Sancho from Spain very kindly brought in some beautiful Gazpacho (Spicy Spanish Tomato soup) for us all to try.. which went down brilliantly. We were all so impressed with the soup on these hot summer days that I begged him for the recipe….
Gazpacho Soup: For 6 people
2 Kilos of Tomatoes peeled
1/2 Cucumber – peeled
1/2 Green pepper
1 glass tumbler of Virgin Olive Oil
1/2 glass of white wine vinegar
1 clove garlic
Salt to taste.
Then blend all of these ingredients in a blender and add water to thin.!
