn English so that she can talk to people all around the world.
Rodrigo is from Spain and likes to go skiing, snowboarding and surfing. He is an Interior Design student and works as a Ski Instructor. He is learning English in Byron Bay so he can use English in his work, teaching ski students from different countries, and to be able to talk with people of all nationalities.
Jongwon is from Korea and studied Train Electronics at College. He likes watching movies and listening to music. He has always dreamt of living in another country to experience the different cultures and lifetsyles, and plans to continue travelling all over the world for the next few years. He came here to learn English because Australia is very peaceful and friendly.
Rafael is from Spain and is a Law graduate with a Masters in Finance. He loves sports and likes to work out every day. He chose to come to Australia to study English because of the friendly, inclusive people.
Tom is from France and was born in the Ivory Coast. He is from a family of five, with his parents, younger brother and younger sister who still live in Africa. He enjoys fishing, surfing, and practising judo and jiujitsu. He completed a degree in Aquaculture and has worked at a fish farm. After studying at Lexis, he hopes to move up to Cairns to work on a tuna farm or do some fruit picking while visiting the surrounding national parks.

We enjoyed a couple of rounds of Lexis Jenga while enjoying coffee, TimTams and great conversation. We learnt that while some students believe in love at first sight, others don’t, and that everyone loves ice cream and dislikes their government.
It was a fun afternoon and a great opportunity to practice listening to and speaking English!

Today we welcome three new starters, Gaspard, Fuki and Juliano, and one returning student, Shinsuke, to Lexis Byron Bay.
Gaspard is from France and is a student at High School. He really enjoys surfing and playing rugby. He is studying English in Byron Bay so that he can surf the perfect waves and see the unique animals of Australia. He hopes to improve his English so that he can pass his test in France next year. He also hopes to improve his surfing while experiencing the famous surf of Australia.
Fuki is from Japan and is one of five in his family, which is made up of all boys except his mother! They also have a family dog. He has been surfing since he was three-years-old and enjoys making videos with his old-style camera.
Juliano is from Brazil and is one of five in his family, with parents who have been married for 41 years! He enjoys playing soccer and other sports, computer games and history. He has studied Civil Engineering and worked in construction and running a food truck. He has always dreamed of visiting Australia, and thought it would be a perfect opportunity to study English too.

Today everyone is sad to say goodbye to the upper intermediate teacher Josie as she is leaving Australia…don’t worry though, it’s not forever, she is lucky enough to be taking a holiday for two and a half months! Her first stop is Hawaii, then Canada and after that a tour of Europe! She’ll be back refreshed in time for the rush of summer when our CAE and FCE Cambridge classes start up again on the 5th of September. If you want to catch her before she jets off then head to the Railway bar this evening at 6pm where some of the students are going to have a few beers and celebrate the start of the long weekend! And if you don’t know already, there’s a Brazilian party at the Buddha Bar later on this evening so don’t forget your dancing shoes!
On Thursday we had a photographer at Lexis and a lucky ten students had a taste of what it would be like to be a model for an hour! The photographer needed some classroom situation photos so the students had to pretend they were in class asking questions, doing activities or just having a great time! (as they always do in class of course!) We haven’t seen the photos yet but everyone who participated is looking forward to seeing whether they are ready for a new career…as a model! We’ve been told that the photos will be sent to Lexis soon so watch this space to see who has it in them to become…The Lexis Next Top Model!
Today’s activity was volleyball in the garden and we had a great time hanging out trying to play volleyball and sunbathing in the glorious sunshine, Byron Bay winter is pretty amazing!
With only two upper intermediate students leaving Lexis this week, Josie had a a cosy and intimate graduation in her class! Marco from Switzerland has been here for two months, he has a great sense of humour but also knows how to work hard. He has added enthusiasm and great conversation and has been in the class from the beginning so he will be missed a lot by everyone. Blanka has been in Lexis for a month and moved to upper intermediate two weeks ago. Everyone was delighted to have her join the class as she is friendly, really great to talk to and always ready to smile and laugh! They both have fantastic English and we will all miss them. However,they have to move on to discover some more of Australia and we wish them all the best!

Here is Esther’s story….
Esther from Barcelona, Spain arrived in Australia in October 2015. She started her Lexis journey at Lexis Sunshine Coast, joining an Upper Intermediate General English class and then continuing with a Cambridge Advanced Class, first at Maroochydore and later at our Lexis Noosa school.
Our Cambridge exam manager Nina made Esther aware of a new exam for medical professions, OET, that Lexis has been running since April 2016. Passing the OET exam enables candidates from all different medical fields to be registered in their profession here in Australia. Learning about this, Esther, a paediatric nurse in her home country Spain, was hooked and embarked on a remarkable journey. She registered to take the OET exam in May and immediately started preparing with the help and support of Lexis Senior Teacher Annette. Together they worked through vocabulary, strategies and sample tests in the four test areas listening, reading, writing and speaking.
Esther diligently prepared all the tasks given to her. She developed and improved strategies to tackle the often difficult reading and listening parts. She worked on her writing by doing countless sample letters and practised, recorded and analysed roleplays required for the speaking exam. Joining our Intensive Exam Preparation Course over two Saturdays helped further improve her skills and confidence.
After four weeks of intensive study and countless hours of meticulous work every day – on top of her day job in hospitality! – Esther sat the OET exam on 14 May at our Lexis Sunshine Coast campus. It was challenging! All parts have to be done in one sitting!
On Monday Esther got her results – she passed with Bs in all skills! Motivation and dedication paid off. Esther’s dream, to be working in her profession as a nurse in Australia, can now become a reality.
We are so happy for her and with her!

Barbara is from Switzerland and has moved to Australia with her family of four. She worked in Social Work back in Switzerland and hopes to do something similar here. Barbara is studying at Lexis Byron Bay because she wants to improve her English for living in Australia.
Seohyun is from Korea and is one of four in her family. She enjoys singing. She needs to learn English for her job and would like to develop her confidence in using English during her time at Lexis Byron Bay.
Isabella is from Brazil and lives with her family near Sao Paulo. Her parents run a marina and hotel, which Isabella also works at. She has always enjoyed water sports such as skiing and wakeboarding, and also enjoys cooking in the restaurant. She studied Food Engineering at University but decided she does not want to work in the industry. Isabella wants to improve her English and find some work with food while in Australia, to see what opportunities come her way. She is also here to travel, meet new people and absorb as much culture as she can.
Victoria is from Spain and is one of four in her family, who are very important in her life despite living so far from them. She studies Law and Business at Madrid University and though she enjoys it, she is not sure that she wants to be a lawyer or business-person. She loves nature and living a simple, healthy life. She likes to learn through experience instead of books and is looking forward to improving her English in the interesting, fun and beautiful place of Byron Bay, Australia.
Younes is from France and lives with his father, mother, older brother and younger sister. He is a High School student and hopes to one day be a pilot. Younes likes to play tennis, computer games and sports in general. He is studying English in Australia because of the good weather and wonderful views, and he would like to surf while he is here.
Richard is from Brazil and likes to go skydiving and travelling. He studied Computer Science and worked as an IT Analyst in Brazil. He is studying in Australia so he can learn English and work towards becoming fluent, which will help him get a better job back at home.
Vanessa is from Brazil and studied Administration at University. She worked in Human Resources before coming to Australia. Vanessa enjoys living near the beach, meeting new people and appreciating the sky, sun and smiles on people’s faces. She came to Byron Bay to study English because it is a small town which is calm, very green, has beautiful beaches and is peaceful. In the future, she hopes to speak English very well!
Alexia is from Brazil and is going to live in Australia for the next year and a half. She has also lived in France, South Africa and Malta. Alexia wants to learn how to speak English very well while she is living in Australia and, afterwards, hopes to move to Europe.

Today is the end of the Cambridge course, so to celebrate we had a great Aussie BBQ in the Student Lounge.
Teacher Paul was the expert BBQ Chef again, and all the students enjoyed feasting on the spread of food while chatting and laughing with their friends.
With some students leaving Byron Bay to travel around Australia or to return home, it was a good opportunity for everyone to reminisce about the great friends and memories made during their time at Lexis Byron Bay.

This afternoon Flavio from Byron Bay Skateboard School came by Lexis Byron Bay to teach the students how to skateboard!
The students had a great time learning how to skateboard for the first time or getting tips to help improve their skateboarding skills. Natsumi and Elisabeth even gave the quarter pipe a try!

Today we spent the rainy afternoon in Byron Bay cooking Nepalese MoMos. These dumplings were easy to make and delicious to eat!
First we chopped the vegetables and mixed them together with some spices.
Then we placed a spoonful of vegetable mixture on each MoMo wrapper and folded them into lovely shapes.
After using up all the vegetable mixture, we steamed and fried the MoMos until they were cooked through. We also prepared some tomato achar (dipping sauce) to go with the MoMos.
Finally – the best part – we ate all the MoMos! 🙂
For those who want to try making MoMos at home, here is the full recipe:
Prepare the filling
Finely dice or grate:
– ¼ of a green cabbage
– 2 large carrots
– 125g green beans
– 1 small onion
Combine diced vegetables in a large bowl and sprinkle generously with salt. Mix well, then leave to sit to draw the water out of the vegetables. After 10 minutes, squeeze the excess water out of the vegetables and drain.
Add on top of vegetable mixture:
– 3 Tbsp curry powder
– 2 tsp salt
– 1 Tbsp soy sauce
– 1½ tsp cumin powder
– 2 cloves crushed garlic
Heat 2 Tbsp of oil in a pan. Make a well in the spices on top of vegetables, then pour hot oil into the well and mix everything together.
Make the MoMos
Prepare the steamer by lining with baking paper. Spoon 1 Tbsp of vegetable filling on each wrapper then fold into shape. Place MoMos into prepared steamer in a single layer, making sure they are not touching each other. Steam for 20 minutes or fry over medium-high heat for 5-7 minutes each side.
Prepare the tomato achar (dipping sauce)
Finely dice 1 small onion and 2 cloves garlic. Fry garlic and onion well in a small saucepan, then add ½kg diced tomato. Add:
– ½ tsp turmeric
– 3 tsp salt, to taste
– 3 tsp cumin powder
– 2 tsp curry powder
– 1 tsp soy sauce
Boil for 5 minutes, stirring constantly, then add 1 Tbsp of water and simmer, covered, for 5 minutes. Remove from heat and stir through 2 Tbsp chopped fresh coriander.

Marco from Switzerland has been here for two months, he has a great sense of humour but also knows how to work hard. He has added enthusiasm and great conversation and has been in the class from the beginning so he will be missed a lot by everyone. Blanka has been in Lexis for a month and moved to upper intermediate two weeks ago. Everyone was delighted to have her join the class as she is friendly, really great to talk to and always ready to smile and laugh! They both have fantastic English and we will all miss them. However,they have to move on to discover some more of Australia and we wish them all the best!
