A snap shot of Novembers Breakfast clubs!

Its been a tasty month of delicious Breakfasts Clubs for our afternoon students.

From fresh healthy smoothies to local cheese and bread, we have had the best mornings full of yummy food and great conversations.

Today I thought I would put together some snaps of our mornings  shared together.

Smoothie making is one of my favorite activities, experimenting with different combinations of fruit and inventing our own smoothies! Some of the students named their smoothies  and then voted for their favorite one.

Thank you for all the students who come into school early for the morning activities.

Its always lovely to hang out with you guys relaxing, eating yummy food, having great conversations and finding out all about your countries and life!

A suitably qualified cook is sought for our client’s boutique café that also caters for wedding functions and other special occasions.

The role involves, but is not limited to:

*Preparing menus and lists of produce required to meet daily demands;

*Ensuring consistent quality of all foodstuffs;

*Using food preparation tools, including ovens, grills and other cooking equipment and ensuring all equipment is clean and safe to use;

*Preparing and cooking food including regulating seasoning;

*Portioning, plating and garnishing food for service;

Coffee Club! 21 November

We may soon have to rename ‘Coffee Club’ ‘Uno Club’, as whenever I ask what game the students would like to play this is always the winner!

Myself and regular players Lydie, Charlotte and Maya were joined today by Haruki, Han, Choi and Maxime, who started Lexis just yesterday but is already settling in very well and making friends!

New Starters! 20 November

Welcome to our eight new starters joining us at Lexis Byron Bay this week!

Giorgia, from Italy, has already been living in Australia for the past 2 years. Prior to this she was living in London for 3 years but decided she wanted to be somewhere warmer! She has spent much of her time here travelling this amazing country but is now thinking about her future, so will be studying English with us for the next 5 weeks ready for her upcoming University course!

Diego, from Spain, likes sports, video games and hanging out with his friends. He has been studying Business and working in a bank, but decided to take a break to come to Australia! He plans to study English with us for 12 weeks before completing our 30 week Business course and hopefully starting his own company on his return to Spain!

Suguru, from Japan, enjoys rafting, canyoning and stand up paddle boarding! This is part of the reason he chose Australia for his studies, as he is able to do all of these activities here and enjoy the beautiful nature! He wants to improve his English so he can complete a yoga training course whilst in Australia and open his own yoga studio on his return to Japan!

Natalia is from Spain. Her main interest is her job as a Therapist; she loves learning new techniques to apply to her patients. She trained as a Thai masseuse in Thailand and would now like to find work in a Byron resort or spa.  She wants to improve her English as she feels it is an important language to know and to allow her to communicate with more people!

Maxime is from Switzerland, the French part. He has played Volleyball since he was 12 and also enjoys skiing, wakeboarding and surfing. He has just finished his Masters Degree in Biomedical Engineering with a specialisation in heart implants. He is at Lexis to improve his English as it is very important within the world of Biomedicine. Australia was an easy pick for his studies because of the warm and sunny weather!

Joel is from the German speaking part of Switzerland. His hobbies include swimming, reading the news and meeting up with his friends. After high school he studied Mechanical Engineering and worked two years in this job, before then studying Management and Finance.  He choose Byron Bay for his English studies because of the good atmosphere here!

Pascal Runch

Pascal is from the German speaking part of Switzerland. This is his fifth time to Australia; he has previously studied at Lexis Perth and traveled around much of this spectacular country! He has been working in a chocolate factory as an electrical engineer for the past 6 and a half years and is currently completing a masters degree in Business Engineering. He needs to improve his English as he will start a new job on his return to Switzerland where he will be doing presentations in English!

Graduation! 17 November

 A big congratulations to our five students who graduated from Lexis Byron Bay last week! We wish you all good luck and hope you continue to practice your English in the future!

Louis

Louis, from Switzerland, graduates from Harriett’s Pre- Intermediate class. Louis has been a fantastic student who always joined in class activities. His English grammar and speaking confidence has improved a lot since he started with us 10 weeks ago. Louis’ class will miss him and wish him all the best for his future travels around Australia!

Upper

Chiaki, from Japan, graduates from Claudia’s Upper Intermediate Class. Chiaki has been with us at Lexis for four weeks; over that time she has put a lot of effort into improving her English. She was always a smiley and positive presence in class. We will miss you at Lexis and wish you all the best for your future!

Sergio, from Spain, graduates from Claudia’s Upper Intermediate class. Sergio has been a fantastic addition to the school and his enthusiasm in class has been greatly appreciated! His English has improved a lot since he arrived in Byron; well done Sergio! We wish you all the best for the future!

Marina, from Spain, graduates from our Upper Intermediate class. Her teacher Claudia says it’s been a pleasure to have her in her class, she was always smiling and happy! This is not farewell yet as Marina will return to us in January to do our Cambridge Course; we wish you the very best with it!

Tobias, from Switzerland, graduates from our Elementary class. He has been studying at Lexis for just two weeks but in this short time his confidence with his English ability has improved a lot. Friday Football!

This afternoon some of our students demonstrated their impressive football skills in the Lexis garden.

Vegan Brownies! 9 November

Last week we made Vegan Brownies!

Harriett and myself assisted the students as they worked together to make this vegan friendly desert!

The results were delicious! If you’d like to try yourself at home here’s how:

Ingredients

5 tablespoons sunflower oil

200g dark chocolate (dairy free if you want to make it vegan)

170g of self-raising flour

3 heaped teaspoons of cocoa powder

180g golden caster sugar

230ml coconut milk

200g walnuts

Method

  1. Preheat the oven to 180ºC/350ºF/gas 4. Grease a square baking tin (roughly 20cm) with a little oil, then line with greaseproof paper.
  2. Place a heatproof bowl over a pan of simmering water, making sure the base doesn’t touch the water. Break 150g of chocolate into the bowl and allow it to melt, then set aside to cool slightly.
  3. Meanwhile, sieve the flour and cocoa powder into a large bowl, then stir in the sugar. Stir in the oil, milk and melted chocolate until combined.
  4. Roughly chop and stir in the remaining chocolate and most of the nuts reserving a few for the top. Pour the mixture into the prepared tin, spreading it out evenly. Sprinkle over the remaining pecans, then place into the hot oven for 20 to 25 minutes, or until cooked on the outside, but still gooey in the middle.
  5. Leave to cool for around 5 minutes, turn out onto a wire cooling rack, and then serve warm with a scoop of vanilla ice cream, if you’re feeling extra indulgent.
