This afternoon we enjoyed our coffee and TimTams in a truly Australian style – using the TimTams as straws to drink our coffee through!
To try this at home (which I highly recommend), bite each end off your TimTam then submerge one end into the coffee (or tea or hot chocolate…any hot drink!) and suck through the other end. Enjoy the coffee and the yummy, gooey taste of a melting TimTam! Just make sure to eat the TimTam before it melts completely and falls in your drink!

We have two students graduating from Lexis Byron Bay this week. Noriko and Floriant both graduate from Josie’s Upper Intermediate class.
Noriko is from Japan and has been a positive student at Lexis Byron Bay. She has a really good level of English and has gained confidence in her speaking over the past two months. She is a hard working student and a smiley, happy member of the class. All the best for the future, Noriko!
Floriant is from Switzerland and had a good attitude and participation in class. He has a high level of speaking and grammar, which has improved during his time at Lexis. The month of June starts next week, so it is time to announce the next month of exciting free activities planned especially for our Lexis students!
On Mondays you can stretch out and relax doing Yoga with Stefanie from 2:15 to 3:15 in Room 8.
Tuesdays is Coffee Club with coffee, TimTams and conversation, a Trivia afternoon to test your knowledge, a Poker Tournament for beginners and card sharks alike and a special Beer Lounge afternoon with beer, chips and conversation. Prizes will be awarded to the winners at the Trivia and Poker afternoons!
On Wednesdays we will get into the kitchen with some Nepalese Cooking and Baking Koala Cupcakes, we will get artistic and learn some Australian culture with Boomerang Painting, we will continue the popular 1-hour Surf Lesson for just $20, and Marcella from BWT will be running a BWT Travel Bonanza with free pizza and travel prizes!
Every Thursday there will be a Movie with free popcorn, with Job Club in room 5 or Skateboarding with Flavio in the garden happening on alternating weeks.
On Fridays we will prepare to say goodbye to the Cambridge students with an End of Cambridge BBQ in the garden, a friendly game of Volleyball in the garden, show off your mad ping pong skills at the Table Tennis Tournament, and get ready to compete for your school against the SAE College students at the Soccer Challenge!
We will also continue to enjoy our Student Nights at Cheeky Monkeys every Tuesday night – meet at BWT @8pm first to get your drinks, food and fun!

This afternoon we soaked up the sun out in the garden while tasting ciders.
We tried apple and pear ciders from all across Australia – from Victoria to Western Australia, Tasmania to South Australia, and even one brewed locally in Byron Bay.
They all had very different flavours and everyone had a different favourite. Above all, it was a lovely afternoon enjoying great conversation with cool drinks in the sunshine!

Santi is from Valencia, Spain and has been at Lexis Byron Bay for 20 weeks, studying in the FCE and CAE classes.
Santi decided to study in Australia so that he could improve his English. He wanted to travel to a place far from home with good weather, beaches and surf. He has always wanted to visit Australia, so studying here was a natural choice!
When he first arrived in Australia, Santi spent the first month in Sydney before coming to Byron Bay. While he did really like Sydney, he prefers living in Byron Bay as he enjoys the relaxed travelers lifestyle here. It is an easy town to get to know, while still having many special places to discover and explore.
There are many things about Byron Bay that Santi believes makes this place so special. His favourite things are the beautiful beaches, feeling like you are living in nature all the time, and the good friends he has made here.
During his time here, Santi has held a job for 4 months working in a pizza place in the nearby town of Brunswick Heads. He felt that he was able to find a good balance with working after finishing school each day and that the work environment and his colleagues really helped him improve his English.
Santi recommends studying at Lexis Byron Bay, whether it is for just one month or for a whole year. He thinks the staff are great and says that the teachers are helpful, listen to the students and are very good at helping you to improve your English. When Santi first arrived in Australia, he had a difficult time understanding the Australian accent. Now, he feels that he has developed his English to an almost fluent level that he is very happy with.
After first studying in FCE and then moving up to CAE, Santi has found the classes to improve his English in all areas. While the exam format of these classes are similar, he found that CAE is at a more advanced level which has enabled him to expand his skills in speaking, grammar and vocabulary. In both classes he has enjoyed the learning environment and said the teachers are fantastic.
Santi believes Byron Bay is such a unique place even compared to other places in Australia. There is always something happening in town, from the variety of live music to the great waves and good surf at the beaches. The feeling Santi gets from Byron Bay is very special, including from all the nice people both living here and travelling through.
After Santi completes his studies at Lexis Byron Bay in two weeks time, he will travel to Sydney for two days before flying to Bali to meet up with some other Lexis friends there. When he returns to Spain, he plans to study International Business at University. For this he believes his level of English will be very helpful in the future.

This afternoon we baked Echidna Cookies – cookies that look like echidnas! If you are unsure what an echidna is, it is an egg-laying mammal that is native to Australia and is somewhat similar in looks to a hedgehog. Seven students joined me to create these delicious treats that (sort of) resemble the echidna!
Everyone agreed that the cookies looked adorable and were very tasty too – they were all eaten very quickly!
If you want to try making these at home, here is the recipe:
Preheat oven to 160°C and line a baking tray with baking paper.
In a small bowl, whisk margarine and sugar together until light and fluffy. Mix in vanilla.
Combine flour, ground almonds and salt; gradually add to the creamed mixture and mix well.
Shape 1 tablespoon of dough into a ball; pinch the dough to form a nose and feet. Repeat until all the dough is used up and place each cookie 2 inches apart on the prepared tray.
Bake for 12-15 minutes or until lightly browned. Let stand for 5 minutes before removing to cool completely.
In a small saucepan, melt chocolate and coconut oil over very low heat, constantly stirring until smooth.
Holding a cookie by the head, spoon chocolate over the back leaving the face uncovered. Allow any excess to drip off. Place on the baking paper and immediately add sprinkles/flake or slivered almonds for the spikes, and add any other decorations for the eyes, tongue and feet.
Place in the fridge to set, then eat them all! 🙂

This week we have four new starters at Lexis Byron Bay. Welcome to Simon, Antoine, Blanka and Paola!
Paola is from Brazil where she works as a Forest Engineer. Her job involves studying different species of plants for use in alternative energy, such as bamboo, and their production or destination materials. She enjoys the beach, trees, animals, plants, stones…everything in nature! She also likes doing yoga and loves her pet cat, Mia. Paola chose to study in Australia for the great weather, nature and people that we have to offer here. She hopes to travel in Australia, to the Gold Coast, Sydney, Melbourne and Perth, and further abroad to Indonesia and other countries in Asia.
Simon is from Switzerland and lives with his family of four including his mother, brother and dog. He completed an apprenticeship and has been working as an Electrician. When he returns to Switzerland, he will start school to become a Police Officer. In his free time, Simon enjoys sports, such as tennis and snowboarding. He came to Australia to study English because he wants to learn to surf while he is here and would like to travel around the country too.
Blanka is from Italy and has just graduated from the University of Rome with a degree in Biology. She used to compete at an international level in Fencing, but gave it up to pursue her studies. She will continue her university course in September, studying Neurobiology. Blanka enjoys doing yoga and scuba diving, and is studying at Lexis Byron Bay because she wants to improve her English.
Antoine is from Belgium and has transferred to Byron Bay from Lexis in Brisbane where he started his English studies in Australia. He is here on a Working Holiday and hopes to find work in Byron Bay.

Vera is from the Czech Republic and graduates from Claudia’s Intermediate class. She worked very hard to improve her English while at Lexis, moving up from the Pre-Intermediate class she started in. She was a conscientious student and a pleasure to have in class. Enjoy your time in Perth, Vera!
Estelle is from Switzerland and graduates from Claudia’s Intermediate class. She was a pleasure to have in class and was a conscientious student. During her time at Lexis Byron Bay she moved up from the Pre-Intermediate class she started in and worked very hard to continue improving her English. Estelle is doing some travel down the east coast before returning to Switzerland. Have fun exploring more of Australia, Estelle!
Donovan is from France and graduates from Claudia’s Intermediate class. His English has improved a lot since starting at Lexis, moving up from the Pre-Intermediate class he started in. He was an active participant and contributor in class activities and discussions. He will be spending the next year in Australia on a Working Holiday. We hope you have a great year, Donovan!
David is from Switzerland and graduates from Claudia’s Intermediate class. He has improved his English in many areas, particularly his speaking skills,and his participation in class activities and discussions was appreciated. She has worked hard, making excellent improvements with her English writing and grammar and becoming much more confident with her speaking. The Autumn weather is a little cooler but the sun is still hot and shining over Byron Bay! Seven Lexis students took part in today’s activity of a 1-hour Surf Lesson with Brett and John at Let’s Go Surfing! and made the most of this glorious sunny day at the beach.

Almost all of the students had never surfed before and made the most of this opportunity to give it a try!

This afternoon our knowledge of science, music, geography and sport was tested in a Trivia quiz!
Some questions were a bit difficult (In which sport would you use a ‘sand-iron’?) and others were answered easily (Which classical composer became deaf near the end of his life?). Above all, everyone enjoyed themselves and learnt something new while testing out their English skills!
The winners with an amazing 21 out of 24 correct answers were Floriant, Thomas and Donovan who won a 6-pack of beer. Second prize went to Yuki and Mayumi who won a packet of Tim Tams. 🙂

What are the similarities and differences between your home country and Australia?
Vera from Czech Republic: The seasons are opposite and in the winter at home there is snow and temperatures around 0 degrees Celsius. The similarity is they are both safe countries.
Alex from Spain: The weather is similar to Australia. It’s different because the people in Spain work more than here.
Inola from Switzerland: The climate is completely different. In Switzerland we don’t have ocean or palmtrees. Definitely not the same animals. Different cars and way of life.
Nami from Korea: A lot of vegetarian people in Australia and Korean people like vegetables. In Korea the internet is fast; Australian internet is slow.
Natsumi from Japan: The similarities: lots of interesting places to visit, for example, beautiful nature and countryside, and nice cities as well. The differences: busy train traffic.
Estelle from Switzerland: The flora and fauna are very different – I had never seen a koala or dolphin before!
What are your favourite things about Australia?

Han Yong and Aya
Aya is from Japan and is one of six in his family, including his sister’s husband and son (who he loves most of all!). He enjoys swimming, listening to music and studying English, and has been studying English over the internet for the past five years. Aya hopes to improve his English so that he can live and work overseas in the future.
Han Yong is from Korea and is one of five in his family, including his dog Bong Gu. He trained as a Boxer during his High School years and now enjoys this as a hobby. He has been working as a Manager of Distribution and Marketing for a food company before coming to Australia. He now hopes to improve his English and get a visa to stay in Australia.
Lisa is from Switzerland and is a returning student. After studying in Byron Bay earlier this year, she has been travelling and doing further study at the Lexis Perth campus. She joins us again to continue improving her English with us at Byron Bay for the next two weeks.

We have six students graduating from Lexis Byron Bay this week.
Nuria is from Spain and graduates from Claudia’s Intermediate class. She has been a conscientious student and has worked very hard to improve her English. Nuria is not sure where her travels will take her, but it is sure to be adventurous! We wish you all the best for your travels, Nuria!
Melanie and Priscilla are from France and graduate from Kristy and Kathleen’s Pre-Intermediate class. Melanie has been an active participant in class speaking activities and has been very good at learning new vocabulary and grammar. Priscilla has improved her knowledge of English grammar and was a lovely, interactive student to have in class. They are now planning to hitchhike their way across Australia, including Tasmania, and then travel on to Bali before returning to France. Best of luck to you both!
Shinsuke is from Japan and graduates from Mel and Becky’s Elementary class. He has worked very hard in class and has improved his English a lot over his eleven weeks at Lexis Byron Bay. He is going to continue his English studies at Lexis in Brisbane in the Pre-Intermediate class, and aims to return to Lexis Byron Bay in December at Intermediate level. Byron Bay’s first (10429NAT) Certificate IV in TESOL ends tomorrow. So, today, I took the opportunity to catch up with one of our 5, now almost qualified, trainees, Susan.
Why did you decide to do the course?
I’m already a primary school teacher but I wanted to be able to teach overseas. Then I saw the TESOL course was running in Byron Bay and I thought what a great place to study; It’s gorgeous here and I can go to the beach and go swimming when I’m not studying.
How did you feel on your first day?
I was looking forward to it but also worried about how much homework we would have as wanted to enjoy Byron Bay as well as study. Luckily I was able to do about half my work at school, half at home, and still enjoy the beautiful location and weather.
One of the first things you did was observe some Lexis English classes. What was that like?
It felt unreal.I thought it was really nice of them to have us in their classrooms.It was also interesting to see the different teaching styles. I could borrow ideas from the way they structured the lessons their board-work, and how they interacted with the students.
And how did you feel about teaching your first lesson?
Actually, it went well. I had planned very carefully and knew exactly what I was going to say. I remember it was about sports and leisure and I had 5 or 6 students in the class, who were lovely. In a way, I probably put more pressure on myself because I was a teacher, so I had to do a good job, but luckily all my activities went to plan.
And did you feel very different when you taught your last lesson?
All of us improved so much and we understood what we were doing and why. The planning became faster and easier and I found my plans became more efficient.
What were the best things about the course?
Our tutor Anji was excellent. She had to manage five quite extreme personalities and did so with ease. She also brought the material to life and instructed well but at the same time made us work things out for ourselves.
I also enjoyed playing the part of the student when there weren’t many students from outside to participate in the classes and it was always good to observe different classes and the interactions within them.
I learned a lot about how to structure an English lesson and also gained an awareness of the grammar terminology. And one day we did a full IELTS test, which was really interesting.
So what are you going to do next?
Tomorrow, I’m going to visit my mum but then, next week, I’m leaving for Peru. Then my plans are flexible, I’m going to Bolivia, meeting a friend in Cuba and then heading to Mexico to work my way southwards. I might try and do some teaching work while I’m there or I might save that for when I go to South East Asia.

Byron Bay is such a beautiful place, with stunning beaches and natural vegetation. However, keeping it that way takes an army of volunteers – people who donate their free time to do unpaid work for the community.
Volunteering is an Australian tradition. According to the Australian Bureau of Statistics 38% of women and 34% of men did volunteer work in 2010. In fact, Australia ranked in the top three giving nations in the World Giving Index 2011. This index is measured by someone donating money, volunteering time to an organisation or helping someone he/she didn’t know who needed help.
So, if you want to be “more Aussie,” give back to this beautiful town that you currently call home, and have fun mixing with native speakers at the same time, here are a few suggestions for you.
If you want to combine your volunteering with beaches, beer and music then Stone and Wood’s Festival of the Stone is for you. Meet next to Main Beach at 1pm next Saturday (14 May) and spend two hours cleaning up our beautiful coastline before heading to the after party for food, music and $5 beers. What a way to do good and have fun.
If you want to get started this week (7 May), you can join the Suffolk Park Dune Care weeding and planting morning. Meet at 8.30am at the northern end of the Alcorn Street bike track. Training and morning tea are provided. For more information call Helen on 6685 4964.

It is a beautiful day in Byron Bay today, so we took Coffee Club outside to enjoy the warm weather and sunshine.

Today we have five new students at Lexis Byron Bay. Meet Jules, Tino, Simone, Izabel and Yukina.
Tino is from Switzerland and is one of four siblings. He has two older sisters, a younger brother and a niece. He loves to ski and snowboard in the Swiss Alps and works as a ski instructor during the holidays. He also enjoys skateboarding, trampolining, golf and surfing. Tino is studying at Lexis because he wants to become an English teacher in Switzerland.
Jules is from France. He has been studying at Lexis in Noosa and Brisbane, and is now very happy to be in Byron Bay for the surf and the beach.
Simone is from Italy and lives with his family in a small town in the hills of Tuscany. He likes surfing, being in nature and organic gardening. Simone works as a Biomedical Equipment Technician at a hospital. He is studying English so that he can find work during his time here in Byron Bay.
Izabel is from Brazil and has two siblings – her brother Pedro and her sister Mariana. She is living in Byron Bay with her husband, staying with her brother who has lived here for 3 years. She is studying at Lexis so she can improve her English because it is important for her work in Brazil.
Yukina is from Japan and is one of five in her family. She loves coffee and cafes all over the world. She also enjoys watching movies, especially Harry Potter, and listening to music, especially Taylor Swift. She is studying English in Australia because she wants to be a Translator in Japan.
